But there is a dispute within Cyprus about what makes true Halloumi cheese. Should it be made from cow's milk which has a mellower taste? On a recent cold winter night in the Cypriot capital Nicosia, long lines of people began to form in a public parking area. Margo Flanagan of ‘Two Raw Sisters' serves up a delicious recipe for Halloumi Saagwala. Serves: 2 Time: 20 minutes Ingredients Saagwala 1 brown onion, diced 1 tomato, diced - large ⅓ cup coconut cream 4 cloves of garlic 1 tbsp ginger, freshly grated 1 tsp garam masala ½ tsp chilli flakes ¼ tsp cinnamon 1 tsp sea salt 5 cups greens (spinach, rocket, herbs, kale, silverbeet) Fried Halloumi 100g halloumi, cut into cubes 2 tbsp cooking oil To Serve 1 cup brown rice, cooked 2 tbsp chilli oil 2 tbsp peanuts, toasted and chopped 1/4 cup coriander, chopped Method Add all of the saagwala ingredients, except the greens, to a pan and simmer for 8 minutes. Add the greens to the pan in the last 2 minutes. Mix until wilted. Add the saagwala to the blender and blend until smooth and vibrant green. Clean the pan and cook the halloumi. Heat the cooking oil in the pan until hot, add the halloumi cubes and cook until golden on each side. Pour the saagwala sauce back into the pan with the halloumi and mix. Heat until you reach your desired temperature. Spoon cooked rice into a bowl followed by the saagwala, chilli oil, peanuts and herbs. Enjoy Any leftovers will keep in an airtight container in the fridge for up to 3 days. Alternatively, you can freeze the saagwala sauce without the halloumi for up to 3 months. Simple Swaps / Additions Halloumi for chickpeas, paneer or chicken. Brown onion for red onion. Garam masala for ground cumin. Chilli flakes for fresh red chilli. Grilled fresh figs with halloumi and toasted almond dressing Ingredients- 6 figs, halved lengthways 3 small red onions, cut into quarters 1 pkt of green leaves 300gm good halloumi, sliced into long strips 5 tbsp oil Flaky sea salt Ground black pepper Dressing- 1 cup almonds (toasted in a pre-heated oven on 180* for 12 minutes) 3 tbsp red wine vinegar 4 tbsp olive oil 2 tbsp brown sugar Salt to taste Method- Start by making up the dressing. Roughly crush the toasted almonds in a mortar and pestle or with the side of knife. Once crushed, add in all the other ingredients and mix. Season and you are done. Preheat a BBQ or cast iron pan to med-high heat. Toss the red onion with a touch of oil and salt in the pan or BBQ hotplate until it begins to caramelise. Remove and place into a bowl. Brush the halloumi and 1/2 figs with a little oil and place into your pan or onto your BBQ. Grill until the halloumi is coloured and soft but not gooey. Remove and set aside. Grill the figs until they are well coloured but not burnt. Remove and set aside. Serve by laying a 1/3 of the halloumi down along with the figs and some leaves, then drizzle over a little dressing. Rafael Laoutari (Cambridge University) shares a lesser known aspect of archaeology, namely, that of ethnoarchaeology, using it as a lens to explore cheese-making in antiquity. We discuss cheese-making on Cyprus in the archaeological record and the earliest literary references to Halloumi that we know of. By studying how Halloumi is produced in rural settings and recreating its traditional methods, Rafael gives us insight into our past and helps us better understand the act of dairying culture in Cyprus and beyond.

Richard Pococke (18th century) was an avid traveler providing us with one of the earliest literary allusions to Halloumi. Though not the first reference (that honour may go to the Doge of Venice, Leonardo Dona, who lived in Cyprus for a period during the Venetian era), it does show that Halloumi was well known throughout the Levant. Next month, I invite Rafael Laoutari (Cambridge University) to discuss Halloumi as a lens in which to explore cheese-making in antiquity, and specifically, in Cyprus.
Halloumi, or hellim as its known by Turkish Cypriots, is now ubiquitous in our supermarkets, fast food chains and on restaurant menus. We import almost 50 per cent of the cheese produced in Cyprus. But its significance on the divided island from where it hails is bigger than you might imagine, and never more so than right now. In 2021, halloumi gained PDO status which means that any cheese labelled as halloumi within the EU has to be made on the Mediterranean island to a traditional recipe. And as Leyla Kazim finds, the dairy industry is having to adapt fast. But halloumi is more than just an export. On a divided island (there has been a border maintained by the UN since 1964), halloumi (Greek) or hellim (Turkish) is produced by both sides, and has been for millennia. In this programme Leyla travels to Cyprus to meet the people producing hellim and halloumi, to hear about its present and gauge it's future. She'll watch it being made at scale in factories and in kitchens. She'll meet dairy farmers and question the officials behind the new PDO status. And most importantly, she'll taste a lot of halloumi.
