This year Walmart has a store brand of plant starts that are $2.48, which is more than half the price of the other name brand. The selection isn't large, but if you want to grow something without having to spend too much this is a great option. Walmart also marks plants down on Tuesday and Friday, I go in on Wednesdays. This week I got a pot with two jalapeno plants that are over 2' tall with flowers and some peppers on them for $4, marked down from $12, and a few weeks ago I found some tomato starts for $1. Today I'm fired up from the Spring Workshop and a pretty fantastic concert we had yesterday with my choir in Cookeville, tn. Weekly Shopping Report I made a trip on Tuesday to Food City for a couple of bags of flour and a 22 lb. bag of Meow Mix (that our cats ask for by name); and Walgreens for the goop I put in my eye at night (“Stye”) so it doesn't dry out. Only the first Tuesday in the month is Walgreens' “senior day,” when Grumpy Old Men (and women) get a discount. For our usual trip, the weather gave us a clear stretch amidst the bands of heavy rain on Thursday. Most people must have decided to wait, as there was little traffic. Dollar Tree was first. They're finally out of the big non-carbonated Monsters I was getting, but there were plenty of other choices. Stock levels throughout the store looked good. Sonia has been able to find some craft items in there lately. We also went to Hobby Lobby for some acrylic paint. We didn't walk around the whole store looking at other stock, but I didn't see empty sections or anything else odd. Things may change with the tariffs on Dragon Country, but not yet. They were “normal-busy” with a short wait to check out. The online price of a 2x4x8 stud at Home Depot is still $3.85. Aldi was last. We found everything we wanted. Staple prices were: bread (20 oz. white): $1.39; eggs: $4.97; whole milk: $2.92; heavy cream: $5.29; OJ: $4.09; butter: $3.49 (-); bacon: $3.99; potatoes: $4.39; sugar: $2.99; flour: $2.35; and 80% ground beef: $4.59. Untainted regular gasoline at Weigels is still $3.59/gallon. Operation Independence I had a great conversation with John Pugliano this week that's helping bring clarity to the next big project here at the Holler. I'm still sorting out the details, but it's one of those moments where a few things click into place, and you realize what really needs to happen next. Hint: It starts with some RV spots. Glenn's Rum – He always shows up with something we've never tried. This year? It was memorable. Let's just leave it at that. Carnivore Scotch Duck Eggs – Y'all, the food. This isn't your standard workshop fare. It's duck eggs. It's bacon. It's food that fuels you for real work. Alan Booker measuring brix – Alan showed me how to measure brix in my plants, gave me a compliment, then called my leaves "aphid food." And you know what? He was right. Patrick Roehrman's precision strike – My one-of-a-kind MT Knives kitchen knife got used to slice a carpenter bee out of the air. No, really. While it was flying. Emily Zanotti Skyles and the plantain spit war – She left fired up about wild edibles. Her kids? They took that knowledge and turned it into backyard ammo. The greenhouse swim spa debate – We planned to function-stack a greenhouse over the swim spa… and ended up realizing Nicole just needs to bury her electrical lines already. Ian's moment – On his way home, Ian stopped by his family land and decided: it's time. That's the kind of clarity these weekends bring. John Pugliano and Meshtastic – He helped all of us finally understand how Meshtastic works—and why it matters. Leos' pop-up blacksmithing – Did I mention we had a surprise forge session? Because of course we did. Glenn's hamburgers – Day one. Fire. Flavor. No notes. Gavin and the birds – Gavin wandered through the holler like a nature monk with binoculars, pointing out the birds we miss every day. Jack Spirko's bioreactor breakthrough – Sometimes the right fencing and weed cloth are all it takes to spark a better compost design. Community eggs – Between scotch eggs, scrambles, and three separate egg suppliers, we fed the holler crew with ease—and had leftovers. Late-night wrestling matches – You know who you are. I won't name names… this time. Pocket door rescues – Multiple saves were made, but one prepper decided to handle it solo. Mad respect. The sea sponges – If you know, you know. And finally—YOU – The participants. Every single person showed up not just to learn, but to help each other figure out their next chapter. So why haven't you taken your shot? Is it the money? The time? The fear of people? Or do you just think you're not good enough? If it is that last one, take a good hard look at that because you are. You are good enough. You deserve to build your dream. And you can do it - it may look different when you get there than you thought it would, but you can go further - but it takes hard work, strong community and it takes being a DOER. And it all started with