    Celiac Awareness Month always brings with the hope of spring and the renewal of the plants and flowers in our communities. If you live in a rural area or on a farm, spring brings many more wonders. I'm hoping that it also brings a renewal of your involvement in the celiac community, in person or maybe online.     I love when I have recurring guests to catch us up on the podcast. Melissa Secord, the Executive Director of Celiac Canada is one of those treasured guests from many different episodes. You can find out more about our topics on Celiac Canada's website celiac.ca. With the election looming as I recorded with Melissa, she was able to tell me about the letter writing campaign CCA has instituted to send letters to each of the candidates in your electoral riding. This is amazing – all you have to do is fill in some identifying information and press submit and individual letters are sent on your behalf. CCA has crafted a letter explaining our concerns including the cost of gluten free food – our only medicine, tax relief in the form of a flat medical tax claim, and the impact of tariffs on our precious gluten free foods. I encourage you to submit a letter, it only takes a minute or so, to let your candidates know what is important to you. Melissa gives us a sneak peek at the promotional campaign CCA is rolling out for May, Celiac Awareness month. I was honoured to be awarded the King Charles III Coronation Medal in a ceremony presented by Celiac Canada in mid-March. Melissa gives us some background on the awards, some of the recipients and the awards ceremonies that took place across Canada. Melissa herself received an award, which was well deserved. The ceremony was a great opportunity to meet up with people I had spoken with on the podcast, or remember from past in-person conferences – it was truly a memorable occasion.     It's the beginning of April, which means that I again have the pleasure of speaking with Ellen Bayens of theceliacscene.com. On this podcast Ellen and I speak about a new study that looks at vitamin deficiencies found with celiac disease and the gluten free diet. We also talk about gluten free food insecurity and Celiac Canada's efforts to assist. Ellen posted on social media about a restaurant posting a sign saying they were not able to meet the needs of those requiring a strict gluten free diet or with a serious food allergy. There is a story here that resulted in the sign which Ellen explains, but she received many varied responses to this issue with this particular restaurant. She also tells us about a sushi restaurant near her that goes above and beyond to ensure that many of their meals are gluten free and celiac safe. Ellen and I do love a good news story. The topic of Artificial Intelligence is one that stirs many emotions and can be controversial. Ellen has found a study that used AI to look over thousands of biopsy results taken during celiac diagnosis and AI was found to be very accurate in identifying CD. AI is currently used in cancer diagnosis. This study prompted some lively discussion but in the end we're both on the same page that whatever helps in the diagnosis journey is a good thing. I was recently honoured by Celiac Canada with the presentation of the King Charles III Coronation Medal. I explain more about the award and the truly personal nature of the honour.     On this episode I'm speaking with Megan who has been recently diagnosed with silent celiac disease, meaning she doesn't experience any gastrointestinal symptoms she is aware of. Megan is also interested in behavioural eating and works with clients to undo years of dis-ordered eating. I speak to Megan about how she was diagnosed, as well as to how she's coping as a silent celiac. Megan also gives us some insight into behaviours that you might notice in a celiac child than could indicate that the child is struggling with their behaviours around food. A parent of a celiac child often has a difficult time understanding how their child relates to food and Megan gives us some tips to look for as well as some suggestions you might consider.     It's time again for me to talk with Ellen Bayens of theceliacscene.com about articles she has published and information she has provided to us over the past month. Ellen and I opened our conversation talking about Starbucks and their statement on the safety of their stores for someone who needs to eat gluten free. Ellen hopes they would want to be a leader in gluten free as they have been in other aspects of their business, but it appears that's not the case at the moment.     Ep 321 Find Me Gluten Free the Indispensable App

    I've been using the app Find Me Gluten Free on my phone for more than five years, but I always had some reservations about how to interpret the information I was finding. I decided to go right to the top and speak with the app's creator Jason Elmore. The app – Find Me Gluten Free has listings from around the world for restaurants, cafés and bakeries that offer gluten free food. Jason, himself celiac created the app as a place to list and review restaurants that offer gluten free. I was able to ask Jason all my questions including how to best utilize crowd-sourced reviews and information. I'm often not very confident in the reviews of people I don't know because I'm unsure of their level of understanding of the gluten free diet. I was pleased to find out that Jason not only had some great tips for reading through the reviews, but the app has incorporated some features to both allow the user to better evaluate the review/reviewer and set a standard for safety.     The beginning of February is my opportunity to again speak with Ellen Bayens of theceliacscene.com about studies and articles she has brought to our attention over the past month.  