In this heady, fragrant chat with Dr. Kevin Peterson, author of Cocktail Theory: A Sensory Approach to Transcendent Drinks, some of the topics we discuss include: Why his time testing combustion engines in a laboratory made Kevin the perfect person to analyze the classic cocktail families for their ideal dilution, temperature, and ingredient ratios How bartenders can use the notion of “olfactory motifs” rooted in memory, nature, and music to design cocktails that thrill at a more three dimensional level--not just on the taste buds. What tips and tricks Kevin has drawn from the perfumery world to punch up the impact and blast radius of his drinks, including atomized spritzes, scent strips, and even service temperature manipulation. The sense in which bartenders are like magicians, constantly manipulating attention and generating novelty, and how you can apply these principles to both cocktail construction and service. And why, at the end of the day, cocktail service and consumption involves a whole bunch of complex systems that are constantly colliding, leaking information, and changing the way we play the game. Along the way, we provide tips and tricks to make your friends and bar guests say “I can't UNsmell that,” probe the koji-fermented link between pineapple, aged cheese, and sharpies, uncover why Kevin doesn't want to be known as “the cricket guy.” And much, much more. Featured Cocktail: The Everlasting Daiquiri To make it, you'll need: 2 oz rum (Kevin recommends Gosling's Black Seal) ½ oz Fresh Lime juice ½ oz turbinado simple syrup Prior to construction, you're gonna want to chill down your rum AND a champagne flute in the freezer. Both need to be ice cold. Then, add your liquid ingredients to a cocktail shaker with 3 large ice cubes, shake for (according to Kevin) 12 seconds, then strain into your Champage flute over a smaller ice cube. So if you're using large, 2” cubes in the shaker, plop a smaller one from a standard ice tray or ice maker into the flute before you strain.

Episode 70 features Gosling Black Seal Rum, a blended rum from Bermuda that's a key ingredient in the Dark 'n Stormy cocktail. Bottled in 750ml at 40% ABV, or 80 proof, it retails for $19. Enjoy this episode with some Goslings neat, or in a Dark 'n Stormy! Goslings' official website: https://www.goslingsrum.com/ (https://www.goslingsrum.com/) Brief Historical Timeline: 1806 - William Gosling charters a ship to carry his eldest son James Gosling to Virginia from London with £10,000 worth of wine and spirits to open a merchant business, becalmed at sea, the ship only gets him to Bermuda before his charter runs out 1820s - Ambrose Gosling, younger brother of James, joins him in Bermuda 1857 - One of the blends Ambrose has been experimenting with becomes known as "Old Rum", later to be renamed Black Seal. Pre-WWI, the Goslings begin bottling their Old Rum in reused champagne bottles, sealed with black wax, locals begin to order the "black seal" 1940s - The logo with a black seal juggling a barrel of rum on it's nose is introduced 1991 - The Dark 'n Stormy cocktail is trademarked by Goslings Key Cocktails: Goslings is a required part of the trademarked Dark ' n Stormy. Here's how to make it: 4 - 5 oz. Ginger Beer (Goslings would prefer you use their brand) 1.5 oz. Goslings Black Seal Rum Lime Wedge Fill a glass with ice, pour in the ginger beer, float the black seal on top, and garnish with the lime. Found in a Deserted House). Considering the current political climate, have you ever experienced a professional backlash for not being political correct enough? Where in Lovecraft's letters does he mention “the Black Seal of Iraan”? Did Lovecraft struggle with depression or anxiety? Was HPL insane? If so, did it affect his writing? In first part of The Lurker at the Threshold, Ambrose Dewart visits the round tower and notes that there is one entrance, which has been bricked shut. He returns later and walks right in! Huh? Did I miss something? Reading “Winged Death” reminded me of a short nonfiction book, The Diving Bell and the Butterfly, composed one letter at a time by a person with shut-in syndrome who was completely paralyzed except for one eye that he could blink. His nurse realized he could blink, and used her recitation of the alphabet combined with his blinking on the letter of his choosing to compose the book.  Describe a Cthulhu Prayer Breakfast.
