On this episode, we're very lucky to be joined by internationally renowned Actor Ewen Bremner. @PaulButlerLennox had a chat with Ewen about Creating Characters, Growing up at the Seaside in Portabello, Scotland in the 70s, Youth Theatre and the connection and commonalities in brilliant people he's worked with. As well as his work on the Bluefish project.  Ewen can be seen most recently playing Alan McGee who found Oasis in "Creation Stories" on the Sky Store and on download.  Ewen Bremner has worked with many of the most celebrated names in world cinema. He has created and performed countless unique characters for directors such as Danny Boyle, Bong Joon-Ho, Mike Leigh, Ridley Scott, Frank Oz, Woody Allen, Kelly Reichardt, David Mackenzie, Patty Jenkins, Mike Newell, Gus Van Sant and Harmony Korine Most recently, Ewen has played Alan McGee of Creation records in the feature film Creation Stories. Alan McGee signed Oasis and is synonymous with 90s rock culture. Born in Edinburgh, Scotland, Ewen has spent more than three decades working extensively in film, theatre and television. Originally the initial performer of the Trainspotting narrative on stage and unforgettable as Spud in Trainspotting and Sequel in 2017. T2 Trainspotting. Ewen is also an experienced educator and has taught alongside Clark Midddleton at Torn Page's Apt929 in NYC and is currently completing producer and director duties on Clark Middleton's BLUEFISH film, shooting remotely throughout the pandemic with 36 actors from 16 different countries. At the request of UK listener, Peregrine (great idea, thanks!), we discuss vegetarian food pairing, an art that's just as easy or hard as with any dish. The difference is that in the veg world, we pair with sauce and seasoning and the complexities are many --and we dig into many of them! We discuss my three step pairing process and how it applies to vegetarian food: Pay attention to the weight of the food -- heavy with heavy, light with light. Examples: simple salads with dry whites or rosé, Eggplant or heavy saucy dishes with heavier reds, Cream or cream-based dishes – northern European cuisines – best with cooler climate wines Figure out what the dominant flavor of the dish is and pair to that.  Examples: Earthy veggies like mushrooms, root veggies – earthy reds like Burgundy, or Barolo, Chianti Mushrooms have umami: Burugndy –white and red are best, but there is nuance Creamy dishes – oaked white burgundy Mushroom risotto: Arneis, Gavi, Soave, Fiano, Etna Bianco Mushrooms with garlic: Pinot noir Portabello mushrooms: same as steak: Zin, Malbec, Bordeaux, Cabernet Asparagus or bell peppers –whites with higher acidity – Grüner, Sauvignon Blanc Tomato-based dishes – reds from Italy Pay attention to the texture of the food and make sure it goes with the texture of the wine. Structure of the food and the wine matter. Is the food salty? Chewy? Acidic? Pair it with the appropriate wine texture!    We discuss MC Ice's favorite rule: What grows together, goes together    We talk about the best pairings for spice:  Sweeter Riesling or Chenin blanc, or fruity rosés (NEW WORLD) work well Indian curry: A touch of sweetness helps, so does acid Bright Thai curries are better with aromatic whites Fruity rosé, off-dry Riesling or Chenin Blanc, Pinot gris, Viognier Fruity Merlot or Shiraz, Portuguese reds Stir fry with soy: fruity New World Merlot, Pinot, something low in tannin   We talk TexMex and Mexican:  Black beans/burritos: Albariño, Beaujolais  True Mexican food Crisp whites: Albariño, Sauvignon Blanc, Pinot Grigio, dry Riesling, Riojas, Chianti, Pinot noir can for heavier sauces Soft juicy wines can work with refried and black beans or adobo sauces –Beaujolais or soft Syrah, Garnacha  No tannin, no oak– kills the combo with chiles   Finally we discuss how salad has become so varied it's hard to make a good match. I was in Dublin last week and, as I always do, I popped in to Picado Mexican to see Lily Ramirez Foran. Except this time I was armed with my microphone and laptop to record my podcast. We had a great chat about Lily’s life in food and favourite dishes. Her family were third generation tortilla makers but Lily rejected a life in food for a career, only to turn this around to a career in food when she moved to Ireland to be with her husband Alan. Lily is now the Irish authority on Mexican food, and I am delighted to share our chat with you.  We talked everything from Mexico to Japan (where she met Alan) to Ireland. And of course we talk about Day of the Dead, Mexican Breakfast, Mezcal and Tequila among many other things. This podcast was recorded on site in Lily's shop Picado in Portabello in Dublin.

