Den fann spårmängder av nitrosaminer som NDMA, NPYR och NMOR i whisky. Nitrosaminer är relativt instabila under destillationsprocessen, vilket innebär att deras koncentrationer minskar betydligt under produktionen. Tack vare förändringar i produktionsmetoder och destillationsprocessens effektivitet är förekomsten av nitrosaminer i whisky idag mycket låg. Analys av alkohol och estrar i whisky Whisky är en av de mest komplexa spritdryckerna, och för att förstå dess smakprofil behövs avancerade analysmetoder. En viktig process är Maillardreaktionen. Det är den som skapar de rika karamelliga, rostade och nötiga tonerna i malt. När malten torkas reagerar socker och aminosyror med varandra och bildar hundratals nya smakämnen. Temperaturen spelar en stor roll och vid lägre värme får vi ljus malt med mild smak, medan högre temperaturer ger mörkare malt med djupa smaktoner av kaffe, choklad och kola. Denna reaktion sker också när whisky lagras på fat och bidrar till dess komplexitet över tid. De kemiska reaktionerna fortstätter faktiskt efter den första reaktionen påbörjades, speciellt i fuktiga och varma miljöer. Midleton, a small farming town in East Cork, a half hour’s drive from Cork City is the unlikely center of the world for Irish whiskey. Unlikely, maybe in terms of its size (population 12000) humility or the fact that it doesn’t have any airs of superiority, but not unlikely when you consider its location. Built on the Dungourney river a great fresh water source, and within 100 miles of all the barley it needs, it has the perfect location to distill the world’s most famous Irish whiskeys. In fact 90% of the Irish whiskeys on the market are either completely distilled in this small town or use its grain whiskey in their blends. Brands you’ll be familiar with like Jameson, Powers, Paddy, Redbreast, Green Spot, Yellow Spot, Tullamore Dew are all born in Midleton. In this episode I share the history of the Midleton distillery and its whiskeys.

Irish whiskey will take another step in 2015 with the first exports of Yellow Spot to the US market, still the strongest market in the world for Irish whiskey sales. While Yellow Spot is produced by Irish Distillers at Midleton Distillery near Cork, the brand is owned by Dublin-based whisky and wine merchant Mitchell & Son. Robert Mitchell is the latest family member to head up the 210-year-old business, and joins us to discuss this month's US launch of Yellow Spot, along with the global potential for Irish whiskey sales.
