150g wholemeal flour 100g plain flour Pinch salt 50ml vegetable oil 150ml waterMix the flours, salt and oil in a bowl and add a little water a time to combine to a soft dough. Knead and then place in a bowl for 20 minutes to rest. 200g potatoes, peeled and diced 1 onion, finely chopped 1 tablespoon finely grated ginger 1 teaspoon finely chopped chilli 1 teaspoon garam masala ½ teaspoon chilli powder 25g butter 1 tablespoon chopped coriander Boil the potatoes until soft and drain well. Mash them. Fry the onion, ginger and chilli in the butter until golden. Mix into the potatoes with the chilli powder and coriander and cool. Divide dough into 6 Roll into an 8cm circle. Place a sixth of the potato mixture in the middle and fold over and seal with a little water round the edges. Form into a ball and roll out to a 15 cm circle Rub a hot pan with a little butter and cook the paratha on one side for about 2 minutes. Brush the top with a little butter and flip and cook for 2 minutes on the other sideCoriander chutney Handful fresh coriander 2 teaspoons lime pickle, chopped 1 clove garlic, chopped Juice ½ lime 50ml oil Salt to taste Blend together and check seasoning.

Soil: Ensure the soil is well-drained. Elephant garlic does not do well in waterlogged conditions. Preparing the Soil Weed Removal: Clear the area of weeds to reduce competition for nutrients. Soil Enrichment: Incorporate organic matter such as compost to enhance soil fertility. This creates a nutrient-rich environment for the garlic to grow. Planting Technique Spacing: Plant the cloves about 10 cm deep and 20 cm apart, with the pointed end facing upwards. This spacing allows the plants to grow without competing for resources. Depth Adjustment: If you have clay soil, consider planting shallower to prevent the cloves from rotting. Watering and Mulching Initial Watering: Water the cloves immediately after planting to help them settle in. Mulching: Cover the area with a mulch of chopped leaves to retain moisture and suppress weeds. Care and Maintenance Cold Period: Garlic needs a period of cold to split into cloves, which is why it is planted in autumn. Minimal Care: Once growth starts, usually by December, ensure the soil remains moist and weed-free. Seeds to Sow in October Richard emphasizes the importance of growing food year-round and provides a comprehensive list of seeds that can be sown in October. Here are the detailed recommendations: Herbs Basil, Parsley, Coriander, Dill, and Chives: These herbs thrive in cooler temperatures and can be grown on a kitchen windowsill. They provide fresh flavors for winter cooking and can be harvested throughout the season. Microgreens Indoor Growing: Microgreens are small, flavorful plants that can be grown indoors. They are quick to harvest and add color and taste to dishes. Consider growing varieties like radish, mustard, and cress. Brassicas Cauliflower and Cabbages: These can be sown in October but will need protection from the cold. Use cloches or cold frames to shield them from frost. Winter Salads Winter Lettuces and Hardy Spring Onions: These can provide fresh produce during the colder months. They are hardy and can withstand lower temperatures. Broad Beans and Peas Indoor Starting: Sow broad beans and peas directly into the ground or start them in root trainers in a greenhouse. Starting them indoors can ensure an earlier crop and reduce the risk of black fly infestations. Green Manures Soil Health: Green manures like field beans and phacelia help protect the soil, prevent nutrient loss, and suppress weeds. They improve soil health and structure, making them a valuable addition to your garden. Recipe of the Week: Autumn Vegetable Gratin Chef Scott shares a comforting recipe for an autumn vegetable gratin, perfect for using up seasonal produce.
Beef noodle salad with citrus dressing Cook time: 5 minutes Prep time: 15 minutes Serves: 4 300gm beef sirloin or scotch, cut into thick strips 2 Tbsp soya sauce 1 clove garlic, peeled and crushed 2 coriander roots, crushed 1 Tbsp vegetable oil Citrus dipping 3 mandarins, cut in half 2 limes, cut in half 4 coriander roots 4 cloves garlic handful fresh mint leaves 1 Tbsp brown sugar 3 Tbsp soy sauce Noodle salad 1 packet fresh Udon noodles 1 cucumber, peeled into strips 6 baby carrots, peeled into strips 2 red chillies, finely sliced Coriander leaves For the beef simply combine all the ingredients and cover to allow to marinate. When ready, heat a BBQ or cast iron pan until HOT, sear the beef for 3 minutes each side. Allow to rest before slicing thinner. Citrus dressing In a mortar and pestle or a bowl, crush together the mandarins, limes, coriander roots and garlic. Add the brown sugar and soy sauce and mix. Taste and adjust according to the flavour. You need a good balance of sweet, salty and sour. Strain through sieve before using. To serve In a large bowl, add in the noodles, cucumbers, carrots, chilli and coriander leaves. Yoghurt flatbreads with coriander butter Cook time: 2 minutes Prep time: 10 minutes Serves: 6-8 Bread 350g bread flour 2 tsp baking powder 350g natural yoghurt 1 tsp salt Coriander butter 200 gm unsalted-butter 1 cup fresh coriander, finely chopped 1/2 tsp sea salt 4 cloves garlic, peeled and crushed Add all the bread ingredients together in a bowl and mix with a spoon, then use your hands to pat and bring everything together. Dust a clean work surface with flour, tip out the dough. Knead for a minute or so just to pull everything together, before leaving while you make the coriander butter. For the butter, Add to the butter and mix in the rest of the ingredients. Re-dust a clean surface with flour, divide the dough into small