    In this episode, you'll meet Luigi Marulo, one of the men behind the most delicious, premium pasta brands I've ever tried (and I've tried them all)! I had the pleasure of meeting Luigi at the Fancy Food show in New York. After recording this podcast episode with him, Luigi invited me to visit his pasta factory in Naples, Italy and it turned out to be one of the most profound experiences this crazy job has led me to. Before the podcast, I decided to try Marulo pasta for myself. I was initially a bit skeptical of its premium price, however, I was quickly won over by the taste and texture. Luigi attributes the excellence of their pasta to their use of ancient superior durum wheat, 100% Italian ingredients, and meticulous artisanal drying processes. And all of that is true. I saw it with my own eyes. The factory was pristine and organized and the ingredients and the process were beautiful. But what truly sets Pastifico Marulo apart is the love and passion that go into every step of the process. Every detail of the process and every ingredient they use has been carefully considered and was beautifully explained on our tour. There is a respect for the food, the land, and the meal, that I don't know if most would appreciate without hearing it straight from Luigi. After the tour, Luigi treated my daughter and I to a delightful lunch at his family's beach club where we sampled incredible pasta dishes. Luigi generously offered to drive us back to Naples where we were staying, with 8 boxes of pasta in tow. That pasta was carried by hand on 6 trains and one plane from Naples to Cinque Terre and then to Milan before making its way to my home. I learned a lot that day, but I felt even more. Many people say you have to “try it” to really get it. That has never felt more true to me. Yes, This is a blog about a founder. And also, a thank you for the reminders about what matters in our industry and more importantly, our lives.

    “I knew I wanted to meet farmers as often as I could. I wanted to learn from them, and I wanted to buy cocoa beans directly from them without a broker, without a distributor. I've done that in every bean buy I've ever made in the last 16 years.” Kristi is honored to have Shawn Askinosie as a guest on this week's episode of The Irresistible Factor. When he decided he wanted to start another company, he knew that he wanted the business model to be fully aligned with that goal. This led him to start Stockeld Dreamery, a brand of vegan cheese that currently features a plant-based cream cheese. Interestingly, even though they only have distribution in 2 bagel shops in NYC, Sorosh managed to raise quite a bit of capital before the economy caused the capital raising belt to tighten. Being in the very early stages of the business, Sorosh tells us about the challenges of starting a company and speaks incredibly frankly about their biggest mistake so far – raising too much early capital growing the company prematurely. At the moment, Stockeld Dreamery is a relatively big team with a very small distribution footprint. Sorosh talks about his plans to navigate this imbalance. Kenshiro talks about some of their awesome collaborations with iron chef Morimoto and chef David Chang of Momofuku, and why collabs like this can be a win-win for everyone involved.     “Don't ever start a food business that you're not insanely passionate about. Because [nothing is] going to justify the hours and the difficulty that you're going to go through starting a food business and building a food business if you're not super passionate about it.” Today's guest is incredibly passionate about health, sustainability, and delicious lobster! Ben Conniff is the Co-Founder and Chief Innovation Officer at Luke's Lobster, an incredible chain of lobster shacks and a grocery line dedicated to producing traceable, sustainable seafood. Twelve and a half years ago, Ben met his business partner, Luke, on Craigslist while looking for a restaurant job. Luke was working in finance, but had previously been a lobsterman and was passionate about starting a Maine-Style lobster shack in New York. Ben was immediately all in and they opened their first restaurant only 30 days later. Their goal for the business was simple: make amazing food, treat people well, and enjoy themselves. They did just that and more.. Ben believes it is the real story of Luke and his family's background in the lobster industry that created the high levels of trust and transparency among their consumers, and of course the delicious lobster, that led to their customers wanting more and more. Kristi and Ben dive into their rapid restaurant expansion and their decision to start a grocery line. We also talk about the importance of educating the consumer and why sustainability is critically important for any new business. “It is a situation where if you're not part of the solution, you are part of the problem, particularly if you're in the food industry.”

And she was right, mush now has distribution in 11,000 doors with iconic retailers like Whole Foods and Costco. Ashley and Kristi discuss how the business has grown and changed, the challenges of scaling the company, and her approach to investments and boot-strapping. Margaret and her husband own an advertising agency in NYC which inspired her to create her own brand. Margaret saw a true need in the market for a healthier cereal option. There were 3 things (wishes) she wanted to change about cereal – high protein, low in sugar, and gluten and grain free. In today's episode of The Irresistible Factor, Margaret shares how she believes having a delicious product is the most important part of a successful brand. Margaret spent 2 years developing her product to make sure it was absolutely perfect before launching by getting lots of people involved in taste testing her product – in fact, during Covid, she actually did drive through taste tests from her driveway! “Good branding can only get you so far, but the product and what's inside is really the key.” Building a brand is never easy, but if you've identified a problem worth solving and you stick to your mission, it pays off.
