Beef processors continue to keep production numbers down. Strip loins are moving higher while the other middle meats move lower. We've most likely seen the bottom on ribeyes and tenderloins. This pattern should hold steady in the next few weeks, waiting for warmer weather to help boost demand. Chicken production continues running about 3% over last year. Wings are down for next week while breasts and tenders move higher. On the Avian Flu beat, 14 new reports since last week affecting 3.4 million birds. With Spring migration coming soon, the virus could be carried back up North along the East Coast which could make things worse.In grains, the proposed tariffs could increase Canola oil from Canada's prices. Shifting from Canola to soy will push soy up as well. We'll keep an eye on what happens or doesn't happen.Pork bellies turned around from last week's big drop, closing at $179. Labor Day Weekend shortened beef production last week. The market is moving lower overall with a few exceptions. Buy what you need, better prices are ahead.Chicken production continues strong as chicken is the protein of choice for consumers. Wings are coming down just a bit, breasts have some strength, and tenders are in tight supply and expensive. We are at three weeks with no new Avian Flu reports.Grains are looking good.Pork bellies closed down a dollar from last week. Pork belly salad with radishes, hot and sour plum sauce 750g pork belly slices 1 tablespoon honey 2 tablespoons soy sauce 2 tablespoons cider vinegar Mix the honey, soy and vinegar together and add the pork. Mix well and marinate for a few hours in the fridge. Set oven to 200oc and line a baking tray with parchment paper. Place the belly on top and cook for about half an hour, turning once. 12 radishes, halved Heat a pan and add the pork to crisp the fat. Add the radishes and juices from pork. Cook until golden. Add a couple of tablespoons of the plum sauce on top of the pork Hot and sour plum sauce250g plums, halved, stoned and chopped 1 tablespoon oil 1 red onion, chopped 100ml cider vinegar 2 star anise 2 cloves garlic, chopped 25g ginger root, chopped 1 red chilli chopped 25ml soy sauce 35g dark brown sugarCook the onion, ginger, chilli and garlic gently in the oil and then add the plums, vinegar, star anise, soy and sugar. Simmer until the plums are soft. Remove anise and blend to a smooth puree. Pass through a fine sieve2 little gem, separated into leaves 4 chopped scallions 1 tablespoon sesame seeds 1 tablespoon desiccated coconut 1 teaspoon black sesame seeds Toast the seeds and coconut in a dry pan until the coconut is golden. Place the lettuce on a platter or plates. Add the pork, radishes, scallions and sprinkle the seed mixture onto the pork. Drizzle over a little more sauce and serve.

The beef market saw some welcome demand going into Labor Day Weekend. Now we should see some moves lower over the next couple of weeks. Buy what you need now, but it will be cheaper if you can wait. Strip loins are the buy in middle meats.Chicken production continues strong and egg set numbers are up. Wings are moving lower again, while breasts and tenders are holding steady. Fall should shape up to be a good season for fresh chicken. No new cases of Avian Flu were reported.Export demand in grains is seeing a 38% increase which is driving the price up slightly. We're keeping an eye on a new trade war between Canada and China.Pork bellies closed slightly down from last week but should continue to move lower. I'd be in a buy-just-what-you-need mode for next week as I do think things will adjust lower as we move into September.Chicken production is up 3% over last year. Wings and tenders are holding steady and breasts are moving higher. No new cases of Avian Flu were reported this week.Grain harvest has begun and everything is still looking great. Experts are wondering just how big this year's corn crop will be.Pork bellies are down a dollar this week and I think there is more downside to come. Loins, butts, and hams are all great values this week.
