We know eating more plant-based dishes is a healthy and sustainable choice, but the assumption is that it's also an expensive one. This week, we're resharing an important past episode where we bust that myth with Toni Okamoto, founder of Plant-Based on a Budget. If you're surprised and frustrated by high prices at the grocery store, you are not alone. National data shows that grocery shopping and dining out are more expensive than ever. The latest data from the Agriculture Department shows consumers spent 11.3% of their disposable income on food in 2022. This means that Americans are currently spending more on food than they have in over 30 years. I'm certainly seeing this in my own life. I've just returned from a trip to Tulum, and don't worry, I'll be sharing more about that journey on my podcast soon. Tacos that used to be $5 are now $15; a veggie burger that used to be $8 is now $18. But what can we do about this? Well, personally, I feel it's my mission to make sure that no matter the cost of food, we all still feel empowered and inspired to make healthy choices and to not let this inflation deter us from our health goals. So today, I have rounded up the best experts on saving money while eating well. First up is Kathy Davis, the CEO of VegInspired. She'll be discussing how to eat healthy on a budget, her personal experience losing 30 pounds when she went plant-based, tips on food prep, and advice on when to buy in bulk. Then we've got Food Heals regular and Vegan Chef to the stars, Leslie Durso, here to talk about how to cook plant-based on a budget for yourself, eat seasonally to save money, and the secret ingredient that saves you money and enhances the flavors of your food. Next up is Founder of Vegan Dinner Club, formerly known as Batch Cooking Club, Stephanie Dreyer, who helps busy parents bring more ease to their meal prep and meal times. She's here to discuss Meal Planning, family recipes, batch cooking, plus her favorite healthy swaps. Next, we'll be speaking with Toni Okamoto, author of Plant-Based on a Budget: Delicious Vegan Recipes for Under $30 a Week. She'll be sharing insights on saving time and money in the kitchen, meal planning, buying in bulk, growing your own food, and more. And finally, we've got Whitney Lauritsen sharing the best apps, websites, and resources to thrive on a vegan diet.
In episode 108 of Outside The Studio with Tessa: Cooking every single day for the rest of our lives? How overwhelming for many of us! But, Tessa Tovar invites Toni Okamoto to the show to discuss how we can make our time spent in the kitchen easier, more affordable, and how Toni wrote her new book Plant-Based on a Budget Quick and Easy. Toni Okamoto is a vegan blogger, influencer, and author. Her mission is to make a plant-based diet and its associated benefits accessible to everyone through her platforms and books. Be open to experimenting with new foods or ingredients you may have disliked in the past. Trying new recipes will give your palette a chance to adjust to new flavors and methods of cooking; swapping vegetables or staples for what you prefer may also help you enjoy meals.2. Meal planning versus meal prep. Meal planning is taking inventory of your ingredients, arranging your meal lineup for the week, and shopping for needed items. Meal prep is washing and cutting your produce or making staple foods like rice or quinoa so that meals are simple to throw together later in the week. While many of us come home exhausted from grocery shopping, it's imperative to put our goods away properly (like keeping cilantro in a cup of water) or easily accessible so they won't go to waste.3. Don't wait for perfection. This applies to our cooking or daily lives, but especially from an entrepreneur view. Waiting for perfection means you will wait forever; it's an illusion. Instead, start with what you have and build on top of your practice and experience. What would happen if junk food were banned? Life expectancy is dropping and more than half the world is expected to be overweight by 2035. Many say it is time to take extreme measures to stop this unhealthy trend and the millions of cases of cancers, diabetes, and heart disease that it can lead to. The Plant Power Doc, Dr. Gemma Newman, joins “The Weight Loss Champion” Chuck Carroll on The Exam Room LIVE to discuss the controversial idea! Surprisingly, in some cases junk food companies are supporting such measures. She's also the author of the book Plant-Based on a Budget Quick & Easy cookbook, and the co-host of The Plant-Powered People Podcast. A study published in the International Journal of Obesity found that about 65% of dieters return to their pre-dieting weight within three years, and up to 95% of people who lose weight through dieting regain it within five years. The reason why most people fail at diets is because we tend to take an all-or-nothing approach when it comes to taking on a new diet. While it may feel easy at first, it does become