After transitioning to the private sector, Mr. Higgins spent 15 years in senior leadership positions with National Football League teams. He made his mark with two NFL franchises, overseeing the revenue functions of the New York Jets as Executive Vice President of Business Operations, and after leaving the Jets, serving as Vice Chairman of the Miami Dolphins from 2012 – 2021. Higgins co-founded New York City-based RSE Ventures in 2012, amassing a multi-billion-dollar investment portfolio of leading brands across sports and entertainment, media and marketing, consumer and technology industries – including several of Fast Company's Most Innovative Companies. RSE's backings include Resy, an Open Table competitor that American Express acquired in 2019; the world's premier drone racing circuit, the Drone Racing League; the International Champions Cup, the largest privately owned soccer tournament featuring Europe's top clubs; and Derris, a brand strategy and communications firm that has helped grow many leading brands such as Warby Parker and Glossier. Higgins is also co-owner of VaynerMedia, the largest social-media first agency in the world founded by Gary Vaynerchuk. In 2016, he broadened RSE's investment focus to rapidly expanding fine dining and fast casual concepts, including NYC's iconic Magnolia Bakery, David Chang's Momofuku and Fuku, Milk Bar, &pizza and Bluestone Lane. The team behind Brine, a fast casual with a location in New York City and another in Fair Lawn, New Jersey, invited 100 of the restaurant's regulars (plus some media folks) to taste test new menu items and evaluate them. Chef-partner Joe LoNigro was behind the counter as guests helped themselves to grilled chicken with a “umami” sauce, roasted Brussels sprouts, a spicy chicken sandwich, elote corn ribs, tostones and Brine's new take on its house-made Pop-Tart-inspired dessert. It will be interesting to see what makes it onto the menu, but we liked those corn ribs, grilled chicken and Brussels sprouts. Bret returned to Momofuku, celeb chef David Chang's NYC flagship, with some out-of-town friends who wanted to go for dinner. Although it wouldn't have been Bret's first choice, everything was better than he expected. Of particular note was a new tomahawk pork katsu with a Japanese-style curry sauce and the kimchi, which got the seal of approval from both Bret and his Korean-American dining companion. We also talked about how and why Pete Wells is ending his 12-year-run as restaurant critic of The New York Times, citing how dining out four or five times a week can become a health hazard—even if it sounds like an enviable job. Our guest this week is Jacob Bickelhaupt, chef-owner of Konro in West Palm Beach, Florida. The self-taught chef trained under culinary icon Charlie Trotter, and at Konro, he offers a 10-14 course tasting menu serving just 10 guests nightly, all of whom sit at the chef's counter. Although the artful cuisine is not Japanese, it is an intimate omakase-style experience, complete with wine pairings by sommelier Nadia Bickelhaupt, Jacob's wife. Jacob is six years sober and has created a selection of non-alcoholic pairings that closely mimic the wines, each house-made through a multi-step process. The couple orchestrates the evening at Konro to be as much an extension of their home as a unique and memorable gastronomic experience.

After moving from Korea to the American South when he was 13, James began to navigate two cultural identities and continued to turn to food as a medium.And unless you've been living under a rock, you know chili crisp has been having a ~moment~ in the United States. Finally, there was drama in the food startup space as Momofuku gets litigious with competitors.
Marguerite Zabar Mariscal is rarely satisfied. It's not in her DNA, she says, nor that of the companies she helms: Momofuku, the admired restaurant group founded by David Chang, and Momofuku Goods, a brand of restaurant-quality pantry items inspired by modern Asian cuisine. Marguerite, who took the reins of Momofuku in 2019 and co-founded its consumer brand the same year, describes the companies' opposition to complacency as “a conscientious objection” that has fueled constant improvement. That mindset helped Momofuku Goods generate $50 million in revenue in 2023, a year in which the brand was available in less than 4,000 retail locations. Despite the remarkable growth of Momofuku Goods, Marguerite is loath to rest on her laurels. She is, however, willing to be patient and cautious – perhaps to a fault – when it comes to the brand's next stage of development. We spoke with Marguerite about her leadership and management of both Momofuku and Momofuku Goods in an interview recorded at Expo West 2024. Eunjo Park doesn't necessarily need kimbap, but kimbap most certainly needs her—or fans of kimbap need her, at least. When Eunjo, a veteran of Per Se and the three-Michelin-starred Gaon in Seoul, was opening the first Momofuku restaurant to explicitly focus on Korean food, Momofuku Kāwi, located on the far west side of New York in Hudson Yards, one of the very first dishes she and her boss, David Chang, wanted to focus on was kimbap.
