Chris —a longtime economist and risk manager— knew all too well how difficult it would be to bring his Dad's dream to life.  Looking at the risks, Chris thought that the chances of success were pretty low, but he liked the idea of spending time with his dad, so he suggested to Cleveland that they do a “feasibility study.”  The supposed “study” would ostensibly determine the chances of success in starting an Austin-based whiskey distillery, but secretly, Chris's real plan was just to spend time with his dad, get him settled into retirement, and after having a lot of fun, decide not to actually do it. Over the course of the next year, that is exactly what Cleveland and Chris did. The two traveled together, visited whiskey distilleries, and had a lot of fun drinking whiskey together. Prior to this “study” the father-son duo rarely talked with one another, but they soon found themselves talking every day.  And not just talking about business.  After a few whiskeys they were talking about everything -- even their feelings!  As Chris says, “it was the best thing that ever happened to me and my dad.” Then, as fate should have it, in 2013 state laws in Texas changed.  The changes made it easier to open a craft Bourbon distillery in Texas, and also made it likely that a Texas Whiskey category would emerge.  Having devoted a year to studying the market, the two realized they just might be at the right place at the right time.  They assembled a team of local farmers, whiskey experts, local artists, and crazy co-conspirators — and together with the support of their whole community, Still Austin Whiskey Co was born.   The distillery broke ground in 2014 and began distilling in 2017 (yes, it took three years to build this special distillery).  In 2020, Still Austin's first straight bourbon whiskey was released.  Over the past decade, Cleveland and Chris discovered the power of believing in a special future - especially for someone you love.  Cleveland's dream came to life as an authentic Texas whiskey, made from grain to glass in Austin, Texas.  Together we make whiskey for everyone: the musicians, the visionaries, the lovers, the scientists, the oddballs, the artists, and the everyday dreamers.   Everybody knows that really great whiskey HAS to come from Kentucky, right? And everybody knows bourbon HAS to come from Bourbon County, right? Right? Everybody is wrong. The truth is great whiskey can come from anywhere, and great bourbon can come from anywhere in the United States (as long as you follow the rules). Dozens of fantastic whiskeys have popped up over the last few years from all over the world, even from places as far away from the U.S. as Australia. As whiskey making has grown more popular, people from all over the world have learned how to make great whiskey, and Texas is leading the way.

This place is the reason Big Chief came back to podcasting. Raleigh and Big Chief start the show with the Bendt No. 5, which is a blend of all their expressions and has a citrus zest to it. They then move to the UnBendt Rye which has a unique mash bill of Elbon Rye, Triticale Hybrid Grain, Marris Otter Malted Barley, and Naked Streaker Oats. This gives it a thin mint cookie taste. They finish the first half with the UnBendt wheat whiskey which makes Big Chief light up with excitement. In the second half they start with UnBendt Bourbon, which at 5 years old can compete with anything on the shelf. They finish the show with UnBendt Malt Whiskey. What a wonderful expression of Malted Whiskey using wheat as a secondary grain. This week on The Whiskey Trip Podcast, Big Chief takes you on a ride to North Texas and introduces you to Ironroot Republic Distillery. He chats with Robert and Jonathan Likarish and also gets a surprise visit from the Mother of Texas Whiskey, Marcia Likarish. This family tells us their story of how a family reunion and a visit to a distillery got their gears rolling. The brothers traveled the country, visiting other distilleries, learning how to distill their own whiskey. With being a distiller in Denison, Texas which is the sister city to Cognac, France, they wanted to use the French technique of elevage when making whiskey. The brothers give praise to their mother, saying she's the glue that keeps the distillery together. The Likarish Family and Big Chief start the show with Promethean. It uses a Floriani Red Flint corn in the mash which gives it a cayenne spice. They then move to Ironroot Harbinger 115, one of the Big Chief's favorite whiskies of all time. The brothers call it their brunch whiskey. They end the first half with a winter tribarrel blend which is a 5-, 6- and 7-year-old whiskies. In the second half they start with a Saint's Alley, an MGP blended with their whiskey. This is a collaboration with the Liquor Hound. The next expression is the Saint's Alley The Nobleman Rye. They finish the show with Ironroot Apotheosis V which is a bourbon finish in a PX Sherry and Amburana cask. It's cinnamon rolls drizzled in caramel coffee. Delicious! This ride on The Whiskey Trip shows that there are still new ways to finish and make whiskey that are exciting and will expose your palate to notes you have yet to experience. Cheers!

Dr. Ken Maverick, the owner and founder, is the eighth-generation Maverick in San Antonio. His ancestor might have been the last man to leave the Alamo alive, sent out to get help.  Maverick Distilling is out to prove itself as a whiskey company that happens to be based in Texas, not a Texas Whiskey company. Self-described "entre-brew-neur" Ryan Soroka is president and co-founder of the successful 8th Wonder Brewery, based in Houston's vibrant "EaDo" neighborhood. Hospitality graduate school and a passion for beer took him on his journey from home brewing to running a food truck to launching a popular brewery and brew pub.   Upon graduation from university, Ryan began his career in corporate finance, but after acknowledging his true calling, he pursued and earned a master's degree in hospitality management at the Conrad N. Hilton College of Global Hospitality Leadership at the University of Houston. "Graduate school built my confidence and solidified my passion for this industry," says Ryan. It is also where he met his future business partner Aaron Corsi. "There was a natural progression in my business planning from food truck to brick and mortar restaurant and brewpub to brewery," adds Ryan.   In its 10th year of business, 8th Wonder produces a wide variety of classic beers and ales, including seasonal offerings. More recently, 8th Wonder has successfully expanded into spirits distillery under the brand 8 times Vodka and Texas Whiskey, as well as a line of non-alcoholic offerings under the brand  Wonderwaters.    In this episode, Ryan explains how he and his team manage a successful brewery operation — including production, taproom service, onsite events, product development, and community marketing.

In this episode of Gotta Love Texas Music, we sit down with Jeff Vaughn. He is one of the nicest guys you will ever meet. What a great voice and ability to tell a story through his songs.Jeffrey Ryan Vaughn is as Texan as it gets, and he is as big as Texas too!. He is a proud, born and raised Texan, from the Dallas area…Plano, TX. He is a self-taught musician that started picking and writing in the early 2000's. His influences are very vast, and you can catch him playing anything from originals…to Jason Isbell…to Chris Knight…to Miley Cyrus…to Snoop Dogg. “I like to play my own music, but I really like to give my spin on other people's music too.” He really is a one-man show, as he is typically seen playing solo…or doing song swaps with his friends. His 2014 debut album is called Lone Star State of Mind, and he put out an 3-Song EP “Rise Up From The Ashes” in 2017, that can be listened to on any platform of your choice. His vocals are as gritty as the West Texas Desert and his writings are as smooth as Texas Whiskey.
