Angus is so old a friend that we can't remember exactly where we met but we're 99% sure it was at a bar show or get-together of some kind, probably in London, where he, a bartender from Oxford, was in on the ground floor of what we can now look back - after thirty years - to confirm was the birth of the Second Golden Age of cocktails. He and I were the two first people from the bar biz to have "Global Brand Ambassador" on our business cards (he for Tanqueray, me for Bols), and our careers have had significant parallels and overlaps ever since. He's written numerous articles, taught at every bar show in the world and hasn't written a book. (Yet). He also just stepped down from being BCB (global)'s first-ever Director of Education, having taken the already-stellar BCB seminar program to new heights. He's a terrific public speaker, a deep thinker, funny and self-deprecating as only an Englishman can be - and he loves all things liquor and bars to distraction. In a move we can all get behind, this living legend is back running bars, as Director of Bars for the Capella luxury resort in Taipei, and as we were both in Athens for the Bar Show (he to give a great seminar on Talking In Bars, me to carry my wife Elayne's bags), I decided we had to sit down and catch up. That's what our shuttle driver called it. We're in Boston this week for the New England Restaurant and Bar Show along with many chefs, restaurateurs, and friends from front and back of house and personalities from the foodservice and beverage world. I hopped on the Culinary Stage with Chef Andy Teixeira of Newport Vineyards in Rhode Island and chatted on the show floor with an industry leader. Before that, I caught up with longtime friend Dante Bellini, a filmmaker from Rhode Island who just completed a documentary on the Malassadas - a delicious pastry best described as Fair fried dough's Mediterranean cousin - Portuguese to be precise. I just spoke at the first industry trade show since the pandemic. It was the Nightclub and Bar Show in Las Vegas, Nevada at the end of June 2021. I loved being back on the road and being on stage with a live audience. So on this episode of The Restaurant Prosperity Formula, I talk about the lessons we've learned since March 2020, how they'll shape restaurants for the future and what I see as the outlook for the restaurant and hospitality industry. For example, we learned a smaller restaurant with a smaller menu is better and nimbler. As for the future, you're going to see a lot of the restaurants that closed down reopened by any Tom, Dick or Harry, and the competition will come back. We are in a new normal and restaurant owners who adapt and make the best of it will be the strongest in the future.
