To make dough, whisk flour and kosher salt 2. Add egg, sour cream, and 4 TBS butter stirring until combined 3. Thinly slice onion and heat on a skillet with salt and pepper 4. Roughly chop half of the onion and set the other half aside 5. Add oil to pan and cook steak in batches, 1 minute each batch 6. Once meat is cooked, roughly chop steak and add to chopped onions, tossing in shredded cheese 7. Roll out dough and cut into 3” circular pieces 8. Place 2 tsp of filling into center of each dough round. Using a wet finger, fold the dough into semi-circles, pressing a fork as the end to seal 9. Heat 1 TBS oil and 2 TBS butter into skillet and saute pierogis 10. Heat cheeze wiz in microwave while heating remaining half of onions to pan. We discuss a study of the issues involved in screening for other autoimmune disorders when patients have Celiac Disease, and screening for Celiac Disease in patients with other autoimmune conditions. We also discuss Refractory Celiac Disease which is CD that doesn't resolve properly on a gluten free diet. The gluten free diet is difficult to learn and there is a new teaching technique to empower celiacs to use new tools to help them recover. It's amazing to see that celiacs in another part of the world with a very diverse cuisine from ours have the same issues ordering food in restaurants. As well there is an interesting study that was done recently looking at the blood tests done with children and how indicative they are of a final diagnosis of celiac disease. The aim of this study is to identify a benchmark level for blood tests that would indicate a biopsy for a child is not necessary. We discuss the curious issue of Novak Djokovic, the international tennis star who has publicly said that he is on a gluten free diet for his health. There is more behind this story, and much of it will leave you with more questions than answers. Are you familiar with the FODMAP diet? It's the beginning of September, so it's my opportunity to speak with Ellen Bayens of The Celiac Scene about the studies and articles she has found over the past month to present to us. We talk about a study looking at the gut microbiome of infants, in an effort to identify differences over time in the gut microbiome that later develops into celiac disease. As well, we look at an article from Beyond Celiac that examines some of the perceived difficulties of the gluten free diet and how they might be a hinderance to adherence. Ellen tells us of an adventure vacation that was very celiac safe. Ellen has compiled a list of 10 products that might be helpful when the time comes to sending kids back to school with lunches. Apart from the food, we also chat about the importance of kids being able to advocate for themselves and their diet, which brings up a short discussion about the stickers and wristbands available from Celiac Kid Stuff. Not only did she notice a positive difference for her son, but it led her to start a gluten free food company. Autistic children often have very specific taste and mouth-feel preferences in foods. Keri's son loved perogies, but on a gluten free diet, they were almost impossible to find. After much trial and error, Keri developed a recipe and method for making gluten free perogies commercially. It was hot as balls doing this show since my AC is now broken. The heat must've gotten to our heads. So we start the show with a recording from the nerd radio show that Jess and I called in on. If you don't remember, listen to last week's show. Well, one of the guys on the show got a wrong phone call while being piss drunk, and I play the confrontation. We then try and figure out how we can use the same spoof app to make people randomly call someone. This could be fun! We talk about the first time we did something where we knew THAT was the moment we were going to hell. I have too many moment now that I think of it. We talk about whether or not we've watched porn with a person of the opposite sex. I have not....and I'm still curious of that "process". If you make it this far.....you'll learn about the puppet show. And you'll wish you had not! Mikey Poo tells us his porn watching with a girl fiasco. Then someone calls in with, I believe, the name Phil McCrackin. Lemme just say, weirdest call. AND I had a hard time recovering on with the show after the call. Matt talks about a study that says that having a TV in the bedroom ups the ol' sexy time. Which I totally disagree with. We try to determine how many calories are burned during sex. Then we do a celebratory shot for now being over the hill. And rather than drink it, Jess shoots it out her nose!! And Mike and I play "eat the cherry". Moonshine cherries are a terrible idea by the way. Then a caller calls in and asks whether he should do a girl with Herpes. Then after him, Phil McCrackin is back on! After those crazy callers, we end the show. Can't compete after that. It's been a fun ass 40 shows though. Hopefully the podcast police don't breakdown my door and throw my equipment in the river.
