The Conversation The Restaurant Guys welcome old friend Dale DeGroff, King Cocktail, to discuss his work with the Museum of the American Cocktail and the history of cocktail resurgence around the world. They discuss attributes of a great bartender, Dale's work in cocktail education and tips for creating fantastic drinks at home. You won't want to miss this conversation with a legend! The Inside Track The Guys met Dale at an informal lunch group called The Red Meat Club back in 1993 where Dale claimed that cocktails can be just as complex and interesting as wine. Not convinced, The Guys went to The Rainbow Room, where they were schooled by the King of Cocktails himself. They left convinced.  Dale helped them create New Jersey's first craft-cocktail program at Stage Left Steak and inaugurated it with a Degroff Cocktail Dinner there in 1994! The cocktail program there is now the oldest craft-cocktail program in America. The King and The Guys have remained good friends and collaborators all these decades!  All hail The King! Bio Dale DeGroff is the author of best-selling cocktail books: The Essential Cocktail, winner of the 2009 Tales of the Cocktail Spirit Award for Best New Cocktail/Bartending Book, and The Craft of the Cocktail and its revision The New Craft of the Cocktail Book which is the best-selling cocktail book of all time!  He is the founding president of the Museum of the American Cocktail in New Orleans, founded in 2005. He is also a partner and consultant in the Beverage Alcohol Resource (BAR) group.  The James Beard Foundation awarded DeGroff the 2009 Wine & Spirits Professional Award, and in 2015 inducted him into the Who's Who in Food & Beverage in America. Fords Gin was founded in 2012 by drinks industry veteran Simon Ford, on the premise of creating the ultimate gin for use in cocktails.   Now when I initially heard about that concept, my reaction was, how is that different to other gins already on the market?   Aren't they all designed for mixing?   It felt like saying you've created the ultimate frankfurt for use in hot dogs.   Simon sets me straight this episode as he explains the serious R&D that went into Fords Gin using 150 bartender mates as a consultation panel.   Working with 11th-generation distiller Charles Maxwell to balance the botanical recipe, Simon had the bartenders involved in every step, from the liquid to the shape of the bottle. In doing so, they sought to reverse engineer the most practical and versatile cocktail gin in the business.   Many of those same bartenders – including King Cocktail himself, the legendary Dale DeGroff – effectively became ambassadors for Fords when they invested their life savings into the company to get it off the ground.   Fords Gin was sold to Jack Daniel's owner Brown-Forman in 2019, but there were plenty of moments where Simon questioned his decision to leave a cushy job at Pernod Ricard for the risky pursuit of spirits entrepreneur.   It's an unglamorous tale of sleeping on couches, indirect budget flights, constantly running out of money and – at one stage – almost losing the business altogether. It’s hard to imagine, but there was a time when it was often difficult to find a well-made cocktail with fresh juices, technique, and attention to detail. That was until Dale DeGroff and his talents and techniques at tending bar became well known, most notably at New York City’s Rainbow Room in the 80s. It sparked a book deal for a now classic primer, The Craft of the Cocktail, and subsequently Dale Degroff, aka, King Cocktail, has been credited with reinventing the bartending profession, setting off a cocktail revival that continues to this day. He has a new revised edition of the 2002 classic called The New Craft of the Cocktail, so I sat down with the King to learn where we’ve been and where we’re going now in bar culture. We’re in danger of losing a lot of it all over the country with the closings so far in 2020, but remembering how and when can keep the creativity -- and cocktails -- flowing.

TCN14 is from day six of our trip, featuring Dale Degroff and Adam Seger. We’d been adapting to the pace of New York City, which had us hustling through public transportation and urban navigation. We arrived to the IPic theater, and followed the signs up the escalators to The Tuck Room. Adam pulled a book, pivoting it from its bottom corner, and the entire bookshelf revealed itself to be a door, opening to an expansive, magical “green room.” If you’ve had a cocktail, you have benefited from the influence of Dale DeGroff. He goes by the well-deserved moniker of King Cocktail, and I don’t think it’s a stretch to say that his work and his writings have directly or indirectly influenced every working bartender out there today. Adam Seger is a remarkable barman, connector and educator with a knack for bringing elegant and sophisticated presentations forward in an adventurous and comfortable way. It was a pleasure to talk to them both about cocktails, over cocktails.

Part of their ongoing series on Bar Talk Radio on the Pro Business Channel networks. The event was recorded in front of a live audience at the Wrecking Bar Brew Pub near an area of Atlanta known as Little Five Points. This event was moderated by Anthony Porquez the host of Bar Talk Radio. As founder and head craft cocktail specialist of Liquid Culture, Anthony has over 17 years in the food and beverage industry. Spanning from Boston, Los Angeles, Australia and locally in Athens and Atlanta, Anthony has provided top tier professional service and training to establishments of all kinds in the U.S. and abroad. Formerly the senior bartender for the two time James Beard Award nominated cocktail bar at Holeman and Finch Public House, Porquez has contributed greatly to the success of H&Fs highly respected cocktail program. He has been a guest bartender for Bacardis Street Party Portfolio Event at Tales of the Cocktail in New Orleans and is a contract mixology consultant for a major local spirits distributor. Under Tiffanie's direction, One Flew South was named "Best Airport Bar in the World" at Tales of the Cocktail in 2014. Barriere's background and training included the Bar Smarts program under the tutelage of “King Cocktail,” legend Dale DeGroff and cocktail historian David Wondrich. Kaleb Cribb Kaleb started in food and beverage in Valdosta Ga in a RocknRoll dive bar named Vito's as a bartender and a sound man. Upon moving to Athens Georgia, he began as a door man and bar back working in a volume sports bar and townie scene bar named Transmetropolitan, where he spent 5 years, leaving as the bar manager. After that, he moved into fine dining at the now defunct Farm 255, where he developed the first craft cocktail program in Athens (after staging with Miles Mc. At Leon's Full Service). He moved to Atlanta after taking a job with National Distributing Company as their in house mixologist and craft spirit specialist. He spent almost 2 years with the distributor before taking over as lead bar at Holeman and Finch Public House, spending 2 years running that program. When it comes to cocktails, Dale DeGroff is literally king. Dale (aka King Cocktail) is the author of the award-winning “The Craft of The Cocktail” and “The Essential Cocktail” (Random House). Dale is most famous for having worked and managed the bars at New York’s famous Rainbow Room. Dale was awarded the James Beard Wine & Spirits Professional Award in 2009, and the The Best Bar Mentor at Tales of the Cocktail 2010. He is a partner of Beverage Alcohol Resource (BAR), a partnership of six of the world’s leading spirits and cocktails authorities who provide training and credentialing in distilled spirits and mixology. Dale is also the founding president of The Museum of the American Cocktail in New Orleans. Dale’s most recent endeavor is his new Pimento Aromatic Bitters, a product he developed with renowned absinthe distiller Ted Breaux.
