First up, PF Chang’s Lettuce Wraps.✅ She’s starting by testing food from national chain restaurants with gluten-free menus or gluten free items identified on menus AND who state they can accommodate folks with celiac disease.✅ The Plan: test the same menu item from 3 to 5 locations nationwide. This testing is designed to give an idea of the nature and extent of issues with cross contact at non-dedicated restaurants. ✳️ She understands that just because one location of a chain restaurant can successfully make a gluten-free item does not mean all locations can accomplish this. This testing is NOT meant to be an across the board statement on the safety (or lack thereof) of all branches of a restaurant.
