For this week’s News & Brews, we cracked open a fresh four-pack of the Chicago brewery’s flagship beer, its Strawberry Basil Hefeweizen. That is one of four Forbidden Root beers that are now being sold around Central Ohio in cans. The brand is opening its second-ever brewpub as part of Easton’s $500 million expansion and expects to be open in November where it’ll offer a wider array of its botanical inspired and influenced beers. But those first sips can be had now. Tune in to get our panel’s first impressions. Stick around for a little longer for a recap of a busy news and restaurant week. We discuss Wolf’s Ridge Brewing Co.’s expansion plans, which will up its production capabilities and facilitate a move into cans. Though what it won’t have, at least at first, is a taproom. It’s a high concept week in the bunker as we gamify our cellars by letting a roll of the dice determine the show’s lineup. That space though! Maybe the most original and unique places I have been in, with the people to match. Huge Beer selection, crazy cool decor, and the wildest Austrian Crowler Filler i have ever seen. The food menu is legit, and of cours those beers. Hazy, Sour, Belgian, and a whole bunch more. Robert, the owner, is hyper intelligent, well traveled, and really interesting to talk to. Nick is semi-new to the area and making some insanely good beers on a very cool brew system. Forbidden Root opened my eyes and educated me on stuff I was just plain ignorant about. BJ Pichman is the head brewer at Forbidden Root brewpub, Chicago’s “botanic beer” producer. As a homebrewer, he found a niche brewing pilot batches for recipe development consultants, and that eventually that got him a gig brewing the earliest batches of Forbidden Root’s first trials for their namesake root beer-inspired concoction designed by Randy Mosher and Robert Finkel. Eventually that concept would develop into a full-fledged craft beer brand and brewpub, and while botanics are still at the heart of the operation, BJ has also developed a strong portfolio of hoppy beers, most recently of the New England variety. And they’re really good. This week, he also launched his collaboration with Fernet-Branca, a bitter, herbal liquor that posed a perfect challenge for the team. The result, called Frenetic, might be the beer that finally puts this crew on the national map.
