But it's a story with a future and this afternoon the next phase of that story - Bellfield's Big Build - will be launched with a party when we'll learn how we all as a community can be involved through a share offering. But what does that mean? In order to find out - and help those who can't attend, Hazel Darwin-Clements went along to meet Ian Cooke, Secretary of Action Porty and the Bellfield Operations Board, and Alison Jeffrey, Volunteer Co-ordinator at Bellfield. Their target is an ambitious one - to raise £200,000 from the community to refurbish the Celebration Hall and make it more accessible, flexible and warm. They believe there's an unmet demand in Portobello for more community spaces. Living in Edinburgh, I often forget that I see a UNESCO Heritage site every morning rising above the River Forth. I catch a train across the Forth Road Bridge to Fyfe, drive past it through South Queensferry or simply see it in the distance as I walk the dog in Portobello. I remember the first time I saw it I was in absolute awe of the huge iconic structure, wondering how on earth was it built.  When I walk under it, I find the sounds otherworldly. A sense of a strange noise building in the distance as the sound of the train travels along long the 2.5 km bridge. I sometimes find myself looking at the sky because my ears are tricked into believing they are hearing an aeroplane rather than a train. When you've worked with award-winning brands in the world of beer and whisky delivering digital communication and paid media strategies, you're likely to know a thing or two about the world of marketing. And today's guest, has done just that. Looking back at the last 12 months, Scottish brewery Vault City can toast another incredible year. They released 90 beers in total—up from 84 in 2023. This included 76 sours, 11 imperial stouts, two barley wines, and a Radler.  And after four years of brewing in Portobello, in 2025 they are moving to their new forever home in the months ahead. Helping spread the good word of all things Vault City is Richard Wardrop, a marketing manager with more than a decade's experience on both agency side and in-house.In his career to-date he has received recognition for ‘Best Use of Social' and ‘Best Low Budget Campaign' at The Herald Digital Awards and UK Social Media Communications Awards.Based in Scotland, he is currently part of the team at Vault City Brewing, the UK's largest sour beer producer.Here he is responsible for all elements of brand, NPD, marketing and comms. Portobello mushrooms are so meaty in texture that they are often thought of as the vegetarian answer to steak. In other words, serve this as main course or side dish. Easy as is, this can be made easier still: Substitute classic pesto, made with basil, from the jar.If you do have time, there is a way to enhance this already lovely combination. Add a dozen or so roasted shallots to the platter.

These are good right out of the oven.Or make them several hours ahead for serving at a buffet. They also make a great sandwich filling.