Maximalt med mat till minimalt med tjoller - det är vad Los Vegos-Therese kallar en perfekt brunch. Här bjuds på huevos rancheros, dubbel brunch burger och en hel limpa av dubbelmackor. Recept: Therese Svensson Huevos Rancheros med svarta bönor, tomat, ägg och chipotle Vegetariskt, glutenfritt, laktosfritt, mjölkfritt Huevos rancheros betyder ungefär ägg i ranchstil och är en enkel mexikansk cowboyfrukost som jag adderat svarta bönor till för att göra den mer mättande. Det här är så gott, snabbt och enkelt att du inte har en ursäkt att inte prova den. Grunden i rätten är superenkel - man tillagar helt enkelt ägg i tomatsås. Det finns flera versioner av den här rätten i andra länder. I Italien heter den uova in purgatorio, och i mellanöstern shakshuka. Du kan göra huevos rancheros i en ugnsform om du gör mycket, till exempel om du har massor av kompisar som kommer över på söndagsbrunch, eller gör den som jag gör här, direkt i stekpannan. Vegan: Toppa med skivad svamp eller rökmarinerad tempeh istället för ägg. Veganklart. Variera mera: Får du rancheros över kan du använda den som sås till rostade rotfrukter eller som sås i en gratäng eller lasagne, ta bara då bort äggen så du bara har kvar själva tomatsåsen. Tips: Tomat med smak. Eftersom tomater bara är i säsong en kort tid under sommaren får man ta till italienarnas smarta trick att använda konserverade tomater resten av året. Hela konserverade tomater i olika former ger mycket smak och mosas lätt till en god tomatsås. Det går även prima att låta hela konserverade tomater rinna av och sedan rosta dem halverade i ugn med lite olivolja och salt till en god smörgåstopping. Läs mer om tomater här på matsajten SeriousEats.com.                                                                                                         Ingredienser: ca 2 portioner 1 burk konserverade tomater 1 burk svarta bönor 2 vitlöksklyftor 1 tsk chipotle paste (finns på tacohyllan i din matbutik) 2-4 ägg (välj själv!) Salt Olivolja Kryddor: Ca ½ tsk spiskummin, ½ paprikapulver Till servering: Rostat bröd, tortillas, skivad avokado, färsk koriander, limeklyftor, grillad eller kokt majs.   Gör så här: Fräs krossad vitlök och svarta bönor i en stekpanna med olivolja tills glansigt. Häll på tomater och tillsätt chipotlepasta, spiskummin, paprika och salt. När såsen puttrat ihop och du smakat av med eventuellt mer kryddor och salt. Knäck försiktigt i ägg så gulan håller sig hel. Sätt på ett lock och ha lite koll det är färdigt när äggvitan har satt sig men gulan fortfarande är rinnig. Gör egna nachos av tortilla om du vill. Stek tortillas i en het panna med lite olja tills krispig. Ta upp, strö över lite salt och skär till stora nachos. Upprepa med så många du vill ha. Servering: Ta av huevos rancheros från plattan och toppa med skivad avokado, lite mer chili och färsk koriander alternativt persilja eller körvel om du är korianderförstörd. Hugg in som det är med nachos eller sleva över på grillat surdegsbröd så det blir som en texmex bruschetta.     