that one, poorly executed episode. A single decision. A ton of feedback from yall. And encouragement when things got tennous. Episode 1000 is tomorrow and I am excited to share it with Jack Spirko fo the Survival Podcast and John Willis of Special Operations Equipment. But today, I'd like to share with you what my life was like in May of 2016. I was founder and president of a half million to million dollar nonprofit with a mission to equip free market economists in the public policy world with better story telling skills and marketing departments (TALK ABOUT NICHE) I had been homesteading for 9 years and was selling my extra vegetables and craft roasted coffee at the farmers market on saturdays I flew for work so much that I had earned a companion pass on Southwest - look that up I had 1 rental property in Nashville I was deeply unhappy, finding myself in a role where my time was not my own, my primary job was to raise money so that I could pay people to train other people who were not as good of trainers as I was. I was also HR manager, and operations vp, and cfo in function which meant …. Paperwork. Lots and lots of paperwork. After a trip, you could not get me out of the soil if you tried I drank too much A typical day on the homestead started early with some work outside and a cup of coffee. I would then transition into computer work and meetings, frantically tossing in a load of laundry or pulling something out of the freezer for dinner as I went. If there was a crisis, I was able to flew, but then would be looking at a late night of catch up for work. There were no days off. Not ever. The role I was in required that I be constantly available to respond to emails and text messages. It was so bad then when I started turning off my phone from 7-9pm on Mondays, one of the people who interacted with me actually had the gall to explain that because she was on the west coast and her day was not yet done, it was unreasonable for me to not be available from 7-9pm. And she was supported in this from the people who were responsible for about half to ¾ of my budget. The segment operation independence? That stemmed from this situation. Because my area of Focus from my personal life strategic plan was to “Have enough local, ongoing revenue to support my life.” It has been adjusted to regenerative ongoing revenue nine years later, but you get the point. I was solving for being too dependent on one source of income so that I could NOT say no even though I was running my own organization. I became soured on the whole nonprofit world as well as the public policy one because I saw the inherent flaw in trying to fix the system from within the system and over the next few years became convinced that the only way for freedom to grow was through individual action. Starting with myself. In 2017 - I broke out of the system. A typical day was to work for the nonprofit, unpaid so that the people there could use me for creating value so that they could continue it on. They failed at that. A sign the nonprofit should never have existed really. Main Topic: Seed Starting 4 Keys to Successful Seedlings Light, Light, Light A window isn't going to cut it—this is the #1 reason for failure. Use proper, full-spectrum grow lights (like Burrina lights) positioned uncomfortably close to seedlings. Keep lights on 12-16 hours per day for strong, stocky plants. If you don't have grow lights, be prepared for leggy seedlings. Soil Temperature Matters Too cold? Bad germination and weak seedlings. Ideal temp: 65-85 for many plants Use a seed heat mat (updated links below) or place trays in a warm spot like on top of the fridge. Consistent Moisture—Not Overwatering Keep soil evenly moist, not soggy. Bottom watering is best—use trays with no holes to create a DIY water table. Overwatering leads to weak roots and damping off. Underwatering even once can stunt growth for the life of the plant Potting Mix & Soil Biology If you're new, just buy a good quality seed-starting mix. Look for fine-textured, bark-free soil. Pro tip: Add a quart of soil from a well-run local garden to introduce beneficial microbes and integrate local soil biology. Advanced growers: Make your own with compost, biochar, worm castings, and indigenous microorganisms (IMO). Compost tea made from local soil is a fantastic boost. Soil Mix Don't mix your own unless you know what you're doing (WRONG ADVICE) Experiment while setting yourself up for success—but start with a 50/50 blend before committing fully. Learn from my mistakes Trays & Containers Deep pots (3-4 inches) = Stronger roots Plastic trays with no drainage holes work great for bottom watering. Solo cups are cheap and effective (poke a few drainage holes). Peat pucks: Can work, but I don't use them. Peat pots: Just don't. Choosing Seeds: Heirloom vs. Hybrid It's all okay! Pick what works for your system. Good seedling choices: Tomatoes, peppers, kale, chard, broccoli, lettuce, loofahs. Less ideal: Squash, cucumbers (direct sow if possible). Don't start indoors: Peas, beans, carrots, and most root crops. First Year: Choose 1-2 things, experiment, and don't stress if you buy starts. Keep going! Troubleshooting Germination: The Paper Towel Trick Use damp paper towels in a plastic bag to check seed viability before planting. Keeping Costs Down (While Buying Quality Equipment) Source second-hand greenhouse supplies from local growers. Attend local seed swaps (like the one here in February) for high-quality, adapted seeds. My Thoughts On The Self Reliance Festival | episode 255 Join me today as I talk about my thoughts on the self reliance festival. My family and I just returned from this year's self-reliance festival in Camden Tennessee at the SOE compound. We loved it. It was our first time going but definitely not our last. There were so many great speakers and demos going on there. There's no way you could have left there without a lot more knowledge and being hyped to go out there and do things. I was very excited to see some old faces and meet some new ones. I have met Jack Spirko and John Willis before but it has been more than 10 years. I was still drinking when I went to Jack's place so that's at least more than 11 years ago. Camping was fun as always. This was my daughter's second time camping and she loved it. There were so many kids for her to play with while we were there she had an absolute blast. The real hero of the festival was Toolman Tim's wife who put on the Self Reliance Kids program. She did an amazing job.

For this is episode 3, 556 of the survival podcast. We're bringing back on one of my favorite people to interview Dr. Steven Lewis of green wisdom health. I don't think he's been with us since about 2019. If I remember right somewhere in that range, and it's good to have him back on today. We're going to be talking about stress, anxiety, and depression and how, no, it's. Not all in your head. There's a variety of environmental and nutritional stressors that are actually causing stress. when you have stress, then maybe you have anxiety. And then maybe when you're stressed out and have anxiety. Maybe you get depressed, so you might feel it in your head some, but there are things that you can do to alleviate this and, Dr. Lewis will be with us in just a minute. Next up today, you know, we're going to talk about stress and one of those things that stresses people out is money and having your money constantly erode. That'll stress you out. Well, you know, I don't ever recommend going in all in on anything, but I'll tell you, I've been recommending alternative investments for as long as I've done this show. Anyway, with that, let's bring Dr lewis back on to the survival podcast. Steven, man, welcome to the show. Hey, it's good to be back. Can you just start out with, instead of our subject today, kind of your origin story. Before you decided to go to chiropractic school and then kind of go down this whole world of nutrition with those studies, what was your life like before that? What led you in that direction to choose this as a profession? Well, my parents always took us to the chiropractor first and then an osteopath or MB. Later, if the chiropractor suggested it, I always thought there should be a very symbiotic relationship between them. And that's mostly true now, but, a chiropractor talked me into being a chiropractor and it's been a really good road, because I couldn't handle the blood and guts. I admired the medical profession, but I've seen so many people get well. by taking supplements. And I know the FDA says, it can't help a symptom or cure a disease, but still your body has to have the basics just to work with and our food doesn't have it. And that's why I kind of really admire what you're doing. You're teaching people to grow more nutritious food. And you tell them it's not the soil, it's the microorganism that's, fixing the nitrogen, for example. we're going to talk about microorganisms today and how important that is in your brain health, stress, anxiety, depression, your musculoskeletal health. early on in my chiropractic career, I was really busy. And I noticed that when I put people on nutrients to stop the musculoskeletal inflammation, Then say well God I see better. I'm not as stressed or my husband's nicer to me Which meant I'm not as irritable it all works together structure function nerve supply nutrition and choosing a happy attitude. I think right now people are experiencing more anxiety more depression. but they're also dealing with kind of, as you alluded to, like, and probably part of this is like gut inflammation and you're a chiropractor. So I would imagine muscular skeletal issues or something you'd be looking at. how are all these challenges interconnected? Cause I think people tend to like make these compartmentalized, like anxiety and depressions over here. And that's exactly what pharmaceutical companies want. Cause then they can tell you, right. Take this drug that's on the TV where the mentally, mentally, depressed person is dancing through a field. And then when your hands twitch, take this other drug to go with that first drug.

