Blind Hog and Acorn are slogging along, one better than the other.  Farm chores wait for no one and things just chug along.Happily, there is light at the end of the Covid Tunnel and both have been taking walks again in the morning, not like they are totally laid out flat...Canning up the last of the tomatoes and okra, green beans about done.  Weather remains dry, garden has about had it.Before the farmers went on their trip, Acorn sent a letter to the UK to a certain naturalist she fancies.  Today a response was waiting in the mail!  Whooooooooo!  Needless to say, the letter will get framed. #sciencenerd

Okay, here we go. The big beast: pressure canning. I know it can seem scary to have a giant pot on your stove that you think could explode at any moment and that fear probably stems from pictures you've seen of pressure canners doing just that: lids embedded into ceilings and exploded contents all over the walls. I'm here to tell you pressure canning is perfectly safe if you follow the instructions. And modern pressure canners have all kinds of safety features designed to keep you from destroying your kitchen even if you do screw something up. I've been pressure canning for about a decade and I've never had an incident in my kitchen. Ever. Even when I was first starting out and didn't have a clue what I was doing and was just reading the instructions from a book. There are a lot of reasons you may want to pressure can, not the least of which is the much wider variety of things you can preserve over water-bath canning. You don't need to worry about acidifying foods before preserving them and you can actually can whole meals in a jar for emergencies, if you're so inclined. My favorite thing to pressure can? Green beans, plain and simple. But this year I'm going deeper into beans and meats and all kinds of stuff to hedge my bets against winter power outages in our rural area. And I'm super excited to try new things. So, before you decide that pressure canning isn't a viable option for you or if you've just been too scared to try it because it just seems dangerous, hang out with me today while we go over the basics of pressure canning, do's and don'ts, the must haves and the nice-to-haves, and all the resources you could ever need to do it all safely and effectively. This type of canning only requires a few special pieces of equipment that are readily available and relatively inexpensive. Or it was advertised as something completely different than what it really is.”We may see a photo of a Puggle and think it's so cute and cuddly. However, the reality of raising a Platypus isn't. The same thing applies when we think we want something in our own Simple Life. One thing living a Simple Life means is that you are always learning and growing – through observation, research, and trying it yourself. You learn to be resilient and can adapt, change, and be flexible. You also aren't afraid of scrapping your initial ideas and moving on to something different. If you want to make progress in life, you need to be willing to both learn and grow. ORN Atom Bergstrom show notes 8/17/22 part one Atom is writing a book about the positive aspects of sugar. He says sugar is a valuable medicine, used to resolve T1 diabetes. If they say something is incurable, it means they don't know how to cure it. Cancer drugs guarantee cancer again 5 or 6 years down the line. Lady with uterine cancer saved by black salve treatment. Why do cancers show up? You have a problem to resolve on the cognitive level. 80% of problems go away if you ignore them. Concentrate on other things. Don't focus on the bad stuff. Cancer helps anaphylactic shock if taken quickly enough. Celery and potatoes both have solanine in them. They've been jacked up with genetic modification and can be hazardous to health. Non-nitrite bacon is cured with celery powder, which is naturally high in nitrites, and can be higher in nitrites/nitrates than nitrate cured bacon. Some people can break out in red spots just from touching celery, which is a photosensitivity reaction to psoralens in the celery. Avoid celery with bite marks, because celery plants create toxins to deter the pests. Non-organic beets are higher in nitrates than processed meats. Someone very sensitive could die from them. Turning orange from carrots means you have a sensitivity to carrots. Atom says a researcher proved retinol is the precursor to beta carotene.
