1-28-25 We're hanging out with Traci Kufuss tonight, and talking about mead making, and putting recipes together. She's brought a couple of her recipes to share, and we'll dig into the mechanics of mead recipes and getting it to come out well. Traci Kuhfuss comes to us from Texas by way of Arizona. She ís been active as a homebrewer and mead maker for 20 years now, participating in brew clubs and competitions in all the places she has lived and traveled.. Traci is a professional graphic designer who loves making mead. Traci got into brewing once upon a time, she was newly divorced and her friends were all getting married and having kids. She was bored with sitting at home with nothing to do. Her friends got her a home brewing kit that year for Christmas. She made her first beer that New Years Eve. She eventually joined a homebrew club and was introduced to mead. She started making mead then and winning more medals with mead than beer. She has been consistently winning awards since 2005 to include many BOS wins such as Great Arizona Home Brew Competitions, Orpheus Cup, Queen of Beer, and Mead Stampede. After moving to Texas, she briefly dipped a toe in the commercial realm but went back to the homebrew scene. She has even helped with Texas Rivers Distilling in advising how to make good mead to make award winning Honey Creek Honey Spirits. Which took a silver medal in February 2023 at the San Francisco World Spirits Competition. She has been involved in many competitions including The Great Arizona Homebrew Competition and The Great Arizona Mead Competition when she lived in Phoenix, Arizona. Upon moving to Texas she became involved in the local Houston homebrew scene with her clubs the Cane Island Alers and Sugarland Imperialists, helping to grow the mead community & assisting in Operation Fermentation. Traci also ran the Texas Mead Cup from 2019 to 2023 and has new plans to grow the mead judging pool and assist other Texas clubs in growing mead entries in their competitions. Here are a couple recipes she's made: McNutt Rum Amburana (Multi BOS mead) For 3-4 Gallons 12lbs Macadamia Nut Blossom Honey Water to 35 BRIX (1.153SG) Yeast: D-47 5 grams (If you are in a climate too finicky you can use Lutra or EC1118) Bloom yeast with GoFerm and Fermaid O (Follow dosing for your size batch) Mix your honey and water, start measuring gravity once you have added 1.5 gallons. Keep adding until you get to 34-35 BRIX Add your bloomed yeast and get some oxygen in it. After fermentation is done (I finish at 1.030-1.040, 14-16%) Add your rum soaked amburana wood. Add amburana to white rum; use 5-6 wafers from a spiral. a little amburana goes a long way. Add the amburana to your racked, stabilized and clarified mead. TASTE IT DAILY. Pull when you are almost to where you want the flavor to be as it will continue to bloom flavors. Very little acid adjustments, but adjust to where you like it. Red Pyment (Terroir of the White Box) For 3-4 Gallons 12lbs Orange Blossom Honey 1 Box of Water to 33 Brix (1.1437 SG) Yeast: 5grams 71B Bloom yeast with GoFerm and Fermaid O (Follow dosing for your size batch) Mix your honey and water, start measuring gravity once you have added 1.5 gallons. Keep adding until you get to 34-35 BRIX Add your bloomed yeast and get some oxygen in it. ***add 10-12 cubes of Hungarian Oak to ferment on*** Finish at 10 Brix (1.040 FG) Yes it is sweet, the oak will help offset the sweetness. Every release is unique, but each also builds on previous batches and fits into the unfolding saga of Found North. All our whiskies are non-chill filtered with no coloring or additives. Batch 001 and Batch 002 were released in April 2021 and both received Double Gold at the San Francisco World Spirits Competition. Batch 003 was awarded Double Gold and Batch 004 won "Best Canadian Whisky" and was awarded Double Gold at the John Barleycorn Awards Spring 2022. Found North Hell DiverFirst Flight Description Hell Diver First Flight is the newest addition to our High Altitude Collection. Unlike our Batches where we blend fully matured whiskies, our High Altitude Collection is defined by the process of blend, finish, reblend. Adhering to this creation philosophy, Hell Diver started as a blend of 15, 22 and 23 year old corn with 18 and 19 year old rye, which we recasked into Pedro Ximénez Sherry, Cognac, and New American oak casks. Over the following year, we meticulously tracked these casks' progression, pulling and vatting them as they reached their peak maturation. To achieve the correct balance, we only used two-thirds of these casks in the final blend.We designed the original blend with Pedro Ximénez Sherry casks in mind. Sherry casks are heavy-handed and prone to overwhelm meek-spirited whisky. A domineering cask requires an imperious spirit. As such, we created a deep, rich and viscous original blend with prominent orchard fruit preserves, earthy rye spice and pronounced rose blossom water top notes. We believed this foundation would handle the sweet and dry resonance of PX Sherry casks. Flavor Notes A swirling aura of fig preserves, chocolate pound cake and straight cacao waft from the glass as the first pour flows from the bottle. The nose evolves into caramel, shortbread wafer and candied apricot with coffee ice cream and chocolate covered raspberries.