Home Depot's price on it was actually slightly cheaper than Amazon's. They also had the blacktop patching "stuff" we needed for a spot on the driveway; sometimes they haven't had it. Aldi: They were busy on all three days, with multiple checkout lines going. We found everything we wanted except for cantaloupes, as they were few and miserable. I found a couple of better ones today. Frugality Tip From Christie My frugal tip is not a money tip, it's a time tip Watering trees: Hubby and I spent way too much time watering new trees around our property. We found some cheap five gallon buckets, drilled four holes in the bottom using his smallest drill bit. Now to water a tree, we put the bucket beside the tree on the up side if it's on a hill and fill the bucket up and walk away. Let the bucket do the work. The water slowly drains out of the bucket into the ground to the roots where you want the water, not running off because the hose delivers the water too fast. Other meat choices looked a little sparse, with no pork butts and not a lot of ribs; fewer trays of ground beef as well. Lunch meat remains in good supply. Over in Produce, there was a big box of cantaloupe, but they all looked sorry, so we passed on those. The bananas (and other fruits and Bidens) looked good. Operation Independence Chicken Processing and the PURGE Main topic of the Show: Seventeen years ago, when I came to the Holler Homestead, some of the first things we did to the place was get set up to thrive through power outages. Back then they were rare and often repaired within an hour or two but growing up in a place where ice storms blew through every few years and no one was really set up for them - well that had set a foundation for things I wanted to make certain were handled no matter where I chose to live. So much has changed from the early days, including how much time it takes to get things up and running when the power goes out, frequency of power outages, and how gracefully we weather these times. Yesterday, I sold off two inverters that I had. They were intended to turn my car into a generator in the event of a power outage so that I could cool things down in my fridges and freezers and not have to panic pressure can all the meats here. As I watched them find a new home, I realized that we have not done a show with tips on how to thrive (not just survive) through power outages. Especially the kind that last a long time. This show is for folks who are on grid but who want to do better when the grid goes down. Embrace the suck (Which is that you will be putting more effort into comfort during a power outage) Emotional boosts: rechargeable light bulbs, lanterns, hot coco and a way to make it, story time or other entertainment, having a known plan Have a plan - make sure everyone knows the plan and their roles, be cross trained, bonus points if it is documented (Mine isn't) Tips Reduce what you cool or heat (Why I have a wood stove) Use what you have: camping supplies, the propane grill outside, your tent for sleeping in the summer at night, etc. Inverter/generator is a game changer BUT While they are in use take everything from the fridge that you plan to use for the day and keep it in a small cooler Countertop ice maker is a game changer Consolidate fridges and freezers so they are full Use paper plates and dish bins bins and wash 1-2 times a day WHILE IT IS STILL LIGHT OUT Top off battery operated devices while driving if you will be driving (Cigarette chargers with multiple USB Ports). Bonus points if you have power bricks Fast to cook meals, or low and slow in an insulated bin (or rock pot) What can you function stack? Woodstove is a crockpot and water heater Some things to consider for long term resilience What do you have that ONLY works with electricity and which of these things need to be handled to keep everyone thriving? (HVAC, Cooking, Drying, Lighting, Internet Equipment, Entertainment, Medical Equipment, Animal Habitat like aquariums or ponds) Can you shift to an alternative? (Gas, Wood, Camping Gear, Regenerative technology, Hard copies, do without) Can you use a battery supply for the things that you NEED? (Built in battery (A rechargeable device), Power bricks, battery bank, solar device) Can you find a way to regenerate the things that take power? (Hydro, wind, solar, gases, wood, gravity, hooking up a bike, composting. Etc. A word on communications. Mostly make it fun. Make it a great week! GUYS! The owner visited us to see our proposed site on Thursday, so our first stop on Friday was to his lot, to finalize details and make a deposit. We'll be getting a larger (8'x10') shed, for at least $700 less than Home Depot's price on an 8'x8' model. Home Depot our next stop. They've got LOTS of batteries; I grabbed an 8-pack of AA lithium