Send us a textIn this episode of A Steady Pour Podcast, the crew welcomes Emiliano Chalchiuhtohtli Angel Guajardo from Still Austin, a rising star in Texas whiskey. Emiliano shares his unique journey from the world of education to the distilling industry, including his time at Treaty Oak and his current work at Still Austin. We dive deep into the creative processes behind Still Austin's products, particularly their signature use of different types of corn and their innovative barrel finishes. The conversation takes us through Emiliano's passion for blending whiskey and his approach to crafting distinct, flavorful profiles that represent both his heritage and the spirit of Texas. We also touch on the challenges and triumphs of working in the Texas whiskey scene, including the infamous “Texas funk” and the impact of the state's climate on aging whiskey. Emiliano gives insight into Still Austin's commitment to innovation and tradition, as well as their future plans. This episode is packed with insider knowledge, personal stories, and a deeper look at what makes Texas whiskey so special. Tune in for a candid conversation about whiskey, community, and the road ahead for Still Austin!
In this cask-strength conversation with spirits judge, educator, and master blender Nancy Fraley, some of the topics we discuss include: Nancy's journey to spirits blending, from Harvard Divinity School, to maritime law, to her apprenticeship under the legendary brandy maker Germain Robin. The story of the first Cigar Blend Bourbon (developed, of course, by Nancy) and how she weaves together factors like fermentation style, maturation humidity, cask finishes, and more to achieve the elusive flavor note known as rancio. A crash course in blending theory, which draws on architectural and corporeal metaphors to describe how to build flavor profiles in barrel-aged spirits Why the terms “master distiller” and “master blender” have become watered down in recent decades, which underscores the importance of humble practice day after day, year after year, in the pursuit of world-class distillates. We also explore the tension between the intellect and the instinct in spirits blending, using Nancy's experiences to illustrate how and when to let the wisdom of the body triumph over the chaos of “monkey mind” and the dance of contingency. Along the way, we divulge the connection between French brandy and rotting pheasant, trace the story of an all-but-forgotten yeast strain, share how you can sign up to taste some of the rankest, most flawed distillates in Nancy's “Nosing for Faults” class, And much, much more. This episode was made possible with editing and sound design by Samantha Reed, whiskey blending insights and some delicious pours brought to you by Nancy Fraley, and support from The American Distilling Institute. This has been a Direct Fire Studios production, copyright 2025.

Martelle, Mike, and Randy kick things off with an OHLQ single barrel honey barrel from Starlight Distilling in Indiana—only to find out, like most OHLQ picks, it wasn't great. But redemption came quickly as they moved on to something Martelle was excited to finally get in Ohio: Still Austin Cask Strength Bourbon. Now that's what they call a great pour. Recorded on 02/08/25, this episode is all about the thrill of the hunt, the disappointment of a bad pick, and the excitement of finding a bourbon that delivers. Man oh man i'm so excited to bring this episode to y'all. Today we have Jason with Still Austin Whiskey. We had a great conversation about the brand and the spirit. Lets get into it. Have you checked out our sponsors yet. Badmotivatorbarrels.com/shop/aff=3 https://www.instagram.com/zsmithwhiskeyandmixology?utm_source=ig_web_button_share_sheet&igsh=ZDNlZDc0MzIxNw== Patreon.com/the_whiskeyshaman Stillaustinwhiskey.com It all started in 2012. Cleveland Seals was looking for a post-retirement project to occupy his time and had the wild idea to start a whiskey distillery. Cleveland shared his dream with his son, Chris, and asked for his help. Chris —a longtime economist and risk manager— knew all too well how difficult it would be to bring his Dad's dream to life. Looking at the risks, Chris thought that the chances of success were pretty low, but he liked the idea of spending time with his dad, so he suggested to Cleveland that they do a “feasibility study.” The supposed “study” would ostensibly determine the chances of success in starting an Austin-based whiskey distillery, but secretly, Chris's real plan was just to spend time with his dad, get him settled into retirement, and after having a lot of fun, decide not to actually do it. Over the course of the next year, that is exactly what Cleveland and Chris did. The two traveled together, visited whiskey distilleries, and had a lot of fun drinking whiskey together. Prior to this “study” the father-son duo rarely talked with one another, but they soon found themselves talking every day. And not just talking about business. After a few whiskeys they were talking about everything -- even their feelings! As Chris says, “it was the best thing that ever happened to me and my dad.” Then, as fate should have it, in 2013 state laws in Texas changed. The changes made it easier to open a craft Bourbon distillery in Texas, and also made it likely that a Texas Whiskey category would emerge. Having devoted a year to studying the market, the two realized they just might be at the right place at the right time. They assembled a team of local farmers, whiskey experts, local artists, and crazy co-conspirators — and together with the support of their whole community, Still Austin Whiskey Co was born. The distillery broke ground in 2014 and began distilling in 2017 (yes, it took three years to build this special distillery). In 2020, Still Austin's first straight bourbon whiskey was released. Over the past decade, Cleveland and Chris discovered the power of believing in a special future - especially for someone you love. Cleveland's dream came to life as an authentic Texas whiskey, made from grain to glass in Austin, Texas. Together we make whiskey for everyone: the musicians, the visionaries, the lovers, the scientists, the oddballs, the artists, and the everyday dreamers. Everybody knows that really great whiskey HAS to come from Kentucky, right? And everybody knows bourbon HAS to come from Bourbon County, right? Right? Everybody is wrong. The truth is great whiskey can come from anywhere, and great bourbon can come from anywhere in the United States (as long as you follow the rules). Dozens of fantastic whiskeys have popped up over the last few years from all over the world, even from places as far away from the U.S. as Australia. As whiskey making has grown more popular, people from all over the world have learned how to make great whiskey, and Texas is leading the way.