‍Hell Diver lands like a power chord, strumming cinnamon, dark chocolate and wood spice on the front palate. This whisky is a maelstrom of layered flavor and texture. Like the wind and the tide, the oily-sweet viscosity on the tongue merges with the crackling nutmeg spice on the roof of the palate, meeting in the middle to create a tempest of tannin, graham cracker, vanilla and allspice, all tinged a deep shade of ruby red fruit. If your palate had eyes it would see claret. The flavors coalesce, the sea calms and the finish leaves you with reverberating notes of candied dates and cloves. Why We Made This Whisky For us, Found North is an ongoing journey, an unfolding story. When we made Peregrine, we had a vision for an elegant, elevated whisky; a bird, a blend and a style that could wear the crown of the High Altitude Collection. The resulting whisky embodied the high-soaring Peregrine Falcon that reaches for the heavens.As we contemplated the next chapter in the collection, we wanted to create Peregrine's counterpart. Though the loon is a great flier, traveling upwards of 500 miles in a single day, it is known for its aquatic prowess and its eerie nighttime call that haunts the foggy northern lakes of North America. Nicknamed the Hell Diver, the Common Loon is an uncommonly heavy bird allowing it to propel itself below the water's surface. 2-13-24 Tonight we're headed to Texas to talk with Traci Kuhfuss, home meadmaker and mead consultant. Traci Kuhfuss comes to us from Texas by way of Arizona. She ís been active as a homebrewer and mead maker for 20 years now, participating in brew clubs and competitions in all the places she has lived and traveled.. Traci is a professional graphic designer who loves making mead. Traci got into brewing once upon a time, she was newly divorced and her friends were all getting married and having kids. She was bored with sitting at home with nothing to do. Her friends got her a home brewing kit that year for Christmas. She made her first beer that New Years Eve. She eventually joined a homebrew club and was introduced to mead. She started making mead then and winning more medals with mead than beer. She has been consistently winning awards since 2005 to include many BOS wins such as Great Arizona Home Brew Competitions, Orpheus Cup, Queen of Beer, and Mead Stampede. After moving to Texas, she briefly dipped a toe in the commercial realm but went back to the homebrew scene. She has even helped with Texas Rivers Distilling in advising how to make good mead to make award winning Honey Creek Honey Spirits. Which took a silver medal in February 2023 at the San Francisco World Spirits Competition. She has been involved in many competitions including The Great Arizona Homebrew Competition and The Great Arizona Mead Competition when she lived in Phoenix, Arizona. Upon moving to Texas she became involved in the local Houston homebrew scene with her clubs the Cane Island Alers and Sugarland Imperialists, helping to grow the mead community & assisting in Operation Fermentation. Adam Hines is a master distiller, graphic designer, and co-founder of High Bank, Ohio's first combined distillery and restaurant. He is the creative force behind the award-winning Whiskey War Barrel Proof, which was voted Best Blended Whiskey in America by the San Francisco World Spirits Competition.  Hines started his career as a branding expert, running his own agency, States of Design, for over a decade. He met his business partner and friend, Jordan Helman, when he designed the graphics and digital presence for Helman's Zest Juice Co. In Episode 10 of Snow Country Stories Japan, I speak with Sam Yoneda, lead distiller at the newly opened but already well-awarded Nozawa Onsen Distillery. Founded with a vision to produce gin and whisky that reflect the character of Nozawa Onsen, the distillery opened its doors to the public in December 2022 and since that time has won multiple awards both in Japan and abroad – awards including four gold medals at the 2023 San Francisco World Spirits Competition, four medals – including platinum, double gold and gold – at The Sip Awards, and most recently named the 2023 New Distillery of the Year at the Tokyo Whisky & Spirits Competition. Sam was good enough to sit with me for a chat on a humid and wild day in Nozawa Onsen, as an early summer storm passed over the village. As he explains, the distillery currently produces four gins including its signatures Nozawa Gin, Classic Dry Gin, Iwai Gin and Shiso Gin – all of which reflect the local history and character and all of which have already been awarded. We discuss the distilling and barreling of their whisky that will be on the market in a couple of years' time.Nozawa Onsen is located around 50km / 70 minutes drive to the northeast of Nagano City. One of the snow country's most historic and famous hot spring towns, in recent years it