which will be for a label printer that won't get used a lot, and would likely be destroyed by alkaline leakage. A 2x4x8 is $3.73. Aldi was last. It was also rather busy. We found everything we wanted. A few prices were actually lower. Staples were: bread (20 oz. white): 1.29; eggs: $2.05; whole milk: $2.83; heavy cream: $5.29; OJ: $3.29; butter: $3.69; bacon: $3.99 (-); potatoes: $3.99; sugar: $2.99 (-); flour: $2.35; and 80% lean ground beef: $4.09. A gallon of untainted regular gasoline remains at $3.599. Operation Independence What is the emergency fund for and what do you do after using it? Main topic of the Show: What is Next for LFTN It happened again. We turned a corner at the LFTN workshop. I kicked off the event with what was supposed to be a talk about using the #my3things method to move forward in life. But guys, I was BEAT. Like more beat that I have ever been. When I stepped in front of everyone to talk I saw much of the same fatigue on so many faces that I stopped focusing on the prepared notes and started a conversation. By then end of our conversation I realized something: You are no good to anyone if you put yourself in the hospital. Period. We have spent years helping people stuck in the throes of analysis paralysis just get started and then refine. We have spent years helping people who are having motivation problems, maybe a little depression or other things that keep them from persevering. We have talked about all the ways you can look at an impossible list, set a really big goal, then go for it and keep going every. Single. Day. We have even talked about adding your personal health, relationships, and other really important things to your daily goals so that you build a happy life. Why? Because the problem most of us face as we begin our walk toward independence is not what other people think about us. It isn;t if a spouse is on board or not. It isnt even about squeezing that last nickel out of your day to finally put aside toward something better. It is the broken promises to ourselves that must change. We tell ourselves stories like: I will eat on plan, or I will do this thing by that time. Or I will by GUM conquer laundry mountain tomorrow. Always tomorrow.Then tomorrow comes and it is so tempting to just not do what we set out to do even if we KNOW we feel better if we prioritize what we already promised ourselves (and sometimes others) we would do. The pressure of the urgent will overpower the prioritization of the urgent if you let it. And that is what you were programmed to do. Programmed by the bell at school. By asking for bathroom breaks. By seeking permission. Yes a corner was turned at the spring workshop, as it usually is. LFTN has grown as a community. In fact, someone told me they wished they had a term for the Greater TSP/LFTN/SOE/DELINQUENTS community because we all overlap and we all share core values. I just call it The Community if that helps. That way when another community of doers appears, we dont have to rebrand. The Community as in the Real Community - not a fake one that has been thrust upon us by outside forces but a group of people we can work with. Who understand the difference between friendly competition and toxic competition. Who DO instead of take. Yes, LFTN has brown beyond the timid little group of women who decided to step outside expectations and start doing what people told us we couldn't or shouldn't do. We've grown as mentors, and leaders, and as supporters. I've come to see that homesteads dont do well without women and that many of the best in this space will never be seen because they think that their “small” work on the homestead is nothing. But they are the heart and sole of the homesteading network. And that is how this homesteading podcast started. It started because I was doing things on my homestead that men are supposed to do and laughing with another friend of mine about how we would have to adjust our approach based on such things as: oversized (for us) tools. Center of gravity differences on big projects. Not having grown up building things and not knowing what we don't know. In the case of my friend, her husband works full time and she takes care of the livestock and simply can't always wait for a helping hand. In my case, I was both earning the income and needing to get infrastructure and processes in place to live what I knew would be in better concert with nature, producing food and peace from this small piece of land. And here I am a decade later, helping to bring more people into our Community. Connecting folks with the skills they need to start their own homesteads. Like processing chickens or canning. But the advice has not changed much. If we want something better, we have to figure out how to make that happen for ourselves. We have to move forward no matter what. We have to stop breaking the most important promises we have made to ourselves and just do it. But because we have grown as a community, we have changed