Ellen and I spoke about the findings of Dr. Diana Mager and her team at the University of Alberta regarding food insecurity in families with a celiac child or children. This is something I covered in a recent podcast with Dr. Mager and something that will help shape the response of Celiac Canada to this issue. Food Insecurity for Celiac Children | A Canadian Celiac Podcast  Cost of Gluten-Free Diet Contributing to Food Insecurity Ellen was able to give us a firsthand introduction to a link between Liver Disease and Celiac Disease that was looked at in a recent study.     I always get excited to speak with a guest who can fill in some of the blanks in my knowledge about food insecurity for Celiacs in Canada. I work with Celiac Canada to help educate foodbanks to be able to serve our community better. Dr. Diana Mager and her team at the University of Alberta have, in the past, taken a great interest in the nutritional needs of celiac children in Canada (Podcast Episode 292 - https://bit.ly/Ep292CeliacKidsFoodGuide). More recently Dr. Mager and her team have completed a cross-Canada survey of families to determine the food insecurity issues in families with celiac children. Her article was recently published in the Journal of Pediatric Gastroenterology and Nutrition and even made the front cover!     It's the beginning of a new month and a new year, which makes it a great time to chat with Ellen Bayens of theceliacscene.com. On this episode Ellen and I talk about some big picture issues including a study regarding public policies and quality of life for celiacs around the world. Public Policies vs Quality of Life for Celiacs We look at one county in the UK that is changing the way celiacs are able to buy and have assistance with the purchase of gluten free food – is this just an experiment in one area to see what might happen on a national scale? Bah Humbug! UK Scrapping Revered Gluten-Free Food Prescription Subsidy for Celiacs! The Low FODMAP diet is again a topic of discussion as many celiacs are using it to over time, identify what might be causing them digestive issues once they are established on the gluten free diet. Low-FODMAP Diet | Hope for Celiacs with Ongoing Symptoms? Ellen introduces us to a new study using MRI technology to measure the impact of the gluten free diet on celiacs and compares it to those eating a standard diet. The study looks at newly diagnosed celiacs and then again at the same group after one year on the diet. Some interesting conclusions that could only be seen with MRI technology.     Recently, I spoke with Melissa Secord and Caleigh McAulay, RD after they attended the International Symposium on Celiac Disease held in Sheffield UK this fall. During that conversation Caleigh mentioned a presentation that she found very interesting by Anne Lee, RD. The presentation was titled "Is the Gluten-Free Diet Always Portrayed Negatively". I was interested to speak to Caleigh about this with a consideration as to who is eating gluten free besides those of us with celiac disease. Caleigh breaks it down for us and looks at the pros and cons of an expanded population eating gluten free. As well we talk about other people who feel the gluten free diet helps their medical conditions. The research magazine from Celiac Canada regarding insights from the International Symposium is due to be mailed out before year end. I'm excited to read more about some of the scientific breakthroughs and testing of treatments for celiac disease. Very hopeful information at this time of year.     It's been a busy year for Celiac Canada and one highlight has to have been Melissa Secord and Caleigh McAulay RD attending the International Symposium on Celiac Disease held in Sheffield UK earlier this fall. Both Melissa and Caleigh returned with so much information regarding ongoing and upcoming research along with best practices from other countries. Melissa shares with us some new theories for better diagnosis as well as questioning some ideas we have held as fact. Caleigh presented a poster on behalf of Celiac Canada regarding our recent State of Celiac Survey and learned so much from the many sessions and from other dietitians in attendance. Sometimes we come across a company that is doing their best to meet our gluten free needs, but may not have the foundational knowledge of the gluten free diet to do so. This was the case with a storefront that sold ice cream and offered their on-site made gluten free cones. Ellen was able to speak with the owner regarding the questionable safety of the cones and now the company is better informed and able to let their celiac customers know they cannot guarantee the cones to be gluten free. Their understanding and current transparency is a plus for us. Ellen also made us aware of a manufacturing change at Prana Foods to no longer offer gluten free oats in their products. There is somewhat of a disconnect between producers and consumers in getting this important information out there.     I'm grateful that Ellen keeps such good tabs on all the celiac and gluten free news as it comes out. She is the first person I go to if I hear of something new and she's usually already on top of it. As well she is able to vet the articles that come across her desk and give us the information we not only need, but want.     It's the end of May and I have another opportunity to chat with Ellen Bayens of theceliacscene.com to go over some of the articles and information Ellen has brought to us over the past month. Ellen published an article about a young woman who posted online about a family situation in which she felt her needs to be on a gluten free diet were not being properly considered by other members of her family. Normally, we would side with the person who has special needs, but by reading more about the circumstances, both Ellen and I found fault in the attitude of the woman eating gluten free.     