On May 25th, 2025, the Sam and Esther Dolgoff Institute (SEDI) hosted philosopher, poet, and long-time New Orleans anarchist John Clark—also known by the pen name Max Cafard—for a wide-ranging discussion on his latest book, Anarchy in the Big Easy. Drawing from decades of experience in radical theory and grassroots activism, Clark offered a deeply personal and politically provocative portrait of New Orleans as a site of ecological struggle, cultural resistance, and libertarian possibility.John Clark is the author of numerous works including The Impossible Community, The Tragedy of Common Sense, and Between Earth and Empire. My impression of the city was that it didn't feel like it could exist in the United States, like it existed in a parallel version of the US or in a foreign country. There are countless myths and reports throughout human history of places where spirits come down to earth. Where the intangible meets the material world. In the US, there are few places that better demonstrate this crossroads than New Orleans. People have tried to explain how the joy of living here triumphs over everyday things like dysfunction and potholes, with slogans like “The Big Easy,” and “The city that care forgot.” One of the locations you can witness this triumph of the spirit is the corner of Napoleon Avenue and Tchoupitoulas Street. No, not Rouse’s. Across the street. At Tipitina’s music club. Keith Spera from the Times Picayune has called Tipitina’s, “a sacred space.” Dr. John called it, “The church of the funky saints.” And Jazz Fest co-founder Quint Davis has referred to it as, “The Vatican of New Orleans music.” Tipitina’s was founded in 1977 by a bunch of young people who knew nothing about business, music promotion, running a restaurant, a bar, or a radio station – it was the original home of WWOZ. These folks just wanted a place that celebrated New Orleans musicians and gave them a stage to play on - and a guarantee they’d actually get the money that people paid to come see them. In 2018, history repeated itself when the members of the New Orleans band Galactic bought Tipitina’s. Musicians are not typically known for their firm grasp of the music business, but the doors are still open and the revenue streams have diversified, including a record business called Tipitina’s Record Club. Robert Mercurio is the bass player in Galactic, part owner of the legendary Tipitina’s music club, and Co-Founder of Tipitina’s Record Club. Besides music, there’s another strand of New Orleans where art meets commerce, and where, literally, the rubber meets the road. Motorcycle design and manufacture. It’s a lot less celebrated than our place in the history of music, but if you know a thing or two about motorbikes you’ll know my other lunch guest today, J.T. Nesbitt. J.T designed and was part of the team that produced motorcycles called The Wraith, the G2 Hellcat and The Magnolia Special, for Confederate Motorcycles, and later an electric bike, The Curtiss One. They’re all elegant works of art and powerful machines. Today, JT is designing and building a new line of bikes under the banner of his own company, Bienville Studios. Currently he’s building a bike called the Magnolia 4. We find out all about it in this edition of Out to Lunch but for now all you need to know is Jay Leno has one on order. The Tipitina’s logo with the half-peeled banana is a New Orleans icon. For locals and live music lovers everywhere it’s as recognizable as the Nike swoosh or the Mercedes hood ornament. Nike and Mercedes spend millions of dollars each year to keep their brands in front of people. Tipitina’s brand is spread mostly by people paying them – to buy a T-shirt or baseball cap. The lesson being, when you have a product people genuinely care about and cherish, it sells itself. The same philosophy can be applied to the motorbikes coming out of Bienville Studios. Robert Mercurio and J.T. Nesbitt are both at the helm of very different but equally unique and valuable New Orleans pieces of art and commerce. From "Cardoons" to "Misbeliefs," "Huckabucks" to "Second Lines" – the Big Easy has a lingo all its own, built on generations of immigrants finding their way to the port of New Orleans, the French Quarter, and finally a life in this city. For centuries, Africans, Southeast Asians, Europeans, and Caribbean Islanders have worked to make a home here, resulting in the hodgepodge of culture New Orleans is today. On this week's show, we examine two immigrant groups who loom large in the story of the Crescent City. With begin with historian Justin Nystrom, who discusses the influence that Sicilian Americans have had on our city's foodways. Surprisingly, that influence didn't begin with the heavy influx of Sicilians who populated the city during the late 1880s, but with a first wave of Italian immigrants who arrived on our shores in the 1830s. Then, Liz Williams joins us with memories of her Sicilian grandmother, Nana Elisabetta, who arrived in the Crescent City at the age of 18. Liz's book, "Nana's Creole Italian Table," is filled with recipes and family lore. Finally, we sit down with Tulane History Professor Laura Kelley. Her book, "The Irish in New Orleans," tells the history of Irish immigrants in the Crescent City and how they shaped Louisiana culture in some unexpected ways. The Art & Theater of Bananas Foster,” Gravy producer Eve Troeh takes listeners to Brennan's, the iconic restaurant in New Orleans' French Quarter, where skilled servers pull off one sensational culinary feat, table after table and day after day—Bananas Foster, flambéed tableside. Brennan's opened its doors more than seventy years ago, and its early years coincided with a hot trend in fine dining at the time: tableside dishes. Many know this practice, when a server wheels over a small cart to your table and makes a dish right in front of you. One of the iconic recipes in this pantheon of the tableside tradition is Bananas Foster, a rum-laden flambéed dessert that was invented at Brennan's in 1951. Today, the dish appears on menus worldwide, and Brennan's serves the original day and night, dazzling diners with a fiery display. The ritual of tableside dining, once a hallmark of fine establishments, originates in European opulence, where elaborate presentations convey status and sophistication. While the tradition waned in the 1960s and 70s, Brennan's steadfastly preserves it, offering not only Bananas Foster but a repertoire of tableside classics, each dish a testament to culinary craftsmanship. So what is it like to produce this “show” of Bananas Foster, day in and day out? For the staff at Brennan's, mastering the art of tableside service is a rite of passage. It takes a special kind of server to pull it off, as well as intensive training, special equipment, and a careful attention to safety as the dessert's rum and liqueur sauce is lit. For Gravy, Troeh visits the Big Easy to speak with Christian Pendleton, general manager at Brennan's, and Chalaine Celestain, a Brennan's captain (or leading server) for whom tableside preparations are one part of a complex repertoire. From controlling the flames to engaging guests in the experience, she embodies the spirit of hospitality that defines Brennan's. Maureen Costura, professor of liberal arts and food studies at the Culinary Institute of America, offers historical context. Despite the occasional mishap, the allure of tableside dining endures, offering patrons a glimpse into a bygone era of elegance and charm. For Christian and his team, it's not just about serving a meal; it's about creating memories and fostering connections with each guest. In an ever-changing culinary landscape, Brennan's remains a bastion of tradition, where the art of tableside dining continues to captivate and delight. In this episode of The Pivot Podcast, Ryan, Channig and Fred sit down with first time All Pro, Denver Broncos linebacker Nik Bonitto as he talks about his journey to the NFL, adjusting to life in Denver, facing Patrick Mahomes, playing with Jalen Hurts in college, his support of Broncos teammate Patrick Surtain II winning the Defensive Player of the Year and why people hate the Chiefs!
