Richard Jeffares' journey from craft beer enthusiast to gluten-free brewery pioneer is a tale of passion, resilience, and innovation. Diagnosed with Coeliac Disease in 2015, Jeffares faced the stark reality of a gluten-free diet, stripping him of the craft beer diversity he cherished in Australia. This seemed to mark the end of his craft beer adventures with friends, until a 2017 American road trip unveiled a surprising discovery: breweries producing gluten-free beer that rivalled, and sometimes surpassed, traditional offerings. Motivated by this revelation, Jeffares founded TWØBAYS Brewing Co in 2018, revolutionising the gluten-free beer scene in Australia. TWØBAYS now offers a wide range of delicious, gluten-free craft beers, accessible nationwide in bottle shops, venues, and at its dedicated Mornington Peninsula Brewery. On average, adults aged 21 and older drink almost 30 gallons of beer per year in the United States. If I had to guess, I maybe drink a gallon or two, so others drink way more than 30 gallons per year to even out people like me. Since it's such a popular beverage, and more and more people avoid gluten, many people wonder, "Can you drink beer on a gluten-free diet?" In this article, I'll briefly address what gluten is and how it shows up in beer. I'll also review how you can follow a strict, gluten-free diet and still drink it now and then. Finally, I'll wrap it up with some of the best gluten-free beers to try. Of course, I'm not advocating drinking alcohol. It can lead to numerous health problems, even if you don't drink to get drunk. But I want to help people who drink responsibly and do so occasionally as part of an overall healthy diet and lifestyle. What is gluten? Gluten is a group of proteins found in certain grains, including wheat, barley, and rye.Shewry, P. R., & Halford, N. G. (2002). Cereal seed storage proteins: structures, properties and role in grain utilization. Journal of Experimental Botany, 53(370), 947-958. It's the "glue" that gives bread its chewy texture and helps it rise. In beer production, barley is a common ingredient, and hence, so is gluten. Some people react negatively to gluten. Reactions range from mild sensitivity to severe intolerance, known as Celiac Disease.Ludvigsson, J. F., Leffler, D. A., Bai, J. C., Biagi, F., Fasano, A., Green, P. H., ... & Ciacci, C. (2013). The Oslo definitions for coeliac disease and related terms. Gut, 62(1), 43-52. These reactions can lead to many problems, including digestive issues, fatigue, and even damage to the intestines, in the case of Celiac. Gluten consumption can also lead to cognitive problems. Some beers can contain significant amounts of gluten, especially those brewed with wheat or other high-gluten grains. While it can be challenging to quantify the exact amount of gluten in a serving of beer due to variations in brewing processes, some sources estimate it to range anywhere between 15-60 milligrams per liter.Colgrave, M. L., Goswami, H., Howitt, C. A., & Tanner, G. J. (2012). What is in a beer? Proteomic characterization and relative quantification of hordein (gluten) in beer. Journal of proteome research, 11(1), 386-396. A 12-ounce (354ml) beer serving could contain approximately 5-20 milligrams of gluten. Travel Gluten Free Podcast Season 07 Episode 04 Brewing Gluten Free Beer with Bierly Brewing I've never liked beer until I tried the brew that JP from Bierly Brewing creates! I'm excited to chat with him about brewing gluten-free beer on the Travel Gluten Free Podcast. JP has been brewing gluten-free beer using gluten-free ingredients since 2016. He researched how to malt gluten-free grains to use in his beers, but he decided to move toward recipe development and brewing. Why JP Decided to Brew Gluten-free Beers JP has celiac disease. He discovered this at the age of 26 when he met his partner Amelia, who had already been diagnosed with celiac disease. So, the main reason JP decided to do the gluten-free beer was that many of his wife's family members were gluten-free. JP had been experimenting for some time with gluten-free beer, so it turned out his beer was great, and everybody liked it, starting with his family. The Brewing Process and Ingredients for Gluten-free Beer JP uses honey, candy sugar, and rice syrup solids as part of his ingredients. He combines these with hops and gluten-free yeast. JP found out they could make an excellent pale ale, which ticked all the boxes for beer. Besides, JP doesn't use any barley, wheat, or rye. He also doesn't use oats because there is a large swath of celiacs that still cannot have oats. Discover how JP comes up with new ingredients for gluten-free beer. JP has sixteen years of experience brewing beer but still reads a lot to develop new beers. When reading, he is particularly interested in the history of the beer, why it was brewed, its ingredients, and the challenges faced. Origin and Different Types of Beer JP shares with us the different types of beers. Basically, most beers are defined by national origin. The three top ones are Germany and Austria, Central European, England and Belgian. However, with gluten-free beer, there is more freedom. Erin has a degree in business and is the brewmaster, who found out she had Celiac’s Disease (meaning her body can't digest gluten at all) while she was in pastry school in Colorado – can you imagine what a bitch that would be? Robyn has been home brewing since 2012 has a specialized chemical engineering degree and a degree in computer science. After several successful small-scale batches of gluten-free beer, in 2019 Erin and Robyn decided they wanted to share their craft with other beer lovers, whether gluten intolerant or not... and Cold Crash Brewery was born! What’s behind the name? If you brew your own beer (I don’t, so I learned something new), then you understand where the term cold crash comes from. Cold crashing is the process of lowering the temperature of your beer before packaging (kegging, bottling, canning) which gives the beer a cleaner and crisper finish. Since the name cold crash can conjure up images of waves crashing, it only seemed natural for Erin and Robyn to create their wave logo and beers with names reminiscent of a day at the beach. In honor of St. Patrick's Day, let's talk beer. There can be a lot of confusion around beer in the gluten free community around gluten free vs. gluten reduced products. What's the difference? Gluten free beer is made with grains that naturally don't contain gluten like sorghum or brown rice. Gluten removed beer is made with wheat, barely or rye and undergoes a process to removed gluten using enzymes. According to a 2017 study by the Gluten Intolerance Group (GIG) at the University of Chicago's Celiac Center, gluten removed beer may not be safe for those with celiac. In the study, gluten removed beer caused antibodies to react in a percentage of the subjects with celiac. Cynthia Kupper, CEO of GIG, added the medical and scientific community has not accepted gluten removed beer is safe because available gluten testing methods aren't accurate with fermented and hydrolyzed products.Wondering where to turn to find a good gluten free beer? Beer has historically been made with grains (wheat, barley or rye) containing gluten proteins. In recent years, naturally gluten free beer brewed with alternative grains like sorghum, millet and rice has become available in the marketplace. There is another new category of beer called “gluten-removed;” these beers are made from barley in the traditional brewmaking style, and are not allowed to be labeled "gluten free" in the U.S., although local state laws may differ when the beers are not crossing state lines. Experts caution against celiacs and those with gluten sensitivity drinking these beers, since no scientifically validated testing yet exists which can adequately detect gluten in beverages like fermented beers. A new research study conducted by the Gluten Intolerance Group (GIG) shows that beers labeled “gluten-removed” may indeed not be safe for those with celiac disease. A first of its kind pilot study titled, “The Celiac Patient Antibody Response to Conventional and Gluten-Removed Beer,” was published online by the Journal of AOAC International, and was conducted by GIG at the University of Chicago’s Celiac Research Center. Two authors of the study, Cynthia Kupper, CEO of the Gluten Intolerance Group and a registered dietitian diagnosed with celiac disease, and Laura Allred, Ph.D. and GIG's Regulatory and Standards Manager, join Jules on the show to discuss the impetus for the study, how the study was conducted, study results and what this means for celiacs and others sensitive to gluten as they search for safe gluten free products.
