In this podcast we will explore chefs and artisans from around the world diving into their story and passion. In this episode of Chef AF, I chat with Pastry Chef Saura Kline from Local Jones, a restaurant at the HALCYON, a hotel in Cherry Creek about finding her passion for cooking, her role models and her favorite thing to make.Kline is the new pastry chef at Local Jones. She was previously the executive pastry chef for all Kevin Taylor restaurants and boasts a first-place recognition in the 2018 La Coupe d'Altamira local Denver chocolate competition.I ask Kline about her earliest memory of being in the kitchen and she says, “my very first food memory was visiting my grandmother. I think I was probably 10 or around that age and she had a peach tree in the back of her yard and she made this homemade peach pie with homemade crust. It blew my mind like I was just like this is so amazing. Instead of a birthday cake I would ask for a peach pie on my birthday every year.” We talk about when Kline discovered this was her passion she wanted to pursue and she said, “I mean still even to this day sometimes I'll be making rice krispies or you know Snicker Doodle Cookies and I'm just like this is so awesome I get paid to do this.” Although Kline started in the savory side of cooking, she always knew she wanted to focus on pastry. She studied many famous pastry chef's cookbooks to better understand the process or techniques. Kline says when asked about the science of baking, “if you are going to make a cake or if you're going to make bread you want to have these ratios but sometimes I like to play around with sauces, you know mousses and ice creams and all of these things, I like to bend the rules a little bit.” The Halcyon hotel offers three restaurants for guests and locals. They offer American bistro, Local Jones, and Elevated Rooftop Bar where you can check out the Denver views. Kline's role is to make all the breads, desserts, jams and the amenities for the hotel. The texture is so creamy:) 1 cube butter 1 cup light corn syrup 1⁄2 teaspoon salt 1 box brown sugar (16 oz or 3 1⁄2 cups) (sometimes I just eyeball this - T) 1 can Eagle brand sweetened condensed milk 1/2 cup heavy whipping cream (optional) Combine all of these ingredients together and heat on medium low for a long time—at least a half hour, stirring often once it starts getting bubbly. The key is to do it slowly so it doesn’t burn, and it just barely boils. Do this until all the sugar is dissolved. Then, remove from heat and stir in the secret ingredient: 1 Cup Sour Cream (I’ve added anywhere from a half cup to 1 pint, and it always turns out AMAZING - T). She owns Caramel Corn business, and is the Founder of Creamy's, that creating the highest quality gourmet cheesecakes fresh from scratch every day.  Cayla had baked goods in retail stores, traveled the nation decorating cakes for a global company, and has own storefronts. She also owns Baking Show called Cayla Jordan TV to share all her knowledge in baking that she experimented with over the years. She created her first cookbook “#CHEESECAKEQUEEN”, a cookbook where she shared tons of different recipes on how to make cheesecake. This diligent woman started baking when she was 4-years-old and was taught by her mom. She'd loved staying at home and baking than playing with kids outside. At an early age, she was able to learn about supply and demand. She loves baking cakes during occasions and through lots of practice and self-education, she naturally grew her skills. Cayla started making and selling caramel corns in her high school days and later on hustling and grinding from baking cheesecakes and delivering it to different stores all by herself. Cayla's core values were tested when she tried to collaborate with different manufacturers who wanted to control everything in her recipes which was not align with her values and her brand. Cayla remains true to her brand and didn't sacrifice her core values to get into a big-box store or get her products out there because she wants to have control over what she put up. She resists everything from them and wanted to start from scratch. This was the moment when she found out what's really her passion and that's creating recipes, and creating cheesecakes.  It was a little challenged in her journey but it paid off because it gives birth to her brand. Although she did a lot of trial and error she puts everything in business and working so hard. She wants to be her business as the most important thing because she wants it to grow and she knows she will see the benefits later on. Every day is not a work for her because she did what she loved and there's no amount of money can replace it. The quality of life is her wealth and these moments where she can stay for a while and be with the people whom she loves. This may be the record for the quickest we've ever forgotten our character names. I think we remember them eventually. And then probably forget them again. Notwithstanding, it's an adventure in the wild areas around the globe! We will visit a great number of animals that we easily could have stayed home and seen right in town. Mice, gerbils, a horse. We'll visit Africa where we will meet a familiar character who is named "Little Klaw" this time. We'll go to Australia where their favorite cereals are "Plix" and "Crazy Up a Tree Flakes." And we'll visit South America where the jaguars are busy for some reason. Enjoy!

We're Doin' It: The Adam & Michael Podcast

For their first episode of 2018, to entertain everyone, the guys decided they're going to eat Jelly Belly "Bean Boozled" novelty jelly beans. Michael describes this taste test as playing a type of Russian roulette. Basically, there are 20 flavors in this pack of jelly beans — and the 10 "good" flavors have 10 lookalike "bad" flavors. Is this going to be Lime or Lawn Clippings? Is this one Caramel Corn or Moldy Cheese? You guys are sure to enjoy this at times disgusting, but very fun episode.
