Through Kitchen Chat, however, I have been able to get to know her through the stories and anecdotes shared by our guests. "Riding in Cars with Julia Child" will be the first in this special series. It features three wonderful chefs: Jim Dodge, Dorie Greenspan and Sanford D'Amato, each with a unique experience of riding in a car with Julia.
Chef Jim Dodge has deep culinary and hospitality roots. Chef Dodge's family has been in the hospitality business in the White Mountains of New Hampshire since 1794. He worked in every department of his family's New Hampshire resorts. Although he didn't stay in the family business, Chef Dodge continues the art of hospitality with his impressive pastry chef career. I first met Chef Dodge at the very first Julia Child Foundation Awards honoring Chef Jacques Pepin. What a delight to at last have a Kitchen Chat with him during the IACP conference in Santa Fe, New Mexico. We sat at a table outside. You will even hear the birds singing in the background. Chef Jim Dodge has a true passion for baking and for teaching others the art of baking. He has won several James Beard awards and is the Director of Specialty Culinary Programs at Bon Appetit Management Company. He has baked with and baked for the top culinary talent from around the world. You will enjoy hearing his special stories about Julia Child.
Jim Dodge is our guest today! For seven generations, Jim's family has managed a number of hotels and resorts in rural New Hampshire, where Jim received early training in hospitality and grew up cooking with local ingredients from nearby farms and food produced on his family's land. Once in the kitchen, Jim knew he wanted to specialize in pastry. He trained with Swiss pastry chef Fritz Albicker, melding Swiss influence with his New England heritage to create a unique method of preparation and styling that set him apart as a chef. In his 10 years at the Stanford Court hotel in San Francisco, Jim became a nationally recognized pastry chef and embarked on a rich, wide-ranging culinary career. His experience and contributions are a testament to his passion for the craft of cooking and educating others. Jim is currently the director of specialty culinary programs for Bon Appétit Management Company, the jury chair for the first-ever Julia Child Award, and serves on the advisory council of the Julia Child Foundation. Few chefs can lay claim to being true pioneers in their field but legendary pastry chef Jim Dodge is certainly one of them. Once the pastry chef of the storied Stanford Court Hotel in San Francisco, Jim made desserts his specialty long before it was common for most restaurants to have a dedicated pastry chef. In his role, he helped elevate classic American desserts to new heights, just as his contemporaries on the hot line were doing the same for savory food. While in Boston to speak together at Boston University, Jim and Andrew sat down to go through Jim's career, his early remembrances of such figures as Julia Child and James Beard, and his distinct views on his craft.
