If you didn't already employ them to make a take-out dish this week for your Thanksgiving table, chances are you'll probably meet some friends at some point at a restaurant during the holidays to celebrate. There are 15 million people working in the hospitality industry in the United States, and 63% of entry-level restaurant workers identify as female. But among those in restaurant leadership, that number is closer to 38%. The Women Culinary and Spirits Program of the Lee Initiative, based in Louisville, KY, has a goal to elevate more women into leadership positions within the industry, with the mindset that doing so increases equity and diversity. Mentees are experienced professionals in the early-to-mid stages of their food and beverage careers and are ready to take the next steps towards becoming industry leaders. Sous chef Taylor Jarvis of Nicewonder Farm & Vineyards in Bristol, VA is one such mentee, and this year, she was paired with James Beard winner and Top-Chef alum Chef Nina Compton, whose restaurants Compère Lapin and Bywater are in New Orleans, LA. It's been more than four months since the U.S. Supreme Court overturned Roe v. Wade, and Louisiana's most powerful anti-abortion organization has been shoring up support for the state's near-total abortion ban. Louisiana Right to Life helped write the ban, and, as public health reporter Rosemary Westwood found, the organization isn't done fighting. The folk-roots group Rising Appalachia has recently recorded and live streamed their music at New Orleans' Preservation Hall. And from songs about the Bywater streets to the murky bayou waters, their music is nothing short of an ode to life in New Orleans.  The band is composed of sisters, Leah and Chloe Smith, who hail from a family of southern musicians. We caught up with Leah – who goes professionally by Leah Song – to learn more about their musical performance at one of New Orleans' most esteemed venues. Jared, Oriana and Ned talk about the inevitable: the first season of The Lord of the Rings: The Rings of Power. Ever since By-the-Bywater began, the show's creation, filming and buildup to its release has loomed large in our news reports and there were inevitable questions about it the more information was surfacing. But there was always hope that it could in fact succeed and add to the notable if admittedly varied canon of Tolkien adaptations already created over time. Suffice to say that there was a lot of heavy promotion, a whole amount of attention and there are definitely plenty of people out there who have enjoyed the series to one degree or another. The three of us…are not among them. Frankly, not in the slightest, outside of a few particular points and factors, and we try and bring them up as we can. But we're not going to pussyfoot around the fact that we found this eight episode introductory season to otherwise be a near-unmitigated disaster and are still picking our way through the wreckage like the orcs after the ‘are you kidding us right now' Mount Doom relighting trick. What choices were made by the showrunners to create incidents and particular character arcs, whether from Tolkien's own creations or invented characters of their own, and why did so many of them fall so flat? What did the continuing use of non-standard English dialects mean for certain characters and how they're meant to be perceived or understood? Who were the good actors who actually did something of note with their often confusing or underwritten or just poorly written character motivations? What if anything was in line with Tolkien's general themes and approaches, and more importantly, what wasn't? And once again, what in the WORLD with that scheme about Mt. James Whitbrook's end-of-season episode recap at io9 had some good tart points, especially on the unnecessary approach making the entire season a prologue or pilot, in essence.Published before the end of the season, Kathryn VanArendonk's Vulture piece “The Fantasy Prequel Problem,” which also and understandably takes in House of the Dragon as well, also had some sharp observations.Undone is a really, really good series that Amazon has, indeed. Check it out.Repeating from the previous episode's show notes: Ned's Twitter threads on the time compression problem in the series with specific regard to Númenor.The actual destruction of the Two Trees in this clip is truly marvelous, an excellent brief summary…and as we say, it immediately falls apart after that.J. J. Abrams's famous/infamous TED Talk about the mystery box/puzzle box approach he favors, which the ROP showrunners clearly have taken to heart. (We are not fans.)A recent argument about how the Star Wars prequels became more embraced. (The point Oriana notes about having a vision is brought up as a factor.) See also Rian Johnson's 2020 tweet.The Bronwyn/Theo/orc duel in episode 2 and the Galadriel/Adar barn debate in episode 6 are very good scenes! But they were all too rare in comparison. If you want to delve more into the haphazard weirdness of 1980s/1990s D&D novels – and there are quite a lot to choose from – Rob Bricken's irregular ‘Dungeons & Dragons & Novels' series on io9 has been a treat; here's the most recent entry.Caroline Framke's Variety piece on the show is much more positive than ours but zeroes in on an inescapable fact: the lack of traction the show has had in terms of wider discussion/interest, especially in comparison to House of the Dragon.Star Wars: Andor! Texas+Water Editor-in-Chief Dr. Todd Votteler talks with Dr. John Sabo, a Professor in the Department of Coastal & River Science and Engineering in the School of Science and Engineering at Tulane University and Director of the ByWater Institute. In the academic realm, Sabo directs Tulane's ByWater Institute, a research institute dedicated to creating transdisciplinary and transformative research that advances the resilience of water resources in New Orleans, the Mississippi River Basin, and tropical river basins in the developing world where lessons from home are relevant. By training, Sabo is a river food web ecologist and has designed and implemented large-scale field experiments to understand the role of aquatic-terrestrial energy flow on terrestrial food web dynamics as well as the dynamic effects of groundwater on surface water food webs. His work in this realm is driven by a desire to understand how to better manage basin-scale flows in rivers ranging from the Colorado in Arizona's Grand Canyon, the Mekong River in Southeast Asia, and the Amazon River in South America.

