Pollak Vineyards is a small family-owned winery founded in 2003 when Margo and David Pollak bought a farm west of Charlottesville, Virginia. David's experience in wine was pretty extensive – he worked in the 1970s in Sonoma's Russian River Valley and was a founding partner and investor in one of Napa Valley's first Carneros wineries, Bouchaine Vineyards. Years later, when he thought about retirement from the corporate world, he saw huge potential in Virginia and he and Margo took the chance to help shape this emerging region. Photo: Pollak Vineyards. Personne ne l'avait vraiment vu venir. Annoncée comme une année de transition, la saison des Patriots se termine finalement sur un bilan de 14–3, bien au-delà de toutes les attentes. Après un début hésitant, l'équipe a progressivement trouvé son identité, appris à gagner les matchs qu'elle devait gagner, et surtout à se rendre solide semaine après semaine. Drake Maye s'est imposé comme le visage de ce projet, porté par un collectif qui a su grandir vite. Tout n'a pas été parfait : les débuts de match, la red zone, quelques trous d'air, mais la saison régulière est déjà une réussite. Désormais, place aux playoffs et au choc face aux Chargers : un autre football commence, où chaque détail peut tout changer.

Tonight, we are tasting a Champagne and celebrating the past year. We are drinking a LeMesnil Blanc De Blancs Grand Cru Brut Champagne. It is 100% chardonnay and comes from the Grand Cru vineyards of Le Mesnil-sur-Oger. It is a dry wine with flavors of citrus (lemon & orange), white flowers, peach, almond blossom, brioche, pie crust, biscuit, chalky minerality, and a creamy finish. It is aged on the lees for years and the grapes are grown in chalky soils. La saison des Olivades bat son plein, on part découvrir l'un des plus beaux domaines oléicoles au cœur des Alpilles… Le château d'Estoublon, reconnu pour ses vignobles, ses vins d'appellation Baux de Provence et ses olives : Picholine, Grossane (douce et beurrée), Salonenque, Beruguette (plus ardente et piquante) et Bouteillan. Cinq variétés d'olives récoltées à la main pendant 2 mois sur 120 hectares, ce n'est pas rien. Il faut en moyenne 7 kg pour 1 litre d'huile. Pourquoi choisir Estoublon ? C'est un conservatoire des olives, leur savoir-faire est reconnu par le Comité Colbert depuis 2021 pour l'excellence de ses huiles d'olive, et pour la création d'un grand cru d'huile d'olive créé depuis 20 ans comme… un parfum ! Même son écrin est un flacon couture. Son égérie, c'est Carla Bruni. Vous êtes chez elle. Mais attention, ça va au-delà du marketing, on est véritablement dans la création d'une œuvre d'art, un travail d'orfèvre. Et ça, vous le découvrez lors des visites privées et des dégustations. Une huile d'olive créée comme un parfum, ça veut dire quoi concrètement ? Avec un assemblage de notes, comme un grand vin. L'assemblage est orchestré par l'œnologue Victor Joyeux, qui réunit les meilleurs lots avec la même exigence que pour un Grand Cru, une sélection parcellaire. Et pour déguster cette huile d'olive, l'odorat a aussi une place primordiale. Goutez du sucre et de la cannelle. Bouchez-vous le nez, vous ne sentirez pas la cannelle. Cette dégustation, elle se fait par rétroolfaction. Indispensable pour embrasser toutes les saveurs et les odeurs. Je vous donne la partition aromatique de ce grand cru. En note de tête, roquette fraiche, la note de cœur est pour l'artichaut cru, et enfin la note de fond est décernée à l'amande fraiche. Au départ, il s'agit d'un fruit sauvage qui se présentait différemment d'aujourd'hui : peu sucrées, dures et granuleuses. Ce sont les Romains qui ont démarré la culture des poires et qui ont développé certaines variétés actuelles. C'est à la Renaissance que la poire devient un fruit très prisé et noble. Dans l'histoire, on a développé plus de 1.000 variétés en France. Les plus célèbres : Williams (la plus cultivée, utilisée aussi pour les eaux-de-vie comme la Poire Williams), Conférence, Comice, Guyot, Louise Bonne, Passe-Crassane, Beurré Hardy. Quelques célèbres recettes : la poire Belle-Hélène (1864 par Escoffier), la poire pochée (Bourgogne). La poire se marie à merveille avec les fromages bleus. Des poires farcies au Roquefort : couper les poires fermes en deux et creuser un petit puits / mélanger du Roquefort, un peu de crème, et du miel / farcir les poires et les cuire au four 20 min à 180° (gratiner) en parsemant d'éclats de noix. I was asked to taste a wine and give an opinion of its quality. It was very good. A St. Emilion from a Chateau I did not know. The wine had never been in the US, and the wholesale company was new to the idea of even carrying a St. Emilion. My curiosity required me to ask the wholesaler, "Maybe the Chateau owner will come on the show?"  "Let me check." "He would love it" So then I though I'd best look up the guest (this was one hour before his arrival). OMG..this Zaya Younan is a formidable businessman with over 1200 patents, 5 hotels, three golf courses, a fine cigar company, and now 2 Chateaux in France. Le casting est sublime et le spectacle devrait l'être tout autant. Un Dauphiné qui a d'ailleurs débuté sur les chapeaux de roue avec un sprint royal remporté non pas par les habituelles grosses cuisses du peloton mais par Pogi en personne qui s'est imposé devant Vingegaard. Florence Cathiard, fille de profs, qui a connu son mari Daniel lorsque tous deux étaient en équipe de France de Ski dans les années 60, a un parcours fascinant : après savoir racheté avec son mari la chaîne de magasin Go Sport en 1983, qui sera revendue en 1990 au groupe Casino, elle lance son agence de communication qui sera acquise par le groupe américain Mc Cann.Ayant été initiés au Cabernet Sauvignon lorsqu'ils étaient athlètes de haut niveau, c'est tout naturellement sur les Bordeaux de la rive Gauche que les Cathiard jettent leur dévolu en rachetant à des négociants en décembre 1990 le domaine Smith Haut Lafitte, Grand Cru classé de Graves en appellation Pessac-Léognan. Tamber Bey's founder and vintner, Barry Waitte, first fell for wine as a college student in San Luis Obispo, Ca., where he worked in a bottle shop and came across a life-changing bottle of 1974 Beaulieu Vineyard Georges de Latour Private Reserve. As a young professional, Barry began collecting Grand Cru wines of Bordeaux. After a successful career in high tech that spanned two decades, he was ready for a change.
