His new book, Thirsty, is part-memoir, part guide to his life through wine in 100 bottles, and is available now. On the podcast, Tom discusses his family's love for winemaking that stretches back to the nineteenth century, and how he became captivated by the trade thanks to Beaujolais and a pike's head. He explains how a glass of pinot gris in an ice bath propelled him to social media fame – where he's known for taking a fun approach to wine tasting. Tom also reveals the best way to pair drinks with dishes and the unconventional way he'll be cooking his turkey this Christmas. In this episode, Janina sits down with Natasha Hughes MW, author of The Wines of Beaujolais, to explore one of France's most misunderstood wine regions. They discuss why Beaujolais is far more than simple Nouveau, how over 300 soil types and multiple winemaking styles shape the wines, and why Gamay can age beautifully. Natasha shares insights on the diversity of the Crus, the role of granite and diorite, old vines (including pre-phylloxera parcels), climate-driven changes, and the rise of exciting new producers bringing fresh energy to the region.

Borrowed from Mardi Gras - Laissez les bontemps rouler! Let the good times roll. By French law, on the Third Thursday of November the new Beaujolais wine may be released. It has been in the barrel and the bottle for about ten minutes. Okay, six months. It's a fun, fruity red wine that as Bob Burke says, you want to date, not marry...Ah, the French. So, he throws a party every November and it's here. The barrels are being rolled out in Providence RI and it has become a landmark in North America. You're invited. By the way, this wine pairs very well with turkey....

After falling in love with France during a trip with his fiancée, Brian began importing small-production wines to the States, eventually launching 4Play Wines, a boutique distributorship focused on producers with meticulous farming practices and distinct personalities. He shares stories from his travels, insights into sourcing hidden gems, and even kicks things off by pouring a 2014 Beaujolais and some White Burgundy — instantly winning over the hosts. Beaujolais-Weine haben einen schwierigen Ruf. Es soll aber auch gute Tropfen dort geben. Ob diese Flasche dazugehört, dazu gehen die Meinungen bei den Weinbratern auseinander.
It is complitcated. Life. Wine. And to help clear up the wine complication (not sure there is a way to uncomplicate life), is Charlotte Selles. With a distinctive path to her new company Tassei, she brings to the table a wealth of experience cloaked in knowedge, philosophy and experience. She is like a wine savant. She was in LA for a speaking gig and breaved an unusual SoCal downpour to come to studio to share her spirit. Charlotte Selles is the kind of guest who'll have you reconsidering not just what's in your wine glass, but why you care in the first place. You think you know luxury in wine? Not so fast. Drawing on her roots in Paris, direct experience with Beaujolais, and a career arc that went from family negotiations to the boardrooms of Robert Mondavi and Jackson Family Wines, Charlotte uproots every tired assumption about what makes a winery—or a wine—worth chasing. Listen closely and you'll discover why luxury isn't about price tags or pedigrees, but about resilience, grit, and the tension that comes from pouring your soul into the vineyard, braving storms—literal and figurative—and nurturing a legacy. But this episode doesn't stop with terroir. Charlotte takes you to the frontlines of modern wine business, from the misguided myth of floodgates marketing to the high-stakes realities of retention, data analytics, and AI in today's DTC world. She'll have you rethinking the purpose of your tasting room, craving the deep relationships behind the best bottles, and maybe even second-guessing whether a discount culture can ever breed true loyalty. By the end, you'll have a new definition of success—not in cases sold, but in customers kept, relationships built, and a business as alive and evolving as the wine itself. Walk away with a fresh understanding of the true business of wine, grounded in purpose, powered by connection, and ready for an uncertain but thrilling future. Born in Paris, Charlotte grew up immersed in wine thanks to her father's work in the négociant industry and an ambitious, if slightly misguided, attempt to become a gentleman farmer in Beaujolais. Through this early exposure, she witnessed first-hand the highs and lows of wine production, gaining a nuanced understanding of luxury and the grit required to succeed. Charlotte made the leap to the U.S. in her early twenties, bringing with her a suitcase of Beaujolais and a healthy dose of courage. Over the years, she carved out a reputation as an innovative strategist, serving as the general manager of the renowned Robert Mondavi Winery and Constellation Brands. She also held the position of Vice President of International Portfolio Strategy for Jackson Family Wines, steering global growth for one of the industry's heavyweights. Her journey ultimately led her to found Tissay, where she now works as CEO, advising premium vineyards and artisan wineries on brand management and growth. Tissay specializes in helping wineries recover from overexpansion, transition to new business models, and build meaningful relationships with their core customers. Charlotte's approach is anything but one-size-fits-all; she champions retention marketing, customer data analysis, and strategic focus, drawing on her broad experience in both the European and American wine landscapes. In addition to her consulting work, Charlotte teaches at the Sonoma State Wine Business Institute and speaks on topics ranging from leadership and innovation to global market evolution. She's well-known for her wit, candor, and commitment to elevating both wine and the people behind it. Her path, from Paris to California's wine country, is proof that embracing adventure—and a bit of chaos—can lead to extraordinary results.