I often get emails from people I know within the celiac community regarding interesting people or medical professionals, who might make good guests for a podcast episode. It was during a conversation with Ellen Bayens of theceliacscene.com when Avery's name came up. Ellen brought her to our attention recently. When I contacted Avery to record a conversation, we had to wait until she'd finished her final exams – that was a new one for me – and I was excited to hear her story and get the perspective of a high school student on dealing with celiac disease. Avery had the idea of doing something to benefit the kids in our celiac community, but it took her years to formulate what that would look like.     It's the beginning of April, which for me means that I get to chat with my friend Ellen Bayens of theceliacscene.com about interesting articles and studies she has brought to our attention over the past month. I had to record with Ellen prior to end of the March as I was preparing for knee surgery. Ellen and I both had copies of the recent booklet produced by Celiac Canada with the preliminary results from their recent survey. Both Ellen and I felt my recent conversation with Linda Sills regarding retirement and long-term care for her celiac mother was concerning and something we should all be concerned about for our families and ourselves.     This episode is a follow up to Episode 298 when I attended an event called The State of Celiac Disease in Canada during the last week of February. Celiac Canada held the event to present the preliminary results of the recent national survey. During the event, Melissa Secord the Executive Director of Celiac Canada spoke. I had more questions for Melissa, so I invited her on to this episode of the Podcast. Now that the preliminary results of the survey were being evaluated, I wanted to know more about what the results meant to Celiac Canada, and how they were going to use what they were learning to advance their efforts on our behalf. Also, at the event in February, a woman by the name of Linda Sills took to the podium to tell her family's story of dealing with care homes for her elderly mother. Linda gave an emotional talk, and again, there was more I wanted to know. The prospect of choosing a long-term care home for a loved one or yourself, is daunting, but unfortunately, for many of us, it's a fact of life. I was grateful that Linda trusted me with her moving story and allowed me to dig a bit deeper into how and why.     Ep 299 A Child's Diagnosis

    I recently realized that although many of the people I speak with have been involved in the celiac and gluten free community for many years, I wasn't well acquainted with the families of the newly diagnosed. When I operated my bakery, I was often the first celiac that people met after their diagnosis – it appears doctors were sending them my way. Since closing the bakery, I've built on my knowledge, but I must admit, I need a new perspective on what it's like to raise a celiac child today. Ellen Bayens (theceliacscene.com) was kind enough to introduce me to Kelsea. She is a mom of a busy 10-year-old boy and can clearly remember what life was like before, during and after the diagnosis. Our conversation centres around the diagnosis and how the entire family was affected.     During the last week of February, Celiac Canada held an event called The State of Celiac Disease in Canada, during which the preliminary results of the recent national survey were presented. I was invited to bring my podcast equipment to the event and record conversations with some of those involved. This episode was recorded at the event, so you will notice some distortion and background noise in the audio – there was lots going on. I had the pleasure of speaking with James King. James has been a guest on the podcast previously, but this conversation was all about survey results. James is an analyst who is able to make sense of the numbers. He shares some of his insights into survey results with us. I also spoke to Registered Dietician Caleigh McAulay from Celiac Canada about her role in the formulation of the survey and how the results might help her help us.     It's time to catch up with Ellen Bayens of theceliacscene.com for the beginning of March 2024. I have the opportunity to review some of the articles Ellen has brought to our attention over the past month and ask questions as well as interject my own thoughts. We talk about a line of granola snacks and breakfast s foods that recently had their “gluten free” designation removed because the manufacturer is no longer using gluten free oat products. As consumers we must accept this as a business decision, but the concern of both Ellen and I was the lack of awareness with consumers of this big change in ingredients. Ellen brings to our attention a couple of food recalls by Health Canada of foods containing undeclared gluten.     I had a very interesting conversation with Justine Dowd, PhD, a Health Coach who is also celiac. She works with individuals who are struggling with gut health issues. These issues can make someone feel less like themselves and put one in a spiral of depression and anxiety.     Ep 289 Gluten Free Kitchen Tips with Robyn

