A lot of science goes into crafting the perfect cocktail. Balancing sweet and bitter notes, providing the right amount of aeration and dilution, getting it to just the right temperature and keeping it that way. And even if you have no interest in cocktails as such, the general principles extend to other activities in art and in life. I talk to scientist-turned-mixologist Kevin Peterson about how to think about the simple magic of a perfect drink.Blog post with transcript: https://www.preposterousuniverse.com/podcast/2025/03/03/307-kevin-peterson-on-the-theory-of-cocktails/Support Mindscape on Patreon.Kevin Peterson received a Ph.D. in Mechanical Engineering from the University of Michigan. Dr. Kevin Peterson (Instagram) is one of the driving forces behind the perfumery Sfumato Fragrances (website, Instagram) and Castalia Cocktails (website, Instagram) in Detroit.Kevin landed on my radar because of his book, Cocktail Theory - A Sensory Approach to Transcendent Drinks. In addition to calling on his background in perfumery as a study of flavor, one of the things in particular that Kevin investigates is how to extend the lifetime of a drink, which involves working against the forces that can throw a drink out of its ideal state: temperature, dilution, and aeration.Do you know someone who might like this? Guest: Kevin Peterson LMFT The pandemic taught us that we can access resources for mental health through virtual through phones, there's been a lot more resources available and it's become a lot bigger deal. When people were trapped at home people became addicted to all sorts of stuff including drugs or alcohol to make themselves feel better. Since the pandemic a lot of people are still feeling on the edge or quick to react, the only way for that to change is for people to start taking care of themselves. You cannot expect other people to change. We need to learn to set boundaries. It is ok to ask for help if you need it. Therapy doesn't have to be for the rest of your life and it shouldn't be. chronichope.us

The Negroni is a drink that's not for everyone. What we've found is that people either really love it, or they're just not into it. In episode six of Cocktail Sense, Dr. Kevin Peterson gets into the Negroni. Why it's a forgiving drink. How it can be used to help serve people better. Speaking of serving people better, we also talk about speaking up to get the cocktail you really enjoy, instead of suffering through one you don't. There's also a local to Detroit gin - Drexel Spirits - that you should check out. Plus, Kevin introduces Jer to Malort. Was it for science, or nefarious reasons? This week we dive into the Margarita. Although popular, it's often not elevated. Sour mixes often are not fresh, stealing flavor. And then, there's bubble part - often forgotten, but very important. Dr. Kevin Peterson gets into a better way to make (and think) about your next Margarita. From the glass it's served in, to the technique - and even maybe adding nitro for a smoother experience. In this heady, fragrant chat with Dr. Kevin Peterson, author of Cocktail Theory: A Sensory Approach to Transcendent Drinks, some of the topics we discuss include: Why his time testing combustion engines in a laboratory made Kevin the perfect person to analyze the classic cocktail families for their ideal dilution, temperature, and ingredient ratios How bartenders can use the notion of “olfactory motifs” rooted in memory, nature, and music to design cocktails that thrill at a more three dimensional level--not just on the taste buds. What tips and tricks Kevin has drawn from the perfumery world to punch up the impact and blast radius of his drinks, including atomized spritzes, scent strips, and even service temperature manipulation. The sense in which bartenders are like magicians, constantly manipulating attention and generating novelty, and how you can apply these principles to both cocktail construction and service. And why, at the end of the day, cocktail service and consumption involves a whole bunch of complex systems that are constantly colliding, leaking information, and changing the way we play the game. Along the way, we provide tips and tricks to make your friends and bar guests say “I can't UNsmell that,” probe the koji-fermented link between pineapple, aged cheese, and sharpies, uncover why Kevin doesn't want to be known as “the cricket guy.” And much, much more. Featured Cocktail: The Everlasting Daiquiri To make it, you'll need: 2 oz rum (Kevin recommends Gosling's Black Seal) ½ oz Fresh Lime juice ½ oz turbinado simple syrup Prior to construction, you're gonna want to chill down your rum AND a champagne flute in the freezer. Both need to be ice cold. Then, add your liquid ingredients to a cocktail shaker with 3 large ice cubes, shake for (according to Kevin) 12 seconds, then strain into your Champage flute over a smaller ice cube. So if you're using large, 2” cubes in the shaker, plop a smaller one from a standard ice tray or ice maker into the flute before you strain.
There's this stereotype that Gin... and the Gin and Tonic... ends up tasting like Christmas Trees. But there's so much more to his spirit, and here we make the case that you should think about in many cases replacing Vodka with Gin for a better tasting cocktail. We get into the why it tastes the way it does, why a lot of people meet Gin far too early, and introduce you to a similar spirit, Aquavit, that you shouldn't ignore. There's so much gin, and custom tonic to explore - that you can really spread your wings with this combination. Simple, but the possibilites for tasty complexity. Dr. Kevin Peterson is an author and owner of the Castalia at Sfumato Cocktail Bar in Detroit, Michigan. He applies his engineering experties to making some of the best tasting cocktails in the nation. Check out his bar: https://www.castaliacocktails.com/
We've all seen the daiquiri in a container as tall as a person. But there's so much more to this rum-focused drink that's been adopted by partygoers and seekers of fun, and we dig into it. Dr. Kevin Peterson, cocktail afficianado, flavor and scent expert, breaks it all down. Rum is a loosely legislated spirit, and it's a fact to love as it allows so much creative flexibility and for more flavor profiles. Then, we wander into a lynchpin of Kevin's work around cocktails - the Mr. Potato Head theory of making excellent drinks. Drinks that are balanced, melded together in something beautiful - how any good aroma can be paired with a balanced drink and it will work together.

Chris Tremlett – England Cricket Legend – Life & Mindset of International Sport & Business For a person involved in sport professionally, representing your country, is for most, the pinnacle of their career. Chris Tremlett is from a long line of cricketers. Chris was fully aware of the ratio of success from “promising youth player” to full test international and worked hard to beat those odds. Having represented his home county of Hampshire and then neighbours Surrey, Chris was selected for England and his fast bowling was used to great effect, taking 53 wickets for an average of 27 runs. Chris was a member of the Andy Flower side that claimed number 1 in the world, as well as being used to devastating effect in the 2010 Boxing Day Ashes test at the MCG, bowling out Australia for just 98. Chris talks to us about the mindset required to rise to the top in sport, and how these principals can be transferable into life and business. He describes playing with the outstanding talent that is Kevin Pietersen and sheds some light on his training habits that might not be obvious to the outsider looking in. He also discusses Ricky Ponting and interestingly, the two very different sides to his persona, dictated by whether you were on his side that day, or not. We are also lucky to have the lid slightly lifted on what life was like to share a dressing room and a team sheet with Shane Warne and his “rock and roll” lifestyle. Simon and Ben have an interesting discussion about the pressures of life, family and business for people who find themselves in their late 30's and beyond. We spoke to Chris just a day or so before he flew out to meet up with Kevin Peterson, Jonathan Trott, Monty Panesar and the rest of his England Legend teammates for their win in the Road Safety World Series in India Enjoy the show!
