In this episode of Greece Chats I am chatting with Effie Panagopoulos. Effie is the founder of the Kleos Mastiha Spirit, which happens to be my personal favorite. Some of the topics we discuss in this lively conversation with bartender-turned-entrepreneur Effie Panagopoulos include: How Effie’s career took her from being an east coast bartender to a west-coast spirits rep for some of the biggest brands in the world and what she learned by watching the cocktail renaissance unfold in San Francisco. The way a chance bar visit in Greece transported her back to the flavors of her childhood, reigniting her passion for Mastiha and inspiring her to launch her own brand. Some of the ins and outs of designing a formula, including debates about distillate bases, cleaning sticky stills, and navigating the Greek distilling industry. Why Mastiha has its own protected geographic designation – which takes us into some interesting geographical and geological rabbit holes pertaining to the isle of Chios, where Mastic resin is harvested. How the unique properties of this flavoring agent can also pull double duty in the health and wellness realm. Why KLEOS has come to be called “bartender’s olive oil” And much, much more

Today , Athens-based storyteller Marsha takes us on a journey back to ancient Greek with her phenomenal Oracle of Delphi. Minimalistic, deep in its taste and mysteriously colorful: Marsha brings storytelling through music & magic. She believes that human beings need music, stories and magic in the same way that plants need sun and rain. It was her mix for Deep House Athens, which is run by Marsha by the way, that impressed us and since then we wanted her to mix a delicious Schirmchendrink. She definitely is an artist with a delicate taste, tremendous creativity and a unique sound who found her own place in the world of deep electronic music. In Athens, she is running her own music club project called 'Marsha Invites" and she is a DJ at Home 89.1 radio. She is a member of Playground Greece team, and, being a true Yoga lover, she co-founded the Music & Yoga Project, where she provides the electronic music soundtrack to professional yoga classes. For this exclusive Schirmchendrink episode and together with her bartender friend Goozy (https://www.instagram.com/goozy85), Marsha invented this cocktail “Oracle of Delphi” (picture credits go to https://www.instagram.com/_ambrosialis_). Here is the recipe: • Mastiha infused with butterfly pea tea • Oracle syrup • Plum bitters • Oleander leaves Delphi was an important ancient Greek religious sanctuary sacred to the god Apollo. Located on Mount Parnassus, the sanctuary was home to the famous oracle of Apollo, which gave cryptic predictions and guidance to both city-states and individuals. Thanks to Pythia’s prestige, Delphi became the richest and most famous Hellenic sanctuary. The Greeks called it the Omphalos, or “Navel, center of the world.” Pythia was the name of the high priestess of the Temple of Apollo at Delphi who also served as the oracle, also known as the Oracle of Delphi. Pythia spoke on behalf of the Gods and delivered oracles. She was falling into a prophetic trance by using oleander as a complement during the oracular procedure, chewing its leaves and inhaling their smoke. We love creative minds, we love storytelling, and, we love Marsha! This one just has it all. Thank you for this fantastic sip and mesmerizing journey! Cheers! The bartenders Link up! Quote: “Create the things you wish existed.” About the episode: Garrett and Effie Panagopoulos sit down at the Park Plaza Hotel in Boston to discuss the spirit Kleos, which is an alcohol Effie has created and packaged from the Greek plant Mastiha. Why you’ll love it: The quote should have been, “fall down 9 times stand up 10,” because you will learn about what a crazy-long, tumultuous journey it truly has been for Effie to launch Kleos. From finding manufacturers to distributors, the two discuss how Effie has used her past experiences to launch her product, how and WHY she’s integrating her brand into the fitness and wellness space and how she’s gone after funding along the way. Even more, we hear about the mental work Effie has done to get her mind right for such a journey including but not limited to bodybuilding, floating, meditating and vision-boarding. Greater Message: Never give up. Go after what you believe in. Today you’ll hear from a true hustler—someone so determined it would take an army to try and stop her. Heat from the body can soften it making it more pliable and chewy. Chewy is a key word around its etymology. It’s a tree sap that is dried in the sun from only one place, the Greek island of Chios. It’s all about mastic, or mastiha in Greek or by it’s poetic name Tears of Chios. I’ll look at its history, rarity, value and its many uses. There's art by Émile Bayard, Elisabetta Duminuco and Clémentine Bal. Our guest Aristea Zougri of Althea Massage Therapy and Yoga has a myriad of skills and talents as a massage therapist, yoga practitioner with her own line of body oils. We chat about her career, holistic treatments, lots about the food of her native Greece and some of her mastiha memories.

Spending years in the hallowed libraries of Oxford pouring over the ins and outs of Quantum Mechanics might lead you to drink! It certainly happened to George Economides. One stag do in Sifnos and his whole world changed from investigating particles in a box to those in a glass. Harking back to his native land of Greece, our guest today is reviving the local spirit, Mastiha, and introducing it to the rest of the world - one cocktail at a time. George has the hardest time describing the flavor of Mastiha to those who have never tried it - bubble gum, pine, woods, a combo of all. It’s truly tough to pin down to just one word. Tasting is the only way to describe it. “Grown” on the island of Chios in the Northern Aegean, Mastiha has a rather quirky production process. The resin from the tree drops on the ground, hardens and then is collected, cleaned and reconstituted into the nectar that has made its benefits famous throughout history. The list of drinkers range from Hippocrates, the Romans, Columbus, Italian popes, Arabic Sultans and me!. After my first sip with the Cypriot, I was converted. Now thanks to Mastiha World, it’s coming to a cocktail bar near you, so look out for Enosis or Kentos and give it a try. How many times does this happen to you? You are walking down the street dressed in a sari, a man stops you, asks who you are, tells you your bar is his favorite in America and wants to open one in India? Well, it happened to Anne Frey owner of 1 Tippling Place and she is here to tell us more. 1 Tippling Place is exactly the way Anne Frey wants it to be. She planned it that way. She longed for a local of her own and now there are going to be two: one in Philadelphia and one in Mumbai. After a trip to the UK, she fell in love with its cocktail culture and thought it would do well in Philadelphia. With help from Robin Honhold, now of White Lyan, and Dave Tang, a protégé of Sasha Petraske of Milk and Honey, she created a bar worthy of its neighborhood, the über-chic Rittenhouse Square. [caption id="attachment_7754" align="alignright" width="400"] Photo source: 1 Tippling Place[/caption] Everything is freshly made – syrups, juices, bitters - and ice is hand-cut! This constant attention to detail has been recognized by Food & Wine (24 Best Cocktail Bars in US), Roca Patron (People's Choice 100 Best Bars in America), Maxim, Chilled and Dujour magazines. (All you Vodka drinkers, don’t worry she has kept it on the menu, unlike a few snobbier places out there.) Now Anne is off to Mumbai again, after a extremely successful pop-up bar, to recreate a 1 Tippling Place in one of the busiest cities in the world. We can’t wait to hear all about it when she returns. Watch Chris Zingler of 1 Tippling Place make his Apple Bottom Gin Where you can hear me drinking next: The Greeks have been drinking Mastiha since Hippocrates was the Surgeon General. Why is it only now that we non-Greeks are enjoying its benefits. Next time on Best Sips, George Economides not only an Oxford Grad in Advanced Quantum Mechanics and a Full Blue in Dancesport but also Co-Founder and General Manager of Mastiha World, introduces us to the spirit has been around since the 5th century BC.