    Preparing food gluten free is not easy. For those newly diagnosed, or someone cooking or baking for them, it's a steep learning curve. I am often asked for advice on how to set up a gluten free kitchen to make food preparation and baking easier. On this episode I speak with Robyn of Robyn's Gluten Free Baking Courses for advice and practical tips to set up your gluten free kitchen to make baking fun and hassle free. Both Robyn and I have been baking gluten free for years, and we've come up with some handy tips to take some of the stress out of so many flours and the different equipment you might need. Here's Robyn's list of flours other information she sent me – What I keep in large jars (used most often): ·  Brown rice flour ·  White rice flour ·  Sorghum flour ·  Gluten-free Oat flour ·  Tapioca starch ·  Potato starch ·  Corn starch (though I just keep it in the large container from Costco!) ·  Almond flour: I also always have almond flour on hand, but I also buy the large bag from Costco and keep it in the fridge. Other flours I like to have. I usually keep them in smaller jars or buy them as I need them: ·  Teff flour ·  Millet flour ·  Buckwheat flour ·  Sweet rice flour (I mainly use it during the holidays) I also keep a small to medium-sized jar of xanthan gum in my baking drawer.   For those who might be overwhelmed with the number of ingredients listed here, my 6 must-have list for basic gluten-free baking are brown rice flour, white rice flour, almond flour, potato starch, tapioca starch, and cornstarch (as well as xanthan gum). These are all of the GF baking ingredients I use to make everything in my Essentials Course.  These are the jars I use for my everyday baking (what I consider to be "large jars"). If I buy even larger quantities of flour than what fits in the jars, I will keep them stored away and refill when necessary. They are normally used for a steam table in a restaurant, but they work amazingly well for bread in the oven. They are ¼, which means they are ¼ of a full steam table pan.     If you've listened to the podcast for a while, you'll know that I enjoy cruising and I've had great success eating a wide variety of gluten free foods onboard. My cruises have been on the large ocean liners. This week I'm speaking to Dianna from Expedia Cruises. Dianna herself is celiac and she's organizing this cruise for April 2025.     Like you, I often look up resources online for information on celiac disease. Sometimes, I start to go down a rabbit hole that includes social media posts including videos (which can be more convincing than just words). After being involved with Celiac Canada for more than 25 years and relying on information from them, I'm in a pretty good position to decide whether information is correct and legitimate, or if it's maybe wishful thinking, or just wrong. I thought it was a good time to bring many of these myths to the podcast. I enlisted Registered Dietician Cayleigh McAulay from Celiac Canada to help me go over myths that have attracted our attention. Cayleigh is often the person who answers queries or Celiac Canada, so I'm confident she's heard it all. The myths Cayleigh and I discuss for this episode are regarding Celiac Disease – 1.       Celiac disease is an allergy. 2.       Celiac disease is rare. 3.       Celiac disease is a childhood disease. 4.       Celiac disease can be outgrown / is curable. 5.       Celiac disease is easy to recognize. 6.       If you have the celiac genes, you must have celiac disease. 7.       Celiac disease only causes digestive issues.   Cayleigh and I will be following up in the next few weeks with Myths Part 2, covering mis-information around gluten and the gluten free diet.     I always find it interesting when I meet someone in person who I've (in my own mind) “met” online.     It's the beginning of October and my opportunity to speak with Ellen Bayens of theceliacscene.com to chat about the articles she has brought to our attention over the past month. Ellen published an article about the delay in reading celiac diagnostic blood tests for children in Montreal. This was truly concerning. The family highlighted had introduced gluten back into their daughter's diet as a gluten challenge prior to testing. When the tests were not processed and had to be disposed of to be re-done, the family was understandably angry. This situation, which is now being dealt with effected almost 3,000 blood tests for children. This gave Ellen and I lots to talk about. On a different note, there is a shift evolving to have celiac disease in adults diagnosed from blood tests which show a multiple times above normal reading. This was begun a couple of years ago for children after a study showed it could reduce the number of children having to undergo a biopsy, but recently, it's being shown that blood tests for adults with “extreme” results, can be used in a similar way. Hopefully this will lead to more simple protocols for diagnosis in the future.   Ellen brings us a question to, and answer from, an advice columnist when asked about a friend who seems obsessively talking about her gluten issues. Are we being boring? How should we deal with friends and family who find our conversations limited and very narrow? As well, what strategies should we use when a friend or family member seems to only talk about their health issues? Lots of food for thought here.     On this episode I speak with Melissa Secord, Executive Director of Celiac Canada. She fills me in on an amazing breakfast Celiac Canada hosted on Parliament Hill. Melissa chats with me and refers me to Roberta Kramchynsky, a volunteer with the CCA who has had experience advocating with members of Parliament. Both Roberta and Melissa explain to me that now a Celiac Caucus has been formed with members of Parliament from different parties. The Caucus will help Celiac Canada have its interests taken into account in upcoming legislation, as well as help put forward ideas that may help the celiac population. Tax reform and fortification of gluten free foods are just a couple of concerns that Celiac Canada is looking forward to bringing to the Caucus for consideration.
