Tasting Notes: Right in the heart of bourbon country lies the bucolic Abbey at Gethsamane, home to cheese and fruit cake-making monks and the one-time home of Thomas Merton, one of America's intellectual giants. If you are visiting any of the countryside distilleries, it's worth a stop, as the chapel itself is a true place of respite among Kentucky's rolling bluegrass. And NOW, just a few hundred yards down the road you can pay a visit to Wally Dant's latest project, the Log Still Distillery, home to several brands, one of them a 4 yr wheated bourbon aptly named Monk's Road. The 94 proof offering was contract distilled to their specifications and presents a fantastic combination of high florals and heavy leather. Today, the Log Still Distillery is up and running and selling bourbon, gin, and Tennessee whiskey. But back when I conducted this interview, Log Still was still a brand new concept and the distillery was still a dream. I went to New Hope/Gethsemane to learn more about the pre-Prohibition distillery town of New Hope and what happened to it. And it was there that I met this great family, who are working together to bring jobs and the industry back to the area. Hear their dreams, their history, and details about the New Hope of the past.

With this rotating series of hand selected spirits, we honor a rich tradition of nearly lost fifth district distilleries. It’s all part of a long line of rotating Bluegrass-inspired bourbons created with the same ingenuity and fortitude made famous by our forefathers. So just this once, let’s celebrate the taxman. This first Limited Release pays homage to Cold Spring Distillery, a historic distillery in southern Nelson County, Ky., founded by J.B. Dant in the 1800s. The Cold Spring name harkened back to the spring where, even in the summer, the water stayed cool enough that the distillery could continue to operate. This 6-year-old bourbon masterfully blends notes of corn, rye and malted barley for a product that revives the spirit of the original. Monk’s Road Dry Gin Our essential gin is a unique offering from our Kentucky hills, with a delicate balance of distinctly complementary botanicals. We’ve married watermelon rind with zests of orange and lemon for a bright and fresh flavor – creating the perfect gin for all seasons and palates. Sip it slow and neat or dress it up in a cocktail.
