To some, Chicago's Suncatcher must appear to be a typical neighborhood brewery. The bar is classic Midwest, salvaged from a midcentury tavern. The patio is expansive and inviting, thanks to the plant nursery next door. And the beers come without clever names—just the style, often defined by color, spelled out in plastic letters pressed into the sign board. But when you consider that it was the cofounder of Half Acre who designed and built this neighborhood brewery, it takes on a different meaning. The simplicity that Matt Gallagher has infused into Suncatcher extends from the environment to the beers themselves, and while he's back on the brew deck as the sole brewer, he's chosen to intentionally limit himself. But that doesn't mean sacrificing quality or flavor—in fact, by simplifying, he's able to focus on what the brewery needs to be, and what the beers need to be, and nothing more. In this episode, Gallagher discusses: designing Daisy Cutter so you could smell it from the other end of the bar early challenges in sourcing the hops they wanted the vastly improved growing and processing conditions for today's hops testing the thesis that a small brewery can be sustainable building simple beers with beautiful and expressive ingredients focusing on hospitality and service as much as the beer itself G&D Chillers You know the pain—warm fermenters, stressed yeast, and that sinking feeling when the repair quote lands in your inbox. One of the key features of craft beer today, that doesn't get enough press, is just how much information brewers have at their fingertips. While companies that serve the industry test and provide information about the performance of their products to brewer customers, it's the two-way flow of information back from brewers to those companies that supercharges the learning cycle and helps everyone make better beer. In this episode, produced in partnership with Omega Yeast, guests Matt Gallagher of Half Acre and Suncatcher, Tom Beckmann of Goldfinger, and Laura Burns and Jonathan Moxey of Omega Yeast, explore this topic and more, looking at interesting ways brewers can add character but also hone and shape their beers, beyond the eight main strains that see so much use in the brewing world. In this episode, the brewers discuss: building house character across different style beers harnessing the knowledge base of brewers around the country variations in common strains from different sources and in different formats intentionally selecting more expressive but flexible house yeast unusual applications of yeast that have produced fascinating beers thiol expression in lager beer “Fartbomb”-style lager underrated lager strains for West Coast IPA krausening hoppy lager And more.

'Hell's Half Acre: The Most Notorious Spot of St. Louis County' is a new book by Andrew Theising. He joins Debbie Monterrey. There was a street on the edge of a big city that no one wanted. The city didn't want it. The suburb to the north didn't want it. It was the 6100 to 6400 blocks of Bartmer Avenue—and the blocks all around. This little strip of land was called by authorities Hell's Half-Acre. Since no one wanted it, no one cared what happened there.
When tonight's guest, Wiley Biro, had his first Dogman Encounter, he was at a boulder field, called “Devil's Half Acre,” close to his parent's home near Hillsborough, New Jersey. He was in a bad state of mind, due to him breaking up with his girlfriend. Due to how sudden the break-up was, Wiley was extremely frustrated and out of sorts. That's why he had gone to Devil's Half Acre in the first place. Not long after getting there, something happened that immediately took his mind off of the break-up. The next thing Wiley knew, he was running for his life, or so he thought. What happened to him terrified him more than any experience he's had before that night or since. What happened that night? What did the Dogman do to Wiley? We hope you'll tune in and find out.If you have an employment opportunity for Wiley you'd like to speak with him about or know of one he might be interested in, please contact him via his Facebook profile…https://www.facebook.com/wiley.t.biroMY NEW DOGMAN PODCAST!My new podcast is called "Dogman Tales.” It features fictional stories about Dogmen and people who have experiences with them. Welcome back!! !n this episode, our hosts review "Yellow Wife", Sadeqa Johnson's powerful historical fiction novel inspired by the real horrors of Richmond Virginia's Devil's Half Acre, and Lumpkin's Jail. They explore the journey of Pheby Delores Brown, a young enslaved girl whose promised freedom is stolen when she's taken to a notorious slave jail and forced into becoming the coerced “yellow wife” of its violent jailer. As they unpack the novel, they discuss themes of survival, motherhood, resilience, and the emotional weight of navigating cruelty while trying to protect your children. Moni and Kat also touch on the real history that shaped this fictional story and why these narratives still matter today. Cheers!
This week, Big Chief heads into the rough-and-rowdy heart of Fort Worth, Texas, where legends were born and outlaws once ruled the night. Deep in the infamous Hell's Half Acre, he finds himself at Acre Distilling, a distillery that honors the city's wild past and bold spirit. Big Chief sits down with Tony Formby, one of the driving forces behind Acre, to hear how a group of brewers came together to create this award-winning distillery in the shadow of Fort Worth's notorious past. Tony shares the tales of Butch Cassidy and the Sundance Kid, who once roamed these streets until a photograph sealed their fate, and how that same spirit of rebellion lives on in every drop of Acre whiskey. On the first half of the show, Big Chief pours Longhaired Jim Bourbon Whiskey and the Longhaired Jim Bourbon Cask Strength, two beautiful, full-bodied expressions inspired by the tough-as-nails lawman "Longhaired Jim" Courtright. These whiskeys carry a firm Texas backbone, bold, gritty, and full of flavor, just like the sheriff himself. In the second half, the journey turns to Acre's Texas Single Malt Whisky and their Texas Smoked Single Malt Whisky, expressions that prove Texas malt can stand shoulder-to-shoulder with the world's best. The Single Malt, distilled from 100% Texas barley and aged in new charred American oak, brings rich grain character and classic malt sweetness. The Smoked Single Malt takes it a step further, with 40% of its barley smoked over Texas pecan and peach wood, offering a subtle, balanced smokiness reminiscent of old-world Scotch with a Lone Star attitude. From outlaw legends to award-winning spirits, this episode celebrates Fort Worth's wild heart and Acre's dedication to craft, community, and the Texas way of doing whiskey. So pour yourself a dram, kick back, and let Big Chief take you on a ride through history, grit, and Texas pride, because in Hell's Half Acre, the stories are as rich as the whiskey in your glass.