Dubbelmacklimpan för hela gänget Vegan, laktosfritt, mjölkfritt I slutet av 60-talet gjorde ett svenskt bryggeri en kultbok om öl och smörgås som heter just Kom in på en öl och en smörgås (leta efter den på loppisar!). Därifrån lånar jag vördnadsfullt ett mackrecept som jag veganiserar och uppdaterar lite. Det är alltså en superdubbelmacka i limpform där gästerna sen kan dra av varsin färdig dubbelmacka. Alltså perfekt för mackfantasten, brunchgänget och barnfamiljen. Du kan också göra som min mamma och fylla limpan med vitlökssmör och persilja så har du just fixat världens godaste vitlöksbröd. Glutenfritt: Välj glutenfritt bröd tex från butik eller baka själv, mitt tips är Maria Blohms och Jessica Frejs kokbok Nytt bröd! Baka gott utan gluten. Ingredienser: 1 limpa av valfri sort Ca 5-6 champinjoner 1 hel ättiksgurka Ca 1 ½ dl hackad färsk persilja 1 ask färskost tex havrebaserad PåMackan eller sojabaserad Tofutti Rökt paprikapulver Salt Mjölkfritt smör Till servering: Servetter Gör så här: Finhacka champinjoner, ättiksgurka, persilja och blanda med en nypa rökt paprikapulver och färskost i en bunke. Smaka av med salt. Skär limpan i ca 2 cm tjocka skivor utan att skära ända ner så att limpan fortfarande håller ihop i botten. Bred ut ostblandningen mellan varannan skiva så det blir dubbelsmörgåsar. Smöra hela ovansidan av limpan Slå in limpan i folie. Sätt in det i 175 gradig ugn i ca 15-20 minuter.   Servering: Skär upp brödet till varma dubbelsmörgåsar. Ge alla varsin servett så de kan hålla smörgåsen i ena handen och dryckglaset i den andra. Glutenfritt: Välj glutenfritt bröd tex från butik eller baka själv, mitt tips är Maria Blohms och Jessica Frejs kokbok Nytt bröd! Baka gott utan gluten.     Dubbel Brunch Burger Vegetariskt Det kan verka trött med portabellosvamp eftersom kvarterskockens förstahandsval till vegetariskt alternativ är 1. Portabello, 2. Halloumi, 3. Fetaost, 4. Smulig rödbetsbiff. Förr i tiden var risotton vegoalibit på menyn men efter ett uppror i vegovärlden, bland annat med en namninsamling på sociala medier, så försvann risotton från krogarna. Tyvärr fylldes då inte vakuumet med inspirerade växträtter utan istället blev det en lavin av halloumi, feta och portabello. Men du kan återupptäcka kärleken till portobellon igen. Tricket är att skåra ett grunt rutmönster i hatten på portabellon innan du steker, då kommer extra vätska ut och extra smak IN. Jag brukar tänka att man ska försöka punda in så mycket smak som möjligt i allting. Det blir ju kul. Men framförallt gott. Vegan: Skippa ägg. Använd äggfri majo och byt ut osten mot en vegansk smältbar ost, alternativt pudra svampen med näringsjästflingor. Ät ej med briochebröd då de innehåller ägg och smör. Glutenfritt: Välj glutenfritt bröd eller ät med romansallat som en matig brunchsallad.   Ingredienser: 2 dubbelburgare 4 mindre portabellosvampar Hamburgerost av amerikansk typ eller gräddost (tumregel: ju mindre lagrad ost desto högre smältbarhet) 2 ägg Skivad saltgurka eller ättiksgurka Ärtskott, groddar eller sallat 1 dl hemslagen majonnäs eller vegomajonnäs Ca 1 tsk dijonsenap 2 frallor eller briochebröd Salt Olivolja Smör Gör så här: Skär ett grunt rutmönster i hatten på portabellosvamparna. Salta lätt i en torr och het stekpanna och lägg i svamparna med rutmönstret nedåt. Låt ligga 2 minuter och vänd sedan. Tillsätt en skvätt olivolja och en klick smör (gärna med en rosmarin- eller timjankvist) och ös svampen då och då tills den är mörk och mjuk. Lägg hamburgerost på svamparna och lägg upp på en tallrik vid sidan av. Knäck ägg i stekpannan. Stek äggen tills vitan satt sig men gulan är rinnig (eller vändstek dem). Ta upp och lägg på tallrik. Blanda majo med dijonsenap, smaka av. Skiva avokado och skölj ärtskott eller sallat. Rosta eller grilla brödet. Servering: Bre ut en klick dijonmajo på bröden, toppa med ärtskott, avokado, portabello, skivad saltgurka, en till portabello och avsluta med ägget på topp. Servera med massa servetter och alvedon för du kommer bli så mätt att du får ont i magen.