One of my new favorite people in the whiskey history community has just come out with a fantastic book that explores Texas Whiskey history before Prohibition. Like Tennessee, the history of distilling in what is now Texas goes back much further than you think. Let's step out of the saloon lore and find the real (footnoted) history of Texas whiskey with author and co-founder of Still Austin, Andrew Braunberg. Cheers to real whiskey history!

We also delve into the role of pharmacists in the whiskey business and how temperance laws and prohibition have shaped society's relationship with this spirited beverage. As if that wasn't enough, Andrew also offers a glimpse into his book "Fires, Floods, Explosions, and Bloodshed: The History of Texas Whiskey". We cover everything from the difference between whiskey, bourbon, rye, and scotch to the medicinal uses of whiskey and how bad distillations were masked. We even touch on the cultural origins of many mixed drinks and how whiskey has intersected with major historical events, including the Civil War. Still Austin sent us some of their flagship bourbon, named "The Musician." Directly from them: "Our new Straight Bourbon, affectionately known as “The Musician”, is made from 100% Texas-grown corn, rye and malted barley. It's the distillation of all we are, and of all that has created us—an expression of true Texas terroir. Like our home city, this bourbon is inclusive and original. It took a combination of Southside pluck, oak-aged patience, slow-water reduction, and good old-fashioned ingenuity to bring this spirit to life—along with the help of one very special 42-foot tall woman, “Nancy,” our one-of-a-kind Scottish-made still. For us, this whiskey represents so much that is good in this world. It's inspiration and togetherness, community, and creativity." Thank you to Still Austin for sending this our way! Scott sits down with Nick, Jon and our newest friend Tim and reviews a new bourbon company Still Austin and their bottle The Musician. Still Austin is a homegrown distillery situated in the heart of South Austin, recently released its first high-rye straight bourbon whiskey featuring grains that are 100% grown by Texas farmers. The bourbon is handmade from grain-to-glass at the distillery, aged in new charred American Oak barrels, and bottled at98.4proof (49.2%ABV).It's comprised of a high-quality mashbill worthy of its hometown:70% Non-GMO white corn(the same found in Austin's tortillas), 25% Elbon rye(which imparts a natural spice)and 5% wildfire malted barley.

Thanks, and enjoy the show!Be sure to show some love for the company that brought you today's bottle!https://stillaustin.com History: -Founded in 2015 by three Austin families, Still Austin Whiskey Co. is a true grain-to-glass distillery, located in the heart of Austin, Texas. -All spirits are handcrafted using grains grown by Texas farmers. -Still Austin places a high value on sustainability, with a focus on cutting carbon emissions through local sourcing, increasing the biodiversity of the region through heritage grains, returning spent grains to local ranchers to feed their animals, and operating a distillery that is designed for energy efficiency and water conservation.-Still Austin Whiskey Co. performs a very unique process during the aging of its bourbon. Referred to as “Élevage”, a small amount of water is added during each month of aging to gradually proof down the bourbon and accentuate its interaction with the wood.Bottle:-In 2021 they decided to release their cask strength bourbon. This bottling does not use the same unique process to proof it down. -Mashbill: 70% Non-GMO White Corn, 25% Elbon Rye and 5% Wildfire Malted Barley-It would seem that most distilleries in Texas have started to us White corn instead of yellow dent corn. -Specialty and white corn are typically grown for specific purposes. White corn contains higher levels of starch, which make it perfect to be used in corn chips, tortillas, and other popular food products. -Texas is a large producer of dent corn and white corn.-They have two permanent bottling offerings -Cask Strength and the “Musician” -They have over 11 different special releases that they have done.
