Cheetie Kumar is — by pretty much everyone's accounts — one of the coolest people ever. At the 2024 Food & Wine Classic in Aspen, the Raleigh-based chef, restaurateur, and Birds of Avalon guitarist made time for a quick chat about how she had to rethink restaurants through Covid, created the structure of her new restaurant to make sure it benefitted the neighborhood and the people who work there, the joy of introducing new flavors to a population that maybe hadn't experienced them before, and the bands she absolutely will not play in the dining room. “It's valuable to not have a perfect plan,” advises Gail Simmons as she shares how she manifested her dreams into reality—from penning restaurant reviews in college to becoming a renowned figure in the culinary world. Working under food critic Jeffrey Steingarten at Vogue and alongside chef Daniel Boulud, Gail gained invaluable lessons that paved the way for her role at Food & Wine Magazine. It was here that Gail's involvement with the Food & Wine Classic in Aspen would eventually lead to her television debut on Bravo's “Top Chef,” bringing her into the spotlight and influencing the culinary industry at large.Beyond television, Gail discusses her venture into entrepreneurship with Bumble Pie Productions, aiming to elevate diverse voices in the culinary space. She reflects on the challenges and rewards of balancing a high-profile career with being a present parent, sharing personal anecdotes about integrating family life with her professional endeavors. This episode shows how passion, when pursued diligently, can lead to fulfilling and successful careers. Gail Simmons reminds us that with the right ingredients, anyone can cook up their dream career.Quotes“I am not an expert in parenting. We're all just trying to do it. And also just in navigating the challenges of life in general. I love that I love my job. That doesn't mean that it's all awesome. It's still called work for a reason, right? I make it sound very glamorous, but I assure you I'm not just going to 12-course tasting menus and jetting to Aspen every day.” (44:00 | Gail Simmons) “The goal of running a business, no matter how big or how small, is to do less for the most cost. It's not to do 100 things for $5, to do five things for $100.” (49:03 | Gail Simmons) “I think it's valuable to not have a perfect plan. I don't believe in the five-year plan because inevitably the world will trip it up. You don't know where the world will be in five years. How can you possibly know where you will be? I always say, have the foresight to walk ahead confidently. But make sure to keep looking to the left and the right because that's where the opportunities are." Gail Simmons is the ultimate culinary multi-hyphenate. Though she's perhaps best known for her 21-season tenure as judge on the competition reality show Top Chef, which debuts its latest season on March 20, she's also made a lasting impact on so many other areas of food media. Simmons has spent 15 years of her career leading teams at Food & Wine (including organizing the Food & Wine Classic in Aspen); has written numerous books; and has even launched her own production company, Bumble Pie Productions, which focuses on bringing women's voices to the food landscape. But before Simmons was making a name for herself as a food expert, she spent her early career gaining industry knowledge by attending culinary school; working at the iconic restaurants Le Cirque 2000 and Vong; assisting Vogue food critic Jeffrey Steingarten; and running special events for Daniel Boulud's legendary restaurant group.See Privacy Policy at https://art19.com/privacy and California Privacy Notice at https://art19.com/privacy#do-not-sell-my-info.

Welcome to Episode 1548, #Winetok: Why the clock is ticking on one of the world's greatest marketing tools and how you can cash in with Amanda McCrossin, moderated by Ilaria Felluga. This is the wine2wine Business Forum 2022 Series. The sessions are recorded and uploaded on Italian Wine Podcast. wine2wine Business Forum is an international wine business forum, held annually in Verona Italy since 2014. The event is a key reference point for wine producers and a diverse variety of wine professionals eager to develop and grow their wine business worldwide. About today' session: In the past year Amanda McCrossin has gone from having no TikTok presence to now over 150k followers in the wine niche. What was once a platform for kids, has now evolved into a billion-dollar marketing tool with an estimated 50+% of users now over the age of 30. The powerful TikTok suggesting algorithm has not only allowed her content to be seen, but be seen by the right audience. As a result, she has been able to not only help educate and demystify wine for a very wine-curious sector, but also move hundreds of thousands of dollars worth of wine through recommendations in her videos. But TikTok today is where Instagram was 5 years ago and while many brands from other sectors are beginning to recognize and even capitalize on the marketing power of the app, it is still very much a blue ocean for the wine world. The clock's ticking and those who take advantage in these nascent stages will be poised for success. More about today's speaker Amanda McCrossin is a certified sommelier, wine personality, and TikTok/Instagram/YouTube creator. As the former Sommelier & Wine Director at PRESS Restaurant in Napa Valley, Amanda worked with the world's largest, deepest restaurant collection of all Napa Valley wines in the world. During her time the wine program thrived; garnering nominations, accolades, and awards from nearly every major publication and outlet in food, wine, and hospitality. She has been featured by Food & Wine Magazine, Food Network, San Francisco Chronicle, on the cover of SOMM Journal and most recently by Wine Enthusiast who named her a Wine Star nominee for ‘Sommelier of the Year.' Today, Amanda is widely considered an expert in Napa Valley wine and regularly sought after for media appearances and speaking engagements including the Aspen Food & Wine Classic and Premiere Napa Valley. A Napa Valley resident, Amanda can be found creating daily content for her popular TikTok, Instagram, and YouTube channels – SommVivant – as well as hosting the Wine Access Unfiltered Podcast. Ilaria graduated form the prestigious University of Viticulture and Enology in Udine. Today, following in the footsteps of her grandfather Marco and father Roberto, she leads the prestigious Marco Felluga – Russiz Superiore wine estates. Almost as ubiquitous as a beer and pretzel, there is the classic pairing of beer with cheese. This pairing is also an excellent gateway into the beer world for those just starting on their beer journey, so we decided to do an episode dedicated to beer and cheese. We welcome Anne Becerra (Cicerone, Speaker, Consultant: annelikesbeer.com) back to the show to talk through her process of pairing beer with cheese. While there are always the classic three C's for pairing beer with food (Compliment, Contrast, Cut), her approach is more organic. She guides us through her method of dissecting the flavors of a beer and how those flavors could act as additional ingredients to the cheese experience. The process is very approachable and easy to follow. In June Anne lead a seminar with cheese expert, Laura Werlin at the Aspen Food & Wine Classic, where they paired seven classic European beer styles with some stunning cheese. This was the first time beer was featured as one of the seminar options. Anne explains her thought process for selecting these styles for attendees who are more wine drinkers and the feedback she got from them. We of course go down a few rabbit holes... drink more Doppelbock! But it wouldn't be Beer Me without at least one or two diversions. We took the show on the road for Food & Wine's Classic in Aspen, CO at the Wheeler Opera House. First, we welcomed Restaurant Editor Khushbu Shah to talk about restaurant industry trends starting with chefs reclaiming their craft by building systems that allow them to run a restaurant on their schedules and practice "unapologetic cooking." Then Associate Food Editorial Director Chandra Ram joins the conversation to talk about what she's seen in home cooking trends, from translating restaurant-level experiences into a recipe and the lasting change Covid has made in home cooking. Then we talk Southern food with Chef Tiffany Derry of Southern Table and Roots Chicken Shack in Texas. She looks at her relationship to Southern cuisine and how important it is to represent her roots authentically and showcased with a spin. And then, the East Coast editor of The Somm Journal and founder of winewithwanda.com, Wanda Mann, talks to us about the trends in the wine world (hello rosé!) and how people's drink tastes have changed over the last few years.Broadcast dates for this episode:July 7, 2023 (originally aired)Generous listeners like you make The Splendid Table possible.
