L'histoire retient souvent le nom de James Marshall comme celui du premier découvreur d'or en Californie, en janvier 1848. Pourtant, un Français venu du Beaujolais, Claude Chana, a lui aussi joué un rôle décisif dans cette épopée. Ce tonnelier émigré, presque inconnu en France, fut l'un des tout premiers à trouver de l'or dans le lit des rivières californiennes, lançant malgré lui une des plus grandes aventures du XIXe siècle.Du Beaujolais à l'AmériqueClaude Chana naît en 1811 à Saint-Amand-en-Puisaye, dans une modeste famille de vignerons. Artisan tonnelier, il rêve d'horizons plus larges. Comme beaucoup d'Européens à l'époque, il quitte la France pour tenter sa chance en Amérique. Il débarque d'abord à La Nouvelle-Orléans, avant de gagner la côte Ouest, encore territoire mexicain, où il s'installe dans la vallée de Sacramento. En 1846, il rejoint la petite colonie de Sutter's Fort, fondée par l'immigrant suisse John Sutter.La découverte de 1848Quelques mois après la découverte officielle d'or par Marshall à Coloma, Chana décide, au printemps 1848, d'explorer les environs de l'actuelle Auburn, dans la Sierra Nevada. En lavant du gravier dans le ruisseau Bear River, il aperçoit des paillettes scintillantes : de l'or pur. Il en ramasse plusieurs onces et en montre la preuve à Sutter. Très vite, la nouvelle se répand comme une traînée de poudre.Sa découverte déclenche une véritable ruée vers l'or locale, attirant des centaines de chercheurs. L'endroit sera baptisé Auburn, aujourd'hui une ville de Californie qui revendique Claude Chana comme son fondateur.Un destin modeste, une mémoire durableContrairement à d'autres, Chana ne fera pas fortune. Homme discret, il préfère s'établir dans la région, devenir éleveur et vigneron, et contribuer à bâtir la jeune communauté californienne. Il meurt en 1882, presque oublié des siens.Pourtant, aux États-Unis, son nom figure toujours parmi les pionniers de la ruée vers l'or. Une statue monumentale lui rend hommage à Auburn : elle représente le Français, pan d'or à la main, scrutant la rivière.Un pionnier méconnuClaude Chana incarne l'esprit d'aventure et de curiosité de ces migrants anonymes qui ont façonné le monde moderne. Famed Chef Jonathan Waxman came to Wine Talks through a mutual friend who we lost last year to cancer; Melvin Masters was a one-of-a-kind character in the wine trade and Jonathans partner in the famed Jams Restaruarant.    On a recent trip to Nashville, Tennessee, I insisted that the group I was with follow me to Roberts Western (most probably the last true country bar in Nashville), for a fried bologna sandwich. They looked at me crosseyed and followed blindly. You see, we had just finished dinner and everyone had overeaten and were tired. But I knew if I didn't go the first night we were there, I wouldn't make it.  Pray tell, why would one do that? Well, if Jonathan Waxman says the first thing he did was take famed Italian Chef Giada De Laurentiis to experience the $5 fried bologna sandwich. Who shouldn't? The way we talk about wine is important. Language is a living, evolving thing that changes to suit shifting whims and needs. That means that some wine terms become less, er, useful over time. In other words, they need to get the axe. There are so many reasons a term could be considered outdated. It might be offensive—for instance, why are some wines described as "masculine" and others "feminine"? But terms may also not be precise enough, or not inclusive enough. Sometimes they just plain evoke weird reactions.  So, too, thinks writer-at-Large Reggie Solomon, our reviewer for a wide range of wines including those from the Loire Valley, Beaujolais, Southern Coastal Spain, Israel, Asia, and more. We are changing our show tonight, but we still have you covered with wine information.Tonight we are going to taste and learn about Gamay.Gamay is known for being a light-body and fruit-forward wine with low tannins. It typically has cherry and raspberry fruit flavors, and earthy and floral notes. Acid is typically medium to high.Duke of Burgundy banned Gamay in 1395 because he believed it to be an inferior wine, but it remained and continued to be grown in the southern Burgundy region of Beaujolais. This is the most famous region producing Gamay, and now is responsible for about 75% of all of the Gamay wine in the world. Our wine tonight comes from the Loire Valley where is it also grown in the central regions of the Loire. It is also being grown in parts of Canada, Oregon, and New Zealand. Gamay pairs well with soft cheeses, chicken, turkey, salmon, and mushroom dishes. Serve slightly chilled at 55-60 degrees.Here are our three wines for tonight.Tonight, we are enjoying:2021 Le Rouge E'Ici et E'Ailleurs Saint Pourcain, Loire Valley. I purchased online and you can still find it for $18.00. It is produced by Domaine des Berioles. The winery is biodynamic and it is made with 100% Gamay grapes. It has 12.5% alcohol.This wine was average, I liked it but nothing I would go out an purchase again. We both rated it a 3. I did like the earthiness, but had an overpowering cherry taste. Next week, we are testing ourselves and the wine industry. Does price equal quality? We are going to taste three very different-priced Pinot Noirs and see if price equals enjoyment.