too. No longer is the primary demon inaction. No no no. It turns out that overaction is a bigger problem for us now that we have surrounded ourselves with doers. There is always more we can do and we need a new skill: choosing to do the things that are most important. That move ourselves and our families forward. Whether your family be biological or chosen. Most of you missed my talk at LFTN24. Members, you will get it in the portal in about a month. We talked about having three areas of focus to move me toward my personal vision: Health, Wealth, Community. Three. Wealth is the thing that most of us hesitate to start building. It is the reason my advice is usually to get off your ass and try. But you have all grown beyond that. And so have I. Now it is time to get back on your ass and prioritize your three most important things. For me, my health has suffered as a result of delivering on my q1 and q2 promises. That is why I took last week all the way off. While catching up on home and homestead tasks, it was clear we had turned a very important corner. We have grown to where more action does not build more health, wealth, and community. Focusing more effort on fewer things does. Building back time to keep the promises we make to ourselves (I'm looking at you my “quit smokers” and “more workouts” people) in service of our long-term life vision is important. Becoming more ruthless about what you might catch from investing time in something - like the news or a toxic relationship - is important. In short, when we started 8 years ago, we were like a tomato seedling pushing through the soil and putting on leaves. Our flourishing and future depend on pruning to allow for airflow and so we can focus our resources on the most important vines. What does this mean for LFTN: We are still here and will go back to three shows (and maybe 2 in the future) a week. I will not be speaking at events so much because the cost of being gone from the homestead and from all of you is higher than most speaker fees. In short, we are honing in on the things that bring true prosperity and happiness. The economy is looking really sketchy, what if people can't afford my product? I may look stupid if I try that and it doesn't work. What if no one cares? What if I cant do it? What if I cant make enough money to pay for amy family? What if I move and real estate crashes and I end up upside down in my mortgage? What if we go to war? What if the economy crashes? What if I am not good enough. What if I am not good enough? WHAT IF IM NOT GOOD ENOUGH? Ever single thing that has moved me ahead in life. Every business that has succeeded. Every event that has sold out. Every big name speaker I've booked. Every time I have attempted to grow. And every time I have not gone as far as I wished, has involved taking a risk. An action. A decision. And lots of focus and work. Nothing has come easy but imagin how things would be different if I had gone the more steady, conservative path? In the late 90s, I would have become a school teacher, despite the fact I could see the schools systems are broken training grounds for generations of kids to NOT learn the skills they will need in our modern future. Impossible to change from within. In the early aughts, what if I hadn't quit my relatively low paying job at a software and training start up? What if I handn't jumped at the chance to have that mortgaged home and rent out rooms to make ends meet? (Rental business, side hustles painting and cleaning, website development, coaching, Public Policy Career). In 2016, what if I had stayed with my secure income, not started this podcast, not sold my roasted beans at the farmers market for too little money? (Rentals added some stability, newspaper, egg sales, facilitation, story coaching, websites, speaking engagements) In 2017, what if I hadn't taken my last $400 to go to Jack Spirko's? (Kickstarter Holler Roast, membership, facilitation, processing classes, rentals) And 2018, the leap of faith into the LFTN Spring Workshop when my land wasn't ready? (Workshop 7 will be sold out this week if it isn't already) 2019: HELP THE REDNECK 2020: BUY THE BEANS, UNLOOSE THE GOOSE 2021: SRF 2022: UPGRADE THE ROASTER ON SPEC 2023: GET OUT TO EVENTS, SELL THE COFFEE, LAUNCH WEBINAR CENTER All of this has taken risk and then making it work. Some of if has been more successful than others. None of it abject failure. And we learned a few things along the way. On risk taking: Spreadsheets dont lie - go in with open eyes, know your best and worst cases. The truth usually falls in the middle If you are passionate about making it happen, FOR REALSIES, your risk is lower than it looks Community and Underground Communities matter the most, this is why there are networking groups of all kinds Only YOUR opinion really matters when weighing if you should or should not do something The Small Daily Decisions Matter Most On Making It Work Things often look different than you thought