better known as one of the best ski resorts in Japan. The small Scottish coastal town of Campbeltown was once home to over 30 distilleries, and it was known as the “Victorian Whisky Capital of the World”.Today, Glen Scotia is one of three surviving distilleries in the region.And both Glen Scotia and Campbeltown are developing a strong reputation among whisky enthusiasts in spite of the region's production output, which ­is tiny in the context of Scotch whisky.Today, Glen Scotia is owned by the Loch Lomond Group and a continuing program of investment has brought dividends for the distillery.In 2021, Glen Scotia 25-Year-Old was awarded ‘Best In Show' at the San Francisco World Spirits Competition.Later that same year Glen Scotia named ‘Scottish Whisky Distillery of the Year' at the Scottish Whisky Awards, making it the first distillery ever to receive both accolades, let alone within the same year.Iain McAlister is at the forefront of driving this recognition. Banks and Bloom Distillery + Lab is a West Australian company founded by biochemist Elaine Darby and winemaker Trent Carroll.Trent's name might be familiar to some of you from his earlier AFL career at Fremantle and West Coast.But it was Elaine's background that caught my eye when a media release came through recently announcing that Banks and Bloom Ice Vodka had been awarded Doubled Gold in the San Francisco World Spirits Competition.Between 2015 and 2018, Elaine was managing director of Auscann, an Australian pharmaceutical company focused on cannabinoid-based medicines.She's also had careers as a winemaker and a lawyer, but it's the medicinal cannabis that is relevant to today's episode.Banks & Bloom owes its origins to another business founded by Elaine and Trent called Aquila Black, which has developed THC extract technology that they believe will revolutionise the cannabis drinks market overseas, where recreational cannabis is legal.To create these cannabis drinks, Aquila Black pioneered new distillation methods to extract pure clarity of flavour from classic botanicals and native Australian ingredients.And as Elaine will explain to you in a moment, this R&D turned out to be applicable to developing an innovative new range of spirits – gin, vodka and RTDs – that can be legally enjoyed today, here in Australia.Click here to open episode in your podcast player.

Bottled at 95 proof, the new expression is sold for an SRP of $59.99 and is currently available in markets within Colorado, Georgia, Kentucky, Nevada, New York, Tennessee, Texas, and Wisconsin. Supporting the evolution of Molson Coors as a beverage company, Five Trail debuted in September 2021 with Batch 001 – an intentional blend of 4-Year Colorado single malt, 4-Year Kentucky four grain bourbon, 4-Year Indiana wheated bourbon and 13-Year Kentucky bourbon, cut to proof with pure Rocky Mountain Water. It was bottled in partnership with Bardstown Bourbon Company and received numerous accolades and awards, including Double Gold at the 2022 San Francisco World Spirits Competition, Platinum Best of Class in the SIP Awards and Double Platinum in the 2022 Ascot Awards. The Batch 002 blend is also bottled in partnership with Bardstown Bourbon Company but replaces the 4-Year Colorado single malt with 6-Year and the 13-Year Kentucky bourbon with 12-Year. The result is a golden amber whiskey with an aroma of sweet caramel, pecans, and biscuit with hints of wood sugar, caramel, apple, white cherry, smoke, ginger, and allspice on the palate. The finish is easy going and lingering with notes of oak, ginger, and nutty balance. “The response to Five Trail has been overwhelming,” said David Coors, Vice President of Next Generation Beverages at Molson Coors. “Our team really loved the flavor profile we came up with for the inaugural release and wanted to keep Batch 002 in this same vein. Batch 002 is an homage to our debut expression, but with a few nuances stemming from the thoughtfully selected mixture of age statements, creating a complex and layered flavor profile. I hope whiskey drinkers and spirits enthusiasts will enjoy this release as much as the first, if not more so.” Along with Batch 002, Five Trail also launched the below expressions, available in limited quantities within the brand's eight distribution markets: Barrel Proof: Barrel Proof takes the Batch 002 blend and bottles it at 119 proof. A whiff unlocks aromas of cinnamon brioche, milk chocolate, ginger, caramel apple, and vanilla pudding. The whiskeys are rested in Imperial Porter Barrels from the AC Golden Brewing Company in Golden, Colorado and cut to proof with Rocky Mountain Water. It features notes of biscuit, roasted nuts, and caramel on the nose with hints of toffee, vanilla pudding, apple, candied date, almond, oak, black tea, and cinnamon crumb cake on the palate. Expect a finish of nuts, delicate ginger, and cinnamon. Small Batch Blend: The Small Batch is blended from a base of 4-Year Indiana wheated bourbon, 4-Year Kentucky four grain bourbon, and 8-Year Colorado single malt whiskey with 17-Year Tennessee whiskey. Honey amber in color, there are notes