With our lack of luck regarding Texas Bourbon, we heard good things about Still Austin and had to give it a try. The price point is nice on this bottle of bourbon especially for the proof, but is it worth it? A nice sipper that does not drink it's proof with a sweeter palate. Texas Whiskey is a growing category looking to make its mark in the world of American Whiskey and Kentucky Bourbon. We're joined by Nico Martini, who just published his book Texas Whiskey, an ever-evolving chronicle and guidebook of the “history” and people of Texas Whiskey. Nico is also co-founder of Grayson Whiskey, author of Texas Cocktails, and a lover of all things Texas. Grayson Whiskey is a blend of Texas bourbon and wheat whiskies and just hit the shelves only a few months ago after a successful launch. In this episode, we taste Grayson Texas Blended Bourbon Batch 1, which is coming in at 3 years old and 119.4 proof. Batch 1 contains whiskey from Ironroot Republic Distilling, Balcones Distilling, and Five Points Distilling, the makers of Lone Elm Whiskey. As you'll hear in the episode, after selling out Batch 1, Grayson will release Batch 1B in October 2020. Batch 1B will contain the same distilleries and same percentage blend as the original batch, but some variation is expected. On March 2, 2022, Grayson will release Batch 2, featuring 4 distilleries; with the addition of Still Austin. A huge thank you to Nico Martini for the opportunity to try the whiskey, check out his book, and to Cider Mill Press for the review copy of the book. We are thankful for everyone who has supported us. A huge shoutout to our growing Patreon Community as well! We'd appreciate it if you can take the time to give us feedback on our podcast. Cheers,Scott, Jake, & MichaelBourbon Lens The Story of Grayson Whiskey: Texas in a bottle. Our goal was to create a bourbon that blended some of the best whiskeys in our state, in a way that had never been done before. For us, Texas whiskey is the epitome of innovation and in Grayson, we honor the diversity and creativity of our great state. Grayson embodies the spirit of Texas in both your glass and in your soul. Grayson is bold, brazen, bona fide, and, above all else, uniquely Texan. We hope that the beginning of our story can be a highlight in yours. Grayson tonight, Texas forever. Cheers, y'all. Our goal from the beginning was to highlight the work of some of the best distillers in the great state of Texas in a collaboration that truly represents our home. The first step was to reach out to The Likirish Brothers, Robert and Jonathan, at Ironroot Republic Distilling, because we knew they were blending some of the best whiskey in Texas. After long discussions about what was important to us about whiskey, which flavors profiles we were most interested in, and a discussion of the myriad of ways to achieve the flavor we were looking for, Jonathan then took our ideas and he started developing different paths to our version of Texas in a bottle. About the Whiskey: Grayson is a blend of straight Texas whiskeys. When we began to search for the distilleries we, both, wanted to work with and believed could add the layers of complexity we were hoping for. Batch one of Grayson contains some of our favorite Texas distilleries, including Ironroot Republic Distilling, Balcones Distilling, and Five Points Distilling, the makers of Lone Elm Whiskey. Grayson is a blend of 100% straight whiskies that are 100% Texan. Jonathan began creating a series of sample blends of carefully selected single barrels that accentuated specific flavors in each distillery's whiskey. We worked with our distillery partners to hand select every barrel that has gone into this batch. There were barrels selected that were up to 7 years old but everything in Grayson is at least 3 years. We then sought to integrate and balance the overall blend while maintaining the flavors we curated initially. Then, the whiskey was vatted and allowed to marry for a few months prior to bottling. With the help of some incredible friends, we hand labeled and hand bottled Grayson in late March. It's a labor of love, for sure, but it's also worth every bit of effort. Tasting Notes from Grayson: Nose: Raisins, barrel aged maple syrup, Beignet flavored coffee grounds, jalapeño jelly, and a hint of the inside of new cowboy boots. Palate: Super sweet initially with syrupy waffle notes, moves into a spiced cider with allspice, cloves, cinnamon and nutmeg, brown butter into an almost burnt pecan, sweet wheat and fennel finish. Bob and Brad visit Crafted Cocktail Co. in Wadsworth, OH, and talk to beverage director Scott Sauer about what it means to blend whiskey. While many reputable brands are basing their business on blending, you can make your own whiskey blend at home, and we offer two examples. Scott share a Crafted Cocktail House blend, and Bob offers up his very first infinity bottle for criticism. Meanwhile, all three rave about the two-year bourbon being produced at Still Austin. This week we are trying Still Austin Bourbon Whiskey. More information about Still Austin Bourbon can be found at caskmatespodcast.com/still-austin-bourbon. Afterwards we all about GMO's. What are they really? Are they really bad for you? We get into all of it, and learn some of the facts that seem to be glossed over or ignored when talking about them. Mike also brought by a veggie burger for the group to try for the first time and the results are unexpected! Above all, thanks for listening and we will see you again next week.