Most people think they are not good enough, the ones who succeed don't let that voice win - it is a choice It is OK to stop doing things that dont work for you for any reason (EGGS) Your World, Your Rules, Your Results Forgiveness The true question: What do you really want? Are you talking about the latest unstarted idea with worry an anxiety to have something to talk about, or do you really want to do it? While he said there were pockets of strength for the firm, Brown said he was “disappointed” by Beyond Meat's results in the most recent period and that he expects “current headwinds to persist in the coming quarters.” TODAY'S MAIN TOPIC: Proper Thanksgiving Stuffing (dressing) Is Easy, Just Follow These Simple Methods As many of you know I come from NJ and that means I call stuffing stuffing, not dressing like they do in the southern part of the country. Once you decide on what name you're calling this concoction, you have to decide if you're going to actually stuff this stuff into your turkey. For me that is not happening, I NEVER stuff the turkey. I find it increases the mass and slows the cooking time down, plus I want the stuffing to be fully cooked and not have partially raw turkey juice in it. So, to make sure it's safe, and fast, I cook it separately. Lastly, I like some crispness to my stuffing, which is not attainable if it's stuffed into the bird. What you want to put into your stuffing is another decision point, they all have some type of bread but cornbread often shows up to replace basic white bread. Typically aromatics are present such as onions, celery, green peppers, bay leaves, herbs, etc. Most stuffing is moistened with chicken or turkey stock to prevent dryness. In my mind, the most important ingredient in stuffing is the woody herb sage. Sage is the glue that holds Thanksgiving together in my opinion. Sage is a strong flavor but for me, it's intoxicating and brings so many fond memories of this holiday meal we all love so much. I always have sausage in my stuffing, the kind that has sage in it, apples are also usually added for some sweetness but this year I plan to swap those for butternut squash and keep the apples on the side. Let's talk about the actual method of making the stuffing. Here is what you need: 2 half-sheet trays with cubed bread 1 large onion, diced 1 lb Jimmy Dean sage sausage 3 stalks celery 1 small green bell pepper minced 1 granny smith apple, diced 2 tsp rubbed sage salt and pepper to taste 3 cups turkey or chicken stock HOMESTEAD TSUNAMI: Choosing the best duck breeds for a small homestead depends on your specific needs, available space, and climate. Here are some popular duck breeds known for their suitability in small homesteads, considering both meat and egg production, as well as ease of keeping: 1. Khaki Campbell: - Egg Production: Khaki Campbells are excellent layers, known for their high egg production. They can lay up to 300 eggs per year. - Meat: While not as large as some other breeds, Khaki Campbells can still provide a decent amount of meat. - Ease of Keeping: They are relatively easy to care for and are known for being active foragers. 2. Buff Orpington: - Meat Production: While primarily a meat breed for chickens, Buff Orpington ducks also provide a decent amount of meat. - Egg Production: They are good layers, producing around 150 to 200 eggs per year. - Ease of Keeping: Buff Orpingtons are known for their calm and friendly demeanor, making them suitable for small homesteads. 5. The first stop, also as usual, was Dollar Tree. Stock looks good there, from the shelves to the coolers, for both food and drinks. The store was busy enough for the one woman working a register to holler for "All to the front!" Our second stop was Hobby Lobby, where Sonia added some stencils for her crafting. She actually found the ones she wanted in the baking area, and those are a lot cheaper than the ones in papercraft aisles. We skipped Home Depot, but looking online a 2x4x8 is unchanged this week, at $3.48.Aldi was last. I don't think the produce looked anywhere near as good as in recent weeks. Most of the bananas were very green. The cantaloupes looked old and wrinkled, and the few bags of green grapes left just didn't look that good, so I got a bag of dried dates instead. The chocolate section continues to diminish, but an alternate I like was available. Staple prices were: eggs: $1.11, milk: $3.02, heavy cream: $4.69, OJ: $3.19, butter: $3.29, bacon: $3.99, potatoes (10 lbs.): $5.59, flour: $2.19, and sugar: $3.09. A gallon of untainted regular gasoline remains at $3.899. Frugality Tip from Margo Traveling can end up costing a lot of money. With the choice of hotels over Air BNB, hotels sometimes look like a better choice. But when you get a house you have a kitchen and most of the time a washer and dryer. A trip to a local farm stand and/or a grocery store to buy food to cook will actually save you money over eating out. And you know what you are eating.
