Sambal is a spicy condiment or sauce that has gained popularity in the United States in recent years, thanks to its versatility and bold flavor. Originally from Southeast Asia, sambal sauce is made with chili peppers, shallots, garlic, and salt, and may also include other ingredients such as vinegar, sugar, and shrimp paste. It is commonly used in Indonesian, Malaysian, and Singaporean cuisine, but has also found its way into the menus of many non-Asian restaurants and bars in the United States. It is a great addition to many different types of dishes, including grilled meats, fried rice and noodles, steamed or stir-fried vegetables, sandwiches, burgers, soups, stews, grilled cheese sandwiches, roasted or baked potatoes, tofu, tempeh, and avocado toast. I'd like to share a potential educational resource, "Conversations Behind the Kitchen Door", my new book that features dialogues with accomplished culinary leaders from various backgrounds and cultures. It delves into the future of culinary creativity and the hospitality industry, drawing from insights of a restaurant-industry-focused podcast, ‘flavors unknown”. It includes perspectives from renowned chefs and local professionals, making it a valuable resource for those interested in building a career in the culinary industry.Get the book here! The taste of the Sambal sauce In terms of flavor, sambal is generally quite spicy, thanks to the chili peppers that are used in its production. The heat level can vary depending on the specific type of chili peppers used and the amount of sambal that is added to a dish. In addition to the heat, sambal also has a bold, complex flavor that is a result of the combination of ingredients used in its production. The shallots and garlic provide a mild sweetness and a hint of pungency, while the vinegar and sugar add a touch of acidity and sweetness to balance out the heat of the chili peppers. The shrimp paste, if included, adds an additional layer of savory, umami flavor to the sauce. Overall, sambal is a flavorful and spicy condiment that adds a lot of character to the dishes it is used in. Sambal recipe Here is a recipe for making sambal at home (recipe created by A.I.)Ingredients:1 cup chili peppers, seeds removed (you can use bird's eye chili peppers, jalapeno peppers, serrano peppers, or a combination)1/2 cup shallots, peeled and roughly chopped4 cloves garlic, peeled and roughly chopped1 teaspoon salt2 tablespoons vinegar (you can use white vinegar, rice vinegar, or apple cider vinegar)2 tablespoons sugar (you can use white sugar, brown sugar, or palm sugar)2 tablespoons shrimp paste (optional)Instructions:In a blender or food processor, combine the chili peppers, shallots, garlic, and salt. Pulse until the mixture is finely chopped.Transfer the mixture to a small saucepan and add the vinegar, sugar, and shrimp paste (if using). Bring the mixture to a boil over medium heat, stirring frequently.Reduce the heat to low and simmer for 5-10 minutes, or until the mixture has thickened slightly.Remove the saucepan from the heat and let the sambal cool to room temperature. Transfer the sambal to a clean jar or container and store in the refrigerator until ready to use. This recipe makes about 1 cup of sambal, and it will keep in the refrigerator for up to 2 weeks. You can adjust the heat level by using different types of chili peppers or adjusting the amount of chili peppers used. You can also adjust the flavor by using different types of vinegar or sugar. Enjoy! Nasi Goreng recipe featuring Sambal sauce One savory dish that uses sambal as an ingredient is Nasi Goreng, a popular Indonesian fried rice dish. To make Nasi Goreng, you will need the following ingredients:2 cups cooked rice1 tablespoon vegetable oil2 cloves garlic, minced1 small onion, diced1 cup diced chicken, beef, or shrimp2 tablespoons sambal2 tablespoons soy sauce1/2 cup frozen peas and carrots2 green onions,

Awas! Terasi Berbahaya Mengancam Kelezatan Sambal Nusantara Oleh. Dia Dwi Arista (Tim Redaksi NarasiPost.Com) Voice over talent: Yeni M NarasiPost.Com-Terasi begitu dipuja oleh penikmat sambal. Meski memiliki bau tak sedap, anehnya sebagian besar dapur di Indonesia malah menyimpannya. Luar biasa. Cukup murah apa mahal? Lantas, bagaimana sih awal mula terasi menjadi makanan khas nusantara? Mandy Yin: “It's better to have tried and figured out you don't like something. It's not failure, it's really not. Sometimes you have to go through an incredibly bad, difficult time to understand that's not what you need to do, and you take a different route. One door closes, another opens. I do think there's merit in following your passion, but also in understanding your limits and knowing when to cut your losses… Life is for living.” Mandy Yin, founder of the restaurant Sambal Shiok and author of the cookbook Sambal Shiok, shares about her experiences learning how to cook Malaysian food from her mother, plus: *The problem with the word ‘authentic'* *Her journey learning how to make heritage food* *Beginnings of Sambal Shiok – pop up to a restaurant* *Veganizing laksa* *Iban cuisine* *Importance of recognizing diversity in Malaysian food culture* *Making Malaysian cuisine accessible* Sambal Shiok: https://www.sambalshiok.co.uk/ @sambalshiok Singapore Noodles: http://sgpnoodles.com/ @sgpnoodlesSingapore Noodles newsletter: http://sgpnoodles.substack.com/

