In “Trade, Taste, and the Evolving Tale of Texas Whiskey,” Gravy reporter Evan Stern visits the Lone Star State to get a taste of a growing movement: Texas whiskey. Given the importance of saloons in cowboy culture and western mythology, one might think Texas whiskey has a long and storied history. But though Texans have always had a fondness for the demon drink, as a legal industry, Texas whiskey is barely even twenty years old. Despite this youth, however, its growth has been explosive. While as recently as 2010, the state claimed a mere two whiskey distilleries, that number now hovers around sixty and is growing. Yet as makers like Still Austin, Balcones, and Garrison Brothers have garnered awards and drawn national attention, its identity is still being discovered and remains challenging to define. In an increasingly saturated market, one also can't help but wonder: Is Texas whiskey on the cusp of something big, or will it bust? Through visits to two “grain to glass” distilleries, Stern learns of the industry's origins from Dan Garrison. The first licensed whiskey maker in modern Texas, Garrison tells of the challenges he faced aging bourbon in the torrid Hill Country and how his process has matured since his days as an early pioneer. Gravy also hears about the challenges regional distillers have faced in distinguishing their brands in a saturated market from sommelier Daniel Whittington, while Kentucky-based spirits author Fred Minnick argues that Texans' openness to experimentation has helped shift the flavor narrative of American whiskey. Illustrating this is John Evans who, in a move that could be considered unorthodox, has chosen to use oats in a mash bill he developed himself. A fifth-generation farmer, he opened Wilson Valley Mercantile on his family's historic property after thinking: “Why not make corn worth more by selling it as whiskey?” Featuring spirits distilled from grains raised entirely onsite, he shares his journey as an independent upstart. In these conversations, Gravy asks questions about process and flavor, while exploring how Texas's emergence reflects the American craft movement and pondering what its future could mean for the drinking world as a whole. John Evans was one of Howard Browne's many pseudonyms Even during his lifetime, Howard Browne (1908-1999) was not well known outside of his given fields. His novels, including his best detective fiction, were written under pseudonyms, and his work as editor and Hollywood writer, through credited, remained mostly unknown, except by those in the business. During his long lifetime Browne published hundreds of stories in science fiction and detective magazines, along with several novels. He wrote dozens of television shows including Mission Impossible, Run for Your Life, Maverick and Cheyenne, and three of his film scripts were produced: Portrait of a Mobster with Vic Morrow; The St. Valentine's Day Massacre with Jason Robards and George Segal; and Capone, starring Ben Gazzara. He also wrote radio scripts in the late 1940s. His day job, before he went to Hollywood, was as an associate editor under Ray Palmer and then editor for Ziff-Davis pulp magazines, which included Amazing Stories, Fantastic Adventures and other lesser known fiction magazines. Richard A. Lupoff interviewed Howard Browne at Browne's home in Southern California some time in the mid 1980s (the cassettes aren't labeled). This was Browne's only radio interview, and only the second extant interview on record (the other appeared in Locus Magazine). After he retired, Howard Browne taught a couple of college classes and worked on a big Chicago novel that never saw publication. Most of his work is out of print today, though his four noir novels, in the style of Raymond Chandler and featuring a detective named Paul Pine, are available in a small press edition published this past spring by Haffner Press, with an introduction by Richard A. Lupoff. If you go to Imdb, you'll find a long list of his television shows, many of which can be found streaming. Curiously, his novel Thin Air formed the basis for his first television credit, on the show Climax in 1955, and his last, for an episode of Simon and Simon in 1982. Thin Air was also the basis for an episode on yet a third program, The Rockford Files. Two minor points: Browne says he never wrote for Hawaiian Eye, yet IMDb claims he wrote an episode, and he says he retired in 1973 but his credits extend to 1975. A true leader in the profession, Dr. Evans has worked in private practice in Michigan for over 30 yrs, recently shifted into medical consulting work in the areas of critical limb ischemia. He has served in many interdisciplinary organizations including American Heart Association, The Peripheral Vascular Disease Council as well as the American College of Cardiology/American Heart Association helping write the guidelines for peripheral arterial disease. His career began as a pharmacist when he was introduced to the podiatry profession and decided to make a career change. Dr. Evans earned his Bachelor of Science in Pharmacy and went on to complete his Doctorate of Podiatric Medicine at Temple University. He has been a strong advocate for the American Podiatric Medical Association including his state society Michigan Podiatric Medical Association where he served in leadership roles such as the Executive Committee, Secretary- Board of Directors. He has been involved in legislative committee work including Insurance Committee Chair, Medicare Carrier Advisory Committee and Hospital privileging at a State and National level. He has served on several committees for the American College of Foot and Ankle Surgeons as well as a peer reviewer for the Journal of Foot and Ankle Surgery. He is faculty for the Symposium on Advanced Wound Care, New Cardiovascular Horizons, and Amputation Prevention Symposium. He does committee work for American Limb preservation society, The CLI Global Society, and trained residents in podiatric medicine and surgery for over 30 years. It is no question that he earned the “APMA Award of Excellence- For outstanding national accomplishments in scientific, professional and civic endeavors.” And yet, he remains humble about his accomplishments and a true gentleman at his core. This episode is a little different in two ways. First, I didn't record it in my studio. I recorded it at the SMTA Pan Pacific strategic Electronics symposium, affectionately known as PanPac, in beautiful Maui Hawaii.Each year, I record a Reliability Matters podcast at PanPac. Normally, the format of the show is I ask questions, and my guests provide answers. On this episode however, I decided to let my guest do all of the talking. The theme of this episode is Electronics: Down Memory Lane and a Vision for the Future. My three guests on this episode will share their view of the history of electronics from three different perspectives. My guests are Dr. Ron Lasky from Dartmouth College, Dr John Evans, and Dr. Tom Duval, both from Auburn University. They'll share their perspectives on the history of the electronics industry in presentation format.

This week on The Whiskey Trip, Big Chief hits The Texas Whiskey Trail and travels to Central Texas, visiting John Evans—Owner, Founder, and Distiller at Wilson Valley Mercantile, a true farm-to-glass distillery. Established in 1867, the Evans Ranch embraces a “seed-to-sip” philosophy, growing all its grains on-site. In 2022, John decided to transform his corn harvest into spirits, creating a new chapter for the family farm. The episode kicks off with their Texas Three Way Whiskey, crafted with a mash bill of 51% corn, 34% wheat, and 15% oats. This whiskey delivers a honey-butter sweetness that coats the palate, finishing with a touch of barrel spice. Next, they sample the Texas Notch Bourbon, which shares the same mash bill but uses a different yeast strain, reducing the sweetness while adding spice for a longer finish. In the second half, John introduces their Texas Bloody Butcher Corn Bourbon, featuring a rich, dusty nose and notes of popcorn ball and Cairo corn syrup that linger on the palate—a true nod to heritage corn whiskey. To wrap things up, they taste the Wilson Valley Rye, made with 51% rye, 34% corn, and 15% oats. This “bourbon drinker's rye” offers unique flavors of black licorice and root beer, making it the perfect whiskey for breakfast.