Direction le sud…le Lavandou Pour se rafraichir non pas dans la verdure comme hier, mais les pieds dans l'eau. On part hôtel mythique posé sur les Roches à coté de la plage d'Aiguebelle ! son nom : les Roches, tout simplement : Après 10 ans de Travaux il rouvre enfin ce we ! Si je dis enfin c'est parce que c'est une institution dans le sud cet hôtel. Il ressemble à un navire, accroché aux calanques. Il a tellement rayonné que les hôtels des Roches Blanches à Cassis et des Roches Rouges à Saint-Raphaël lui doivent surement beaucoup. Mais il a aussi rayonné par son histoire. Tout a débuté dans les années 30 – a l'époque il s'appelait les “Roches fleuries”- c'est un lieu de villégiature estivale bien raffiné. Quelques noms ? Humphrey Bogart et Lauren Bacall, Jean Cocteau, Christian Dior, Winston Churchill. Le prix Nobel de littérature allemand Thomas Mann, Lui il s'y réfugie avec sa famille en 1933 pour fuir le nazisme. Et puis 2 décennies plus tard, en 57 c'est Françoise Sagan qui va y poser ses valises pendant le tournage de « Bonjour Tristesse » au Lavandou Vous dites que c'est un hôtel navire … c'est-à-dire ? Tout donne sur l'eau. D'où cette atmosphère un peu transatlantique : chacune des chambres, la terrasse, le bar, le restaurant de l'oursin. SI vous êtes de grands gastronomes, la cuisine d'Antoine Gras est essentiellement à base de poissons et de langouste mais la c'est sur le restaurant du rooftop « la Langouste sur le toit ». La vue sur les Iles d'or est juste époustouflante. D'ailleurs Je vous conseille de vous en approcher de ses iles en Ludik. C'est l'école de voile du Lavandou qui propose ca : un dériveur pour naviguer a 8… au ras de l'eau. Alors plusieurs options pour découvrir Les Roches ; vous pouvez y dormir- relais et châteaux-ou simplement y prendre un verre, diner sinon ils ont aussi sur la plage d'Aiguebelle un charmant petit hôtel- restaurant : les pieds dans le sable : l'hôtel de la plage, à 115 euros la nuit. Évidemment, le rosé coche les cases, mais il y existe des alternatives, si vous voulez changer un peu. Tout d'abord, ne pas hésiter à mettre les vins, même rouges au frigo, on les sert souvent trop chauds. Et puisqu'on parle de vins rouges, voilà quelques idées :  - Gamay de Loire (cépage du Beaujolais), vinifiés sur le fruit, très croquant et juteux - Dans la Loire encore, le délicieux pineau d'Aunis, cépage local qui donne des vins poivrés et épicés/ Parfait pour les grillades. La tendance depuis quelques années : les rouges légers Des rouges qui assument de se boire comme des rosés, donc frais : on en trouve chez Chapoutier, Gérard Bertrand ou encore au château Malleret à Bordeaux J'aime leur côté digeste et canaille qui ne se prend pas la tête. C'est du fruit, du fruit et encore du fruit… plus structurés que la plupart des rosés. Ce ne sont pas des vins de garde, ils assument ce côté simple et immédiat.  Et puis, évidemment, les incontournables beaujolais, je parlais du gamay…un beaujolais-village bien vinifié, c'est délicieux aussi. Enfin, pour ces vins estivaux, n'hésitez pas à opter pour les « bib ». De nombreux bon vignerons s'y sont mis, d'un point de vue pratique et surtout environnemental, il n'y a pas photo !! It's a natural pairing with meals and accompanies almost every gathering with friends and family.I like wine, but like most people in France, I'm an amateur. I know what I like and what I don't like. But I'm taking more of an interest in wine to deepen my knowledge. So I'm fortunate to have friends like Preston Mohr, who's an expert on wine but also knows how to communicate and explain wine in simple terms, without any pretense, so we can all get more enjoyment out of it. I invited Preston into my Paris kitchen to talk about French wines — what to look for when buying French wine, how to order wine without feeling sheepish in a restaurant or café, and what to do if the wine you've been served isn't to your liking. (Which was discussed in the comments here.)We also chatted about how the French wine world has changed over the last few years, whether Beaujolais should be avoided, as well as his favorite wine bars in Paris.Originally from Minnesota, Preston has called Paris home for the last twenty years. On Dish this week, Nick and Angela welcome a Grammy Award winning musician to the table. Gregory Porter is a much-loved jazz and soul singer who lives in Bakersfield, California with his wife and two sons. Porter rose to prominence in 2013 with the release of his third album, Liquid Spirit, which achieved huge commercial success and saw him win his first of two Grammy Awards. More recently, Gregory appeared on our TV screens as a giant Dressed Crab on The Masked Singer, finishing as runner-up.  Alongside his impressive back catalogue of releases, Porter's live shows come highly recommended, powered by his rich, soulful and emotional vocals. He joins Nick and Angela ahead of his upcoming UK tour that includes four nights at London's Royal Albert Hall. Nick, Angela and Gregory enjoy a Cabernario No. 8 as Angela pulls out all the stops serving Steak à l'échalote, a recipe by Claude Bosi, with two types of chips. To accompany their steaks, they have the choice of three sauces: a Beaujolais, a Béarnaise or a Café de Paris-style butter.  Gregory hosts his own cooking show, The Porterhouse, and brings fantastic culinary knowledge and appreciation to this episode. He shares his love of hosting big, big parties, shows plenty of love for touring life in the UK and reveals what life was like inside that heavy Dressed Crab head. Ami proche de Georges Brassens, l'écrivain René Fallet a presque disparu des librairies. Né en 1927, René Fallet devient journaliste en 1945, sous les conseils du célèbre écrivain Blaise Cendrars qui a aimé ses premiers poèmes. Nombreux sont ses romans qui ont inspiré des films, parmi lesquels : « Le Triporteur » (1957) avec Darry Cowl, « Le beaujolais nouveau est arrivé » (1978) de Jean-Luc Voulfow et le plus connu : « La Soupe aux choux » (1981) de Jean Girault avec Louis de Funès, Jean Carmet et Jacques Villeret.