balls. Flatten with your hands, then using a rolling pin roll roughly 3mm thick. Either place dough into a griddle pan on a high heat or onto a tray in a very hot oven. As soon as they are coloured remove and brush with a coriander butter and cut into random pieces. Roasted beetroot hummus Cook time: 45 minutes Prep time: 10 minutes Serves: 6-8 Pre-heat the oven to 180*c Individually wrap the beetroot in tin-foil, drizzle over a little oil and sprinkle over a touch of salt before wrapping. Place into the oven and cook for 30 minutes before testing. Test by inserting a small knife to see if the beetroot is cooked. Once cooked allow to cool before removing skin. While the beetroot is cooking, place the soaked chickpeas into a large pot, cover with cold water and add a touch of salt and the baking powder. Bring to the boil and cook until tender. Once cooked drain. Place the beetroot into a food processor and biltz until smooth. Add the chickpeas and biltz until smooth. Add the tahini, curry powder and sea salt to finish. Chorizo paella with green chili and coriander: Cook time: 45 minutes Prep time: 5 minutes Serves: 6 2 tbsp sunflower oil 1 white onion, peeled and diced 3 cloves garlic, peeled and crushed 2 chorizo sausage, sliced 1/2 tsp smoked paprika 1/2 cup red wine 1 1/2 cups long grain rice 3 cups vegetable stock 2 tsp tomato puree 1/2 tsp salt good crack of pepper 12 cooked prawns 1 green chili (cayenne or similar) 1/2 cup fresh coriander 1 lemon, cut into 6 Start by pre-heat your oven to 180*c Place a deep EngelElzen pan or deep cast iron pan onto a element and start by sautéing the onion and garlic in the sunflower oil until soft. Add in the chorizo and continue to sauté. Once the chorizo starts to colour up slightly, add the rice. Reduce the heat and sauté the rice for a couple of minutes before you add in the red wine. Reduce the wine fully before adding in the vegetable stock, tomato puree and season with salt and pepper. Place a skillet pan or lid onto the pan and fire it into the oven for 35 minutes. After this time, remove and check the rice is just cooked through. If it is, scatter over the prawn and place back into the oven without a lid for a further 10 minutes. What vegetable seeds to sow in the month of March? That's the topic on this weeks episode. The days are getting longer and the seed sowing list for March is also increasing. The big point to note is March is often described as "March of many weathers" and because of that we need to take care of our tender seedlings and young plants in the coming weeks. Parsley, Dill, Coriander & Celery Seed I am sowing Indoor on heat for Planting in tunnel. Tomato, Chili Pepper, Bell PepperI am direct sowing in my polytunnel. Beetroot, Radish, Carrot & Turnip I will also plant early potatoes (Sharpes Express) into my polytunnel late in the month and I am currently heating up the ground where they will be planted with black plastic, so the temperature is nice and warm at planting time. Rebroadcast: this episode was originally released in June 2020. Today's guest, New York Times bestselling author A.J. Jacobs, always hated Judge Judy. But after he found out that she was his seventh cousin, he thought, "You know what, she's not so bad". Hijacking this bias towards family and trying to broaden it to everyone led to his three-year adventure to help build the biggest family tree in history. He's also spent months saying whatever was on his mind, tried to become the healthiest person in the world, read 33,000 pages of facts, spent a year following the Bible literally, thanked everyone involved in making his morning cup of coffee, and tried to figure out how to do the most good. His latest book asks: if we reframe global problems as puzzles, would the world be a better place? Links to learn more, summary and full transcript. This is the first time I've hosted the podcast, and I'm hoping to convince people to listen with this attempt at clever show notes that change style each paragraph to reference different A.J. experiments. I don't actually think it's that clever, but all of my other ideas seemed worse. I really have no idea how people will react to this episode; I loved it, but I definitely think I'm more entertaining than almost anyone else will. (Radical Honesty.) We do talk about some useful stuff — one of which is the concept of micro goals. When you wake up in the morning, just commit to putting on your workout clothes. Once they're on, maybe you'll think that you might as well get on the treadmill — just for a minute. And once you're on for 1 minute, you'll often stay on for 20. So I'm not asking you to commit to listening to the whole episode — just to put on your headphones. (Drop Dead Healthy.) Another reason to listen is for the facts: • The Bayer aspirin company invented heroin as a cough suppressant • Coriander is just the British way of saying cilantro • Dogs have a third eyelid to protect the eyeball from irritants • and A.J. read all 44 million words of the Encyclopedia Britannica from A to Z, which drove home the idea that we know so little about the world (although he does now know that opossums have 13 nipples). (The Know-It-All.) One extra argument for listening: If you interpret the second commandment literally, then it tells you not to make a likeness of anything in heaven, on earth, or underwater — which rules out basically all images. That means no photos, no TV, no movies. So, if you want to respect the bible, you should definitely consider making podcasts your main source of entertainment (as long as you're not listening on the Sabbath). (The Year of Living Biblically.) I'm so thankful to A.J. for doing this.