Famed Chef Jonathan Waxman came to Wine Talks through a mutual friend who we lost last year to cancer; Melvin Masters was a one-of-a-kind character in the wine trade and Jonathans partner in the famed Jams Restaruarant. On a recent trip to Nashville, Tennessee, I insisted that the group I was with follow me to Roberts Western (most probably the last true country bar in Nashville), for a fried bologna sandwich. They looked at me crosseyed and followed blindly. You see, we had just finished dinner and everyone had overeaten and were tired. But I knew if I didn't go the first night we were there, I wouldn't make it. Pray tell, why would one do that? Well, if Jonathan Waxman says the first thing he did was take famed Italian Chef Giada De Laurentiis to experience the $5 fried bologna sandwich. Who shouldn't? A slice of flat top freid bologna between two pieces of white bread with a side of Lays potatoe chips, I was in hog heaven. Add a PBR, and you are off to the races. Jonathan Waxman is the kind of chef who can turn a honky tonk fried bologna sandwich in Nashville into high culinary art, then philosophize about the virtues of a perfectly marbled 1961 steak—all before your first glass of Beaujolais is finished. In this episode, you'll discover the inner workings of an acclaimed chef's mind as Jonathan shares the flavors, friendships, and formative experiences that shaped his career. You'll hear about how “wine comes first, food comes second” became his guiding principle, the serendipitous plane rides sourcing lamb and lobster for legendary winery dinners, and the awe-inspiring meals in the kitchens of France that sparked his lifelong passion for simplicity and flavor. Alongside host Paul Kalemkiarian, Jonathan revisits the rollicking days at Michael's and Jams, brushes elbows with food world icons from Alice Waters to Melvin Masters, and reveals the quiet intensity required to survive and thrive in the high-wire environment of fine dining. From the intricacies of nouvelle cuisine to the rainbow of immigrant influences shaping American food culture, you'll gain an insider's appreciation for the nuances of restaurant evolution, the subtle art of pairing local wines with regional dishes, and the uncompromising drive that keeps chefs inventing and adapting—even when the world turns upside down. Whether you're curious how the Michelin Guide still shapes a restaurant's fortunes, or just want to know what it's like to be mentored by legends while flying by the seat of your pants, this episode peels back the layers of taste, tradition, and tenacity, one delicious story at a time. Gamay may not be the grape you run into every day at the wine shop, but it deserves a permanent spot on your radar. It's versatile, food-friendly, and usually more affordable than its Pinot Noir cousin. And yet, it's got this undeniable charm—that little “extra button unbuttoned” energy that makes you want to lean in closer. Sommeliers call it their “secret weapon,” partly because it plays so well with food, and partly because it brings joy without demanding all the attention in the room.Tonight, we wanted to share with you a favorite from our cellar. The way we talk about wine is important. Language is a living, evolving thing that changes to suit shifting whims and needs. That means that some wine terms become less, er, useful over time. In other words, they need to get the axe. There are so many reasons a term could be considered outdated. It might be offensive—for instance, why are some wines described as "masculine" and others "feminine"? But terms may also not be precise enough, or not inclusive enough. Sometimes they just plain evoke weird reactions. So, too, thinks writer-at-Large Reggie Solomon, our reviewer for a wide range of wines including those from the Loire Valley, Beaujolais, Southern Coastal Spain, Israel, Asia, and more. I caught up with Solomon to talk through terms he considers outdated in wine writing and why. Is there a guest you want us to interview? A topic you want us to cover? We want to hear from you! We are changing our show tonight, but we still have you covered with wine information.Tonight we are going to taste and learn about Gamay.Gamay is known for being a light-body and fruit-forward wine with low tannins. It typically has cherry and raspberry fruit flavors, and earthy and floral notes. Acid is typically medium to high.Duke of Burgundy banned Gamay in 1395 because he believed it to be an inferior wine, but it remained and continued to be grown in the southern Burgundy region of Beaujolais. This is the most famous region producing Gamay, and now is responsible for about 75% of all of the Gamay wine in the world. Our wine tonight comes from the Loire Valley where is it also grown in the central regions of the Loire. It is also being grown in parts of Canada, Oregon, and New Zealand. Gamay pairs well with soft cheeses, chicken, turkey, salmon, and mushroom dishes. Serve slightly chilled at 55-60 degrees. Here are our three wines for tonight.Tonight, we are enjoying:2021 Le Rouge E'Ici et E'Ailleurs Saint Pourcain, Loire Valley. I purchased online and you can still find it for $18.00. It is produced by Domaine des Berioles. The winery is biodynamic and it is made with 100% Gamay grapes. It has 12.5% alcohol. This wine was average, I liked it but nothing I would go out an purchase again. We both rated it a 3. I did like the earthiness, but had an overpowering cherry taste. Next week, we are testing ourselves and the wine industry. Does price equal quality? We are going to taste three very different-priced Pinot Noirs and see if price equals enjoyment.
