A Gluten Free Podcast Episode 177 On this episode, I begin with a quick recap of last week's powerful chat with Professor Bob Anderson, where we explored the science behind coeliac disease and the complexities of its diagnosis and treatment.This week, I'm taking a more personal turn.I want to talk about something I know many of us carry: guilt. Whether you've been recently diagnosed or have been living gluten free for years, you may carry around the thought that your coeliac disease is your fault. I know I have and it's taken me a long time to shed that guilt. Admittedly, I'm still working on it! Is it something I did? Was it my genes? My lifestyle? My diet? Or the doctors who missed it?The truth is—coeliac disease is caused by a mixture of genetic and environmental factors that are completely out of our control. So let me say this clearly:

Olivia works alongside Associate Professor Jason Tye-Din, one of the world leading experts in coeliac disease research. Not only is she making pivotal contributions to the field, but she also brings a unique and deeply personal perspective—because she lives with coeliac disease herself.We'll dive into Olivia's diagnosis story, what led her into the world of scientific research, and the groundbreaking studies she's currently working on that could transform the way coeliac disease is diagnosed and treated in the future.What we'll cover:
It's the beginning of April, which means that I again have the pleasure of speaking with Ellen Bayens of theceliacscene.com. On this podcast Ellen and I speak about a new study that looks at vitamin deficiencies found with celiac disease and the gluten free diet. We also talk about gluten free food insecurity and Celiac Canada's efforts to assist. Ellen posted on social media about a restaurant posting a sign saying they were not able to meet the needs of those requiring a strict gluten free diet or with a serious food allergy. There is a story here that resulted in the sign which Ellen explains, but she received many varied responses to this issue with this particular restaurant. She also tells us about a sushi restaurant near her that goes above and beyond to ensure that many of their meals are gluten free and celiac safe. Ellen and I do love a good news story. The topic of Artificial Intelligence is one that stirs many emotions and can be controversial. Ellen has found a study that used AI to look over thousands of biopsy results taken during celiac diagnosis and AI was found to be very accurate in identifying CD. AI is currently used in cancer diagnosis. This study prompted some lively discussion but in the end we're both on the same page that whatever helps in the diagnosis journey is a good thing. I was recently honoured by Celiac Canada with the presentation of the King Charles III Coronation Medal. I explain more about the award and the truly personal nature of the honour. The Low FODMAP diet is again a topic of discussion as many celiacs are using it to over time, identify what might be causing them digestive issues once they are established on the gluten free diet. Public Policies vs Quality of Life for Celiacs We look at one county in the UK that is changing the way celiacs are able to buy and have assistance with the purchase of gluten free food – is this just an experiment in one area to see what might happen on a national scale? Bah Humbug! UK Scrapping Revered Gluten-Free Food Prescription Subsidy for Celiacs! The Low FODMAP diet is again a topic of discussion as many celiacs are using it to over time, identify what might be causing them digestive issues once they are established on the gluten free diet. Low-FODMAP Diet | Hope for Celiacs with Ongoing Symptoms? Ellen introduces us to a new study using MRI technology to measure the impact of the gluten free diet on celiacs and compares it to those eating a standard diet. The study looks at newly diagnosed celiacs and then again at the same group after one year on the diet. Some interesting conclusions that could only be seen with MRI technology. I had such a major increase in my quality of life that I was not expecting in any way whatsoever. And I was like, what else is there?” Cayla[6:55] “I was like, all right, fine. I'll try the gluten-free, anti-inflammatory diet. So, I did the whole elimination: no sugar, no fried foods, no gluten, low sodium, all of that jazz, and it really helped. Then my skepticism went out the window because I have real evidence, blood work, that indicates that my inflammation from gluten was significantly reduced after cutting it out.” Cayla [12:26] “I think a common thread in anybody who chooses to work with a coach is to say, ‘I recognize that there's something I don't know here, and I'm willing to learn and have a guide or a Sherpa in the process'.” Jenn Trepeck[13:09] “I had no idea what fiber was. I've been gluten-free and on and off other elimination diets, testing out what is best for me on a