His compassion (karuNai) pours (pozhi) like moonlight (nilavu), his face (vadana) is like a moon (madiyan) (=handsome), the one who holds a skull (kApAli). In the anupallavi, the poet continues to describe him as the amazing/wondrous (adbhuta) one that is praised (pORRum/pOTrum) by one and all: by children/cowherds (Ap(b)AlagOpAlam), those (avar) who inhabit this land/earth (talam) that is surrounded (SUr) by the seas (Azhi), kings (bhUpAlar) and the deities/demi-gods that gaurd (pAlakarum) the eight (asTha) directions (dik). The marvellous (arpuda) one who is worshipped by (pOtrum) by the young (bAla) cowherd gOpAlam) (= Krishna?), those from the place (dalattavar) surrounded (shUzh) by the ocean (Azhi), the kings (bhUpAlar) and the keepers (pAlar) (= deities) of the eight (ashta) directions (dik). In the caraNam, SrI sivan goes on to describe him as the one whose matted locks (mASaDayAn) bear (punai) the moon (madi), the gangA (punal - river), and is adorned by konrai, tumbai, and unmattai (Umattai) flowers as well as the sacred aRuk(g)am grass, and a snake (aravam). He is the one whose chest (mArban) is adorned by a garland (mAlai) of heads (talai), one of which is brahmA's (vidhi) fifth head[1]. He wears garments made of skin (tOluDayAn) stripped (uritta) from an elephant (kariyin) and tiger (vempuli). He is the one who holds in his many bright/shining (ilangiDu) hands (kaiyAn) a drum (uDukkai) that sounds (muzhangum) very loudly (adira), a trident (triSUlam), the sacred fire (ank(g)i), and a deer (kurank(g)am). Even the ashes (SAmbal) that cover his skin (tirumEni) all over (muzhudum) seem to shine (tulangum) with the divine lusture that lights him up (dyutimigu) so much so, that this enchanter (mOhana)[2] of the world (jagam) captures (kavazh) the hearts/minds (manam) of women (magaiyar) who cross his path (edir). He whose matted hair (masadaiyAn) is adorned (punai) with the moon (madi), the river (punal) (=Ganga), the snake (aravu), kondrai flower (=Indian laburnum, a yellow flower), tumbai flower (=leucas, a white wildflower), arugam grass and Umattai flower (=datura, a purple flower). He whose chest (mArbAn) is adorned by a garland (mAlai) of Brahma's (vidi) head (talai), he who wears a skin (tOluDaiyAn) skinned (uritta) from a dark (kariya) [alternate : kariyin=of an elephant) mighty tiger (vem puli) . With his hands (kai) shining (ilangidum) with a drum (uDukkai) which makes a startling (adira) loud noise (muzhangum), a trident (tirushUlam), fire (angi) and a deer (kurangam). Worship well (tudi migu) the One who enchants the world (jagan mohana), his sacred body (tiru mEni) shining (tulanga) with ashes (sAmbal), who captures the heart of (manam kavar) the women (mangaiyar) who come before him (edir).

In this "Royal-themed" episode with Matt, Mike & Mel, The Bureau Briefs returns in which Mel gives a big tick of approval to an iconic Saigon teahouse & bakery that has reopened its doors, but then stunningly cries "foul" over a much-hyped (and highly-rated) flame grilled chicken restaurant new to town. Meanwhile, Mike pays out on Matt for taking him on their own wild goose chase in search of a new Japanese-themed venue out the back blocks of Thu Duc. We give the Queen of Sambal, Imelda Van der Wulp of Imelda's Kitchen, a call and she talks us through an eye-watering taste test of her beautifully fragrant and spicy new batch of authentic Indonesian sambal made right here in Saigon, after which we roll out the first category of our Best of The Bureau 2019 cocktail bars. Finally, as usual, we give a shout out to some interesting social media accounts that we like from Vietnam and the region, followed by our final observations on what's happening in hospitality in Saigon. #GetExcited!