It's New Orleans: Out to Lunch

If you spend any time working with colleagues on Zoom, or other video platforms, you know there is one main goal all these products are trying to achieve: Real-time collaboration. You're sitting at your desk, or kitchen table, and your colleagues are scattered around the country, or the world. But the conversation, the screen, and the whiteboard you're sharing is meant to create the sense that you're all in the same room.  When you actually are in the same room as another person, unless that person is a ventriloquist, when their lips move, words come out of their mouth at the exact same moment. When you're on a video call, the sound of someone's voice frequently reaches you either before or after you see their lips moving. We generally call this, “out of sync.” The technical term for it is, “latency.” Latency can be aggravating. But you put up with it, because in conversation, it's not that big of a deal.  But imagine instead of talking to other people, you're playing music with them. You're in your home studio playing a keyboard part. Another person is in their home studio playing a drum part. A third person somewhere else is playing a guitar part. And a fourth person in a 4th location has a vocal track. In this case, latency is not merely an aggravation, it's a monumental issue. Everybody being out of sync with each other makes it impossible to create music together. That's why musicians never collaborate online in real time. The best they can do is record their individual tracks and send them back and forward to each other, each person contributing their part one at a time. It takes days or weeks to complete a single song. If there was a way for musicians to meet online and play together, whoever invented the software that could make that happen would be a superstar in the world of music creation. Well, today that software has a name. It's called DAWn Audio. And the four superstars who created it are right here in New Orleans - including co-founder and CEO of DAWn Audio, Diego Pinzon. Most of us in New Orleans enjoy live music collaboration – but as consumers rather than creators. At live music events there is a very obvious dividing line between creators and consumers. More typically know as “the band” and “the audience.” The band is on stage, and the audience is on the floor, facing them. Other than yelling “Who let the dogs out?” at a Saints game, or singing Christmas carols in Jackson Square, it's hard to think of any place in New Orleans where the dividing line between music creation and music consumption is blurred. Have you been to The Music Box Village? It's in the Bywater. The Music Box Village is a collection of rustic-looking buildings described as “musical architecture.” When you interact with the buildings – either by walking through them, pulling levers, or taking some other action – the buildings make musical sounds. So, a bunch of people strolling through the village create music. The Music Box Village is also a music venue where artists perform. Many of them incorporate the musical buildings into their live performance, reinventing songs in ways that are unique and can be magical and transporting. The Music Box Village is the creation of an organization called New Orleans Airlift, whose wider mission is to promote music collaboration between local New Orleans' musicians and other musicians worldwide. The Co-Founder and Creative Director of New Orleans Airlift, and Music Box Village, is Delaney Martin. Recent research has demonstrated that birds, dolphins, whales, and even cicadas aren't just making sounds to attract mates or warn each other of danger – they also sing collections of notes that can only be described as pieces of music. There's obviously something primal in our desire to make music. If you're a dolphin or a cicada, you have your own particular challenges. But you're free to make music without having to concern yourself with any consideration of copyright, the internet, or online collaboration software. Music-creating and music-appreciating humans have Music Box Village, New Orleans Airlift and DAWn Audio to help both create and appreciate music. Although we're not deputized to speak on behalf of all music-creating-and-appreciating humans, all of us locally wish these companies every success in the future. Grace in the Bywater has taken the former church fellowship hall and large green space in their back lot and transformed them into “Grace in the Bywater.” The commercial kitchen will have affordable day rates for food entrepreneurs, and will also include indoor/outdoor seating. The outside space will also be available for event rental, art shows, markets, etc. By Utilizing the space for the good of the community, they can make the property a community hub without the commitment of someone attending a church service. Part of their dream is to build out enough missional business on property that any salary or utility would be covered by these ventures. The missional and financial picture work together for a sustainable approach to mission. Listen to Episode 18 of the podcast and access the show notes below. Future Church Insights: 1. Stephen talks about being the resource of an older church and trying to become good stewards of the property He says that his vision was to plant a church, and also a missional business at the same time.  Grace Community Church looks like a traditional church and Grace in the Bywater is the missional business. The business uses the Fellowship Hall and has made it into a neighborhood cafe, renovated it, and put in a commercial kitchen. 2. Stephen explains how being a church and a cafe work together to serve the community. They desire to have the church building become a neighborhood hub again in the community, as it was so many years ago. The hope is to also help businesses grow and prosper.  3. Stephen talks about the community partnership approach and how to make it work. Stephen says that many times, churches have great ideas about what the future could look like, but not the best execution, because they don't always have the diversity of people with the right kind of people to make it happen. Their church has told the community,  "It's not that we just want you to be a part of this. We can't do this without you."  I think there's a lot of potential for churches, with kitchens and certain spaces to think through community partnership models and it'll be a huge open door to relationships and engaging people. Goals and Desired Outcomes:  Create a thriving neighborhood hub at our space, for people to enjoy and connect. Build relationships with those completely uninterested in church in a no-pressure environment. Demonstrate the nature of the gospel by using our property for the good of others rather than ourselves. Financially subsidize ministry through missional ventures. Create a model for others churches in our region with property to launch missional business in their space for impact. Marc Ardoin, Rouses Freret Street Market Manager, sits down with us along with Chef Alfredo "Fredo" Nogueira of Vals (also on Freret Street) and Fredo's little brother, WDSU Marketing Exec, Juan Nogueira. Finally, we have a conversation with Ray and B.J. Bordelon, whose extensive collection of absinthe antiques and accouterments is on display at the Southern Food and Beverage Museum. The Brothers Bordelon give us some insight into their obsession and show us some unique pieces of memorabilia that make up the exhibit.