physical comfort scale, but in no way did I have the nutritious sense at all. I don't know how I was functioning. I had probably no protein in my diet. I was running on the fumes of carbs. ” Cayla[14:28] “I think a lot of people approach this with a, ‘what do I have to lose?' kind of feeling, but I also think there's people saying, ‘I'm going to commit time, effort, energy, money to something; like I got a goal and I want to hit it. This is part of the plan to get there.' And I think some of those goals can be relatively universal, right? There's a lot of people who want to see the scale change.” Jenn Trepeck[16:37] “Well, it's our educational system. It's our food system. It's our medical system, right? The structure of everything is designed to have us eating the flaming hot Cheetos, not recognizing that that's contributing to our lack of energy, literally our physical pain that's every day for some people.” Jenn Trepeck[20:51] “I think there's a big misconception about what coaching looks like or working with somebody. Like the expectation is that someone's going to say ‘yes' or ‘no' and foods are going to fall into the eat list or the not eat list, and losing all of your favorite foods. And going back to learning to read labels, it's not a yes or no, because everything's just choices and you get to make those choices. Those aren't choices for me to make for you.” Jenn Trepeck[31:03] “Honestly, the biggest change from working with you is that I care now. I didn't care before. That's probably why all of these major things have changed for me. I didn't care what I put in my body. I would eat snacks until I was full for each meal. I had no concept of nutrition, but I didn't care to have a concept of nutrition or fitness or anything. Simply caring is all I needed to do the things I maybe subconsciously knew I should do.” Cayla[33:06] “I think that's where the coach or the guide comes in to help connect those dots. Then we learn over time that we can do this ourselves. You don't need somebody like me forever, right? It's like we can tweak and learn and maybe revisit those kinds of things, but there's a piece of learning how to do this for yourself.” Jenn Trepeck[40:02] “None of us controls our destiny, our fate, right? We might have another 10 minutes. We might have another 40 years. So that part you can't control outside of eating well and exercising. A Gluten Free Podcast Episode 152Change is inevitable. Change is hard. Change forces us to adopt new habits and ways of doing things. Change helps us grow. If anything is certain in life, it is that change will occur. It's really the only the only thing we can count on. Nothing stays the same. This couldn't be more true than in our coeliac and gluten free lives. We must come to terms with the fact that our lives change when we have a coeliac disease diagnosis or we go gluten free for another health reason. We will grieve our former lives before we went gluten free. We will miss how we used to be able to socialise, travel and leave the house without planning and preparing so much. Everything changes once we go gluten free. But, does that have to be a bad thing? Well, that's something I've been battling to answer in my own coeliac and gluten free journey lately. Isaiah 61:1 says, "The spirit of the Lord is upon me because the Lord has anointed and qualified me to preach the gospel and to proclaim liberty to the captives (both physical and spiritual)." In hopes of "proclaiming liberty to the captives," Sue Becker shares her thoughts on real food freedom. Many people have consistently expressed their belief that they need to be gluten-free, embracing this lifestyle wholeheartedly. Initially, they found some relief, which solidified their conclusion that this was the solution; however, as they continued this lifestyle, they began to develop sensitivities to other foods and soon found themselves needing to be not only gluten-free but also dairy-free, egg-free, and nut-free. Sue warrants that these dietary restrictions do not equate to food freedom; instead, they lead to food bondage and physical captivity. (including Jörn Schattenberg as a co-author) evaluating the ability of short-term dietary gluten reduction to reduce metabolic dysfunction as measured in CAP (controlled attenuation parameter) scores. The study shows that even a short-term intervention can have a meaningful impact. The results confirm Louise's experience with sugar-rich foods and suggest that several different diet interventions can produce valuable results. It leads to a discussion with Louise, Jörn and Hannes Hagstrom asking which change actually drives the lower CAP: gluten, associated high fructose and sugar content in the gluten-rich products, or overall calorie reduction. To Louise, the most important idea is that interventions work best with frequent VCTE tracking and multiple diet options for patients to choose. Jörn and Roger Green concur.