of warm baked bread, slight citrus, ginger, white pepper, and cardamom on the nose with honeyed granola, creamy vanilla, orange marmalade, oak, and honeysuckle with a bit of paprika on the palate. The finish is warm and powerful ginger and oak melded with embers of smoky overlay. This weeks guest is Kim Haasarud. From her humble beginnings as a bartender in the 90's in New York City to becoming James-Beard honored mixologist and author, Kim Haasarud has embraced innovation and hospitality throughout her work on hundreds of projects with clients ranging from hotel groups, restaurant chains, mixology bars, liquor brands, distributors and other beverage brands both domestically and internationally. My very special guest today is Anthony, Tomey. Anthony is a full-time entrepreneur, a former professional baseball player with the Detroit Tigers organization and now truly one of the largest franchise owners of Jimmy John's, The Chicken Guy and also a Real Estate Developer.  Additionally, he is the owner of 8 Mile Vodka - a Vodka that took home the awards for Best in Class: Vodka and Best of Class: Overall Vodka at the 2022 San Francisco World Spirits Competition. I sat down with Anthony to talk about how he transitioned from pitching on the baseball diamond to pitching in the boardroom and hitting home runs every time!   Anthony shares how he gets the inspiration to “win at all costs” from his dad. His dad came to the United States, Ellis Island, at 25 years old and with $20.00 in his pocket.  Though he didn't speak English, he managed to put himself through college and earned a master's degree, all while working as a busboy at the London Chophouse in Detroit.  Anthony's goal from a young age was to earn a full ride scholarship to thank his father who had paid for a private Catholic school education.    As a baseball player, Anthony loved the pressure of the game.  He was a closer, a last inning pitcher, and thrived in the bases loaded, no one out scenarios.  It was the thrill of the competition that motivated him. He also talks about how humbling it was to go from being the #1 pitcher in college to the majors where everyone was on a level playing field with every guy being the #1 player where they came from.  Baseball taught him that no matter what happens, you're going to fail.  You have to pick yourself up and get back out there.     In the spring of 2003, Anthony Tomey was playing baseball at Eastern Michigan University in Ypsilanti, Michigan. His family came to see him play, and after the game they headed to a sub shop down the street. The place had a line of 20 people stretching outside of the door. At first the family took this as a bad sign, but a member of staff told them to stick around. In less than five minutes, their food was in their hands. This was a defining moment, as they all were amazed at the speed and efficiency with which this business operated. Just a few months later, five like-minded Tomey family members, Fawzi, Tony, Anthony, Christine, and Michael, opened a Jimmy John's of their own in Novi, Michigan.   In 2003, the Tomey Group LLC was founded as a means to grow a brand the partners loved, and to bring the same expansion to brands throughout the country. As of May 2019, the Tomey Group has bought and opened more than 50 Jimmy John's locations throughout the Detroit Metro area.   Anthony is not your average franchise owner. Sitting back and delegating tasks from afar isn't his style. Instead, he is hands-on involved in all aspects of the business, from preparing sandwiches to making deliveries.  He is committed to providing employees with what they need and deserve, no matter what that looks like. He knows his employees' names, how they work, and what makes them tick.     Just over a year ago, Anthony and his brother had an opportunity to buy a vodka company. 8 Mile Vodka, and an apparel company, Born in Detroit became their next financial endeavor. They currently oversee operations and have had great success, partnering with the Detroit Pistons with both companies, while getting into every Meijer in Michigan with 8 Mile. Additionally, 8 Mile Vodka just recently took home the awards for Best in Class: Vodka and Best of Class: Overall Vodka at the 2022 San Francisco World Spirits Competition.    Recently Tomey Group signed a deal to become the newest franchisees of Chicken Guy, a new concept by Guy Fieri. It competes directly with Chick Fil A, and the Tomey Group bought the rights to southeast Michigan. Colorado's Coors family has been making beer for five generations, but it's also been supplying many of the state's craft distillers with malted barley for more than a decade. Now, the family has decided to make its own whiskey using a blend of Colorado single malt made with its own malted barley and Bourbons from Kentucky and Indiana. It's part of a company goal to expand into distilled spirits, as David Coors explains on this week's WhiskyCast In-Depth. In the news, the results from this year's San Francisco World Spirits Competition are in, and whiskies from Australia did extremely well in the judging.