harder overtime as the initial motivation starts to die off. That's why in this episode of the Darin Olien show, we explore adopting a plant-based diet as we would look at starting a new habit. I'm joined by Toni Okamoto to discuss this topic of plant-based diets. We also discuss the double-edged sword of modern-day food — it's ultra cheap, ultra-convenient, and ultra quick. But it's also ultra-processed. While it may seem cheap to order fast food off the dollar menu, it comes out to a lot more money for a family to eat out than it would eat a homemade meal, especially over time. Plus, we dive into the simple, small healthy swaps we can start to make that will eventually build up over time into a new pantry and ultimately the best practices for making the switch to a plant-based diet easier. Toni Okamoto is a prominent author, speaker, and vegan lifestyle expert. She is the founder of Plant-Based on a Budget, a website that offers practical and affordable vegan recipes and resources. Toni's work has been featured in various media outlets, including Forbes, Reader's Digest, and NBC News. She is the author of several books, including "Plant-Based on a Budget," "The Friendly Vegan Cookbook," and "The Super Easy Vegan Slow Cooker Cookbook.” Toni's journey towards a vegan lifestyle began in 2010 when she started eliminating animal products from her diet for ethical reasons. However, she found that many vegan options were expensive and time-consuming to prepare. To help others who were facing similar challenges, she started Plant-Based on a Budget in 2012 as a resource for affordable vegan meal planning. What we discuss: 06:11: How dependent are we on our systems? 12:16: How did Toni's dad impact her life? 17:09: Why did Toni start eating a plant-based diet? 21:12: What did Toni's budget look like at first? 23:57: What differences did Toni feel from adopting this new diet? 26:18: How does Toni experience food sharing? 27:40: What's the biggest obstacle to eating healthy? 35:11: How can you get started if you feel overwhelmed? 40:22: What is Tori's philosophy for food prep? 45:50: What does Tori enjoy cooking right now? 50:50: How can you eat well and live well? 56:53: How to deal with people who question your choices? The Business of Being an Author and Influencer with Toni Okamoto of Plant-Based on a Budget This is a special episode of this podcast, because the guest is not only an entrepreneur making money by making the world a better place, but she also just happens to be my wife. Toni Okamoto is the founder and CEO of Plant-Based on a Budget, and she has her fourth cookbook coming out right around the time that this episode drops! Long-time listeners will recall that Toni was actually the co-host of this podcast for the first 20 episodes, and medium-time listeners will recall that she was an interviewee two years ago on episode 51 when her last book came out. It was a fun interview that I recommend going back and checking out, but this is even more fun and doesn't require knowledge of the first episode to enjoy. When Toni and I first met, Plant Based on a Budget was just a passion blog she did in her free time. Fast forward to today, and with no external investment, just through revenue generation alone, Plant-Based on a Budget is now a profitable company employing five people and reaching millions with a message of how to save money by eating in a way that's better for you and for the world. In addition to talking about Toni's latest book, Plant-Based on a Budget Quick and Easy, we also talk a lot about the business of being an influencer, how being the CEO of a profitable company that puts her in the spotlight has changed her life, and more. I had fun doing this interview, and I hope Toni did too. You be the judge. Resources discussed in this episode You can get Toni's new cookbook here. Our past episode 51 with Toni. Tony Schiera was more than 700 miles into a 1,000-mile long bicycle ride from Indianapolis to Washington, DC with his wife Rachel when tragedy nearly struck. They clung to hope that he was just dehydrated, but that hope quickly faded when he was rushed to one of the premiere cardiac centers in the United States. Despite being exceptionally physically fit, Tony had major blockages in at least five arteries. Doctors told him that he required life-saving quintuple bypass surgery. It proved to be a success, but only the first step in a new life. Although heart disease ran rampant in his family, he and his wife embarked on a mission to find out whether genetics were to blame for his brush with death. What they would learn would change both of their lives and Tony's outlook for the future. He was no longer living on borrowed time. He was now destined to live to a ripe old age. Together they have discovered that a new way of eating doesn't mean depriving themselves of their favorite foods. Instead, it means discovering heart healthy recipes to make them, including one for mac and cheese!
