Melbourne's Starward Whisky has released smaller batch experimental products ever since the very early days. And some of these, like the Ginger Beer Cask that we explored in depth with founder David Vitale in Season 13, have gone onto bigger things. In 2020, the company created the Small Batch Experimental Series as a home for its smaller one-off releases that haven't reached the scale required for wider distribution; showcasing new flavours, specialty ingredients and unique barrels or distilling processes. In this special episode of Drinks Adventures – produced with the support of Starward – head distiller Sam Slaney will take you through some of the most recent Small Batch releases including Chardonnay Cask, Starward's first whisky matured completely in white wine casks. It was also an opportunity for me to ask Sam some more general questions about the barrel program at Starward, which has mastered red wine cask maturation to great success, claiming the title of Most Awarded Distillery at the prestigious San Francisco World Spirits Competition in 2022.I should point out that the Small Batch series discussed in this episode is currently available to Australian listeners only.If you are listening locally, the three most recent releases – Chardonnay Cask, Munich Malt and Toffee Apple – are all available to purchase direct from the distillery at starward.com.au.Click here to open episode in your podcast player.

In this episode, I interview David Vitale, the founder, and director of sales and marketing at New World Whiskey Distillery Pty Ltd (previously Starward Distillery), the makers of Starward whiskey. David left a distilling career in Tasmania and started the business in Melbourne around 2007 amidst the global financial crisis. Breaking many traditions in the nascent 15-year-old craft distilling industry, it took him three years to raise all the funds he needed to set up the distillery and get production underway.  It was clear the business model was for a quality sub-100 dollar bottle of whiskey that lives in the sharing cabinet of a whiskey drinker, and it launched at $75 in 2013 when all Australian whiskeys were double the price. In that first year they sold less than 2,700 bottles and in 2020 will move more than 120,000 bottles. With enough stock going into casks each year, they have a close to $22 Million excise tax bill per annum. David moved the business from 1 full-time employee in 2007 to now 35, and with production capacity about to expand again, David highly values the key team members he brought along the journey starting with his first hire who is still there ten years after production began. Funding from investors and selling whiskey investment casks helped get the business through fast growth, tough times, and be well-positioned for the world’s largest alcohol company with 18,000 sales reps in the US alone, to invest in late 2015. That bluechip investment helped them move to larger premises, increase production ten-fold, and get serious about export. David believes the hardest thing in growing a small business is letting go, and the advice he would give himself on day one is, “Keep going. It’s going to take a lot longer than you think, but you should still do it” This Cast Covers: Learning whiskey distilling from the godfather of Australian whiskey. Raising the first round of capital and how their whiskey took off globally. The absurdity of doing a great quality sub-100 dollar whiskey. Starting the distillery and waiting 3 years to start selling. 30 days away from insolvency and getting support from Distill Ventures. Moving to a new upgraded location and scaling up to ten times their original volume. The value of not having to worry about payroll and becoming the best craft distilled spirit in the world. Advocating for building relevance for Australian whiskey outside Australia. Relationship management at the distributor level and the importance of working on the ground. The challenge of shifting from maker’s world to drinker’s world. From 443 cases of whiskey in 2013 to 20,000 cases in 2020. What all around success looks like for David and the amazing awards their whiskey has won so far against some of the best in the world. Starting out with one full-time employee to grow over the last 10 years to 35 full-time employees. The diverse forms of funding that Starward has had.  Losing his dad, having a baby, launching a brand, and overcoming stressful challenges with the business. Making hard decisions for successful cash flow management. The most fruitful way of creating value and the power of meditation. Recruitment wins and losses, and the valuable lessons learned. Onboarding new employees into the company culture within 60 days. The regret of selling his previous e-learning business and the most valuable course David ever took. Most of us are familair with the stories that begin in the UK, the US or Japan but brands like Starward are endeavouring to show that Australian whisky has a story all of its own. Picking up awards like the “World’s Best Craft Distilled Whisky” at the San Francisco World Spirits Competition, Starward is beginning redefine the nuances of what a whisky can be. Branching out and exploring Australian Whisky in this week’s episode with David Vitale, Founder of Starward.  Starward Australian Whisky was founded in 2007 but recently released in the US with two solid expressions; Nova Single Malt Whisky and Two-Fold Double Grain Whisky. We were able to enjoy both of with Founder David Vitale via Skype. Since its Australian debut in 2016, Starward Nova has received numerous accolades including two gold medals at the 2016 San Francisco World Spirits Competition for both the “World’s Best Craft Distilled Whisky” and the “Best Australian Single Malt Whisky”. Starward was also named “Best Australian Whisky Innovator” from Icons of Whisky and crowned “Best Australian Single Malt” by the World Whiskies Awards in 2016 and 2017. Starward was founded by David Vitale in 2007 in Melbourne, Australia and is a modern Australian whisky, matured in Australian red wine barrels.  The ingredients used to distill Starward are a day’s drive away from the Melbourne-based distillery. The red wine barrels that mature the whisky are built around a broad cross section of big Australian reds, including 100L Barossa Shiraz barrels. The quick turnaround time between the barrels being disgorged at the winery and arriving at Starward means that the barrels retain much of their original character that is apparent in the flavor and texture of the whisky.  You’ll find ample red fruit notes and complex aromas, we definitely enjoyed the departure from our usual American bourbons and ryes.    LINKS: Find Starward on Facebook, Twitter and Instagram at @StarwardWhisky. We're back after spending eight days in Australia and a week in bed fighting the "Roo Flu" virus, and there's a lot to talk about! One of the biggest problems facing Australian whisky distillers has been their relative lack of ability to scale up production to meet demand, but that's gradually beginning to change. Melbourne's Starward Distillery moved to a new building in 2016, and that allowed founder David Vitale the ability to triple production with room for future expansion. In Sydney, Archie Rose Distilling has outgrown its original site after five years, and construction is almost complete on a massive new distillery in Port Bombay that will take production from 120,000 liters per year to three million liters. We'll tour both distilleries on WhiskyCast In-Depth. In the news, Pernod Ricard's expansion spree continues with a $223 million deal for Jefferson's Bourbon owner Castle Brands - and a new $140 million malt whisky distillery in China! Trade issues are starting to show a serious impact on the whisky business worldwide, and a Virginia distillery has settled a lawsuit filed by the Scotch Whisky Association over its use of the word "Highland." On Behind the Label, we'll answer the burning question: "just how little maturation time can an American whiskey get away with?" Here's a hint...it probably took you longer to read this!

This week on the Drinks Adventures podcast, I'm talking Australian whisky with Starward Whisky founder David Vitale.Founded in Melbourne in 2007, Starward is undoubtedly the leading Australian whisky brand from a volume perspective, thanks to David's ambitious strategy of pursuing larger scale production from the very beginning. This has meant that Starward has been able to offer its range of high quality whiskies at pretty affordable price points. They commonly sit under the $100 mark in contrast to the routine pricing upwards of $200 a bottle that you see from most other Australian distillers. With David, I discuss this pricing differential and other challenges for Australian whisky, as well as his decision to relocate to North America to develop it as an export market. We also touch on Starward's recent expansion into distilling gin, which I remind David is something he said they would never do.And lastly, the company's entry into bottled cocktails with the launch of the Starward New Old Fashioned. All other Drinks Adventures episodes, show notes, transcripts and many helpful links are available on the podcast website, DrinksAdventures.com.au, and you can email me at hello@drinksadventures.com.au.Follow James Atkinson on Facebook here, Instagram here and Twitter here.Theme music ‘Sandbox’ by Cameo Culture.