We believe all neighborhoods deserve to be covered in a meaningful way.We amplify positive stories, cover development and local school council meetings and serve as watchdogs in neighborhoods often ostracized by traditional news media.Ground-level coverageOur neighborhood-based reporters don't parachute in once to cover a story. They are in the neighborhoods they cover every day building relationships over time with neighbors. We believe this ground-level approach not only builds community but leads to a more accurate portrayal of a neighborhood.Stories that matter to you — every daySince our launch five years ago, we've published more than 25,000 stories from the neighborhoods, covered hundreds of community meetings and send daily and neighborhood newsletters to more than 130,000 Chicagoans. We've built this loyalty by proving to folks we are not only covering their neighborhoods, we are a part of them. Some of us have internalized the national media's narrative of a broken Chicago. We aim to change that by celebrating our neighborhoods and chronicling the resilience of the people who fight every day to make Chicago a better place for all.

Matt Gallagher has been instrumental to Chicago's craft beer scene for almost two decades as a co-founder of Half Acre, but it's his new brewery Suncatcher that has had us hooked from the very first visit. Suncatcher Brewing is a relatively unique concept in this time, as they are essentially a bar that serves their own streamlined and immaculate classic craft styles right from the tank with absolutely no designs on packaging or distribution - you have to be there to experience it. We talk with Matt about how this project came to him in a dream before being forced into a years-long hibernation, long before their fall 2024 opening. We also talk about how he found the perfect space, who was instrumental in getting the brewery off the ground, and what influences his stunning recipes. In addition, there's some loving on pale ale, jumping into hop piles, adjusting to collaborations, opening up to low-gravity wood-aging - and us learning Matt's picks for his Chicagoland essential six pack.
Although he might use the term “silly little beers,” Mike Schallau's is/was brewing is making some of the most thoughtful and impressive saisons anywhere in the country right here in Chicago. We travelled up to his Ravenswood brewery and taproom to talk about those beers and how he transitioned his nearly six year-old brewing project from using other people's spaces to his own in the last year and how that's allowed him to dive deeper into the wide range of interesting ingredients and experiments he's become known for. We get into the idiosyncrasies of saison from the outside perception of the drinkers of the style, to changing people's perceptions of Brettanomyces, why people are more important than the concept of “terroir,” and how he develops his impressive restaurant and brewery collaborations. But also, there's some throwback talk to his Pipeworks days, a long tangent on Fantôme, a dive into the prison hooch subreddit, some risky urban foraging, and Mike's picks for his essential Chicagoland 6-pack. Talk about leveraging constraints, Michael Bell runs Dallas Half Acre Farm without running water or electricity, with a full-time job, on about half an acre. On this week's podcast, we talk about how he makes it all work. We discuss why almost all his crops are grown under cover, and how he makes that work with the intense summer heat in Texas. We also talk about why he harvests and delivers produce almost every day of the week, and how that works with his job as a teacher. We also discuss some of the difficulties of farming in a neighborhood where the authorities don't always understand agriculture, and how Michael has worked with local officials to keep growing. His modified CSA is a great model for those looking to get a lot out of a small space or start farming in an urban/suburban area. Michael is also a big advocate for urban farming- hear his advice for aspiring urban farmers, and how he helps them get started.
