Good health is your birthright. It should be your baseline. Sickness should be a temporary departure from health. But most foods have been specifically designed to make people unhealthy. Getting back to excellent health begins, and often ends, with eating right.
In this episode of The Metabolic Classroom, Dr. Ken Berry and Dr. Ben Bikman discussed the critical role of endogenous insulin, the limitations of focusing solely on glucose levels, and the implications of common markers like A1C and uric acid in understanding metabolic health.Dr. Berry began by highlighting how many primary care physicians misunderstand the function of beta cells in type 2 diabetes, often believing that these cells “burn out” and stop producing insulin. Dr. Bikman clarified that in true type 2 diabetes, beta cells do not fail entirely; instead, insulin production often remains high or slightly decreases, which is still significantly higher than normal.The problem lies in the body's insulin resistance, not a lack of insulin production. Dr. Bikman emphasized the importance of measuring fasting insulin levels early in a patient's metabolic health journey, noting that levels above 6 microunits/mL can indicate potential problems.The conversation then shifted to the A1C test, a common marker used to assess blood glucose levels over time. Dr. Berry and Dr. Bikman discussed the limitations of A1C, particularly how it can be falsely elevated or decreased based on the lifespan of red blood cells. Longer-lived red blood cells can cause a falsely high A1C, even if glucose levels are normal, while short-lived red blood cells can lead to a falsely low A1C in the presence of hyperglycemia. Dr. Bikman suggested that while A1C has value, it should not be the sole marker for assessing metabolic health. He also pointed out that A1C does not account for the glycation caused by other sugars like fructose, which can lead to significant damage not reflected in A1C results.Dr. Berry raised concerns about the carnivore community, where some individuals see their A1C levels rise despite a healthy diet. Dr. Bikman explained that this could be due to longer-lived red blood cells resulting from a nutrient-rich diet. He recommended the fructosamine test as a better indicator of glucose glycation in these cases. The discussion also touched on the lack of tests for fructose and galactose glycation, leaving healthcare providers blind to the potential damage caused by high fructose intake, especially from fruit juices.The classroom discussion concluded with an exchange about uric acid, particularly its relationship with fructose metabolism. Today, I'm blessed to welcome back Dr. Ken Berry, who has joined us on the show before to share his invaluable insights. He is a family physician, speaker, and author based in Nashville, Tennessee, U.S. Dr. Berry received a Bachelor of Science degree, with honors, in Animal Biology and Psychology, from Middle Tennessee State University, in Murfreesboro, Tennessee, in 1996. He received his MD from the University of Tennessee Health Science Center in Memphis, Tennessee, in 2000. In this episode, Dr. Ken Berry advocates for the carnivore diet as one of the best dietary approaches for longevity due to its very low carbohydrate content, ability to reduce inflammation, and effectiveness in triggering satiety hormones. He argues that meat from domesticated animals is among the least inflammatory foods available, unlike plants, which have evolved chemical defense mechanisms that can cause inflammation in humans. Dr. Ken Berry says the carnivore diet is a powerful tool for those with autoimmune diseases, explaining that such conditions arise from a confused and misdirected immune system, not an "overactive" one. In this episode of our Mafia Moments series, we are going back to our original episode with Dr. Ken Berry from episode 22. In this episode we discussed Dr. Berry's nutritional philosophy and dove into the science behind what the proper human diet should look like. As you'll hear in this clip, Ken talks about the nature of our biology and how we're not designed to overeat. Here's a summary:Most mammals, unless exposed to processed human food, naturally regulate their hunger and eating based on hormonal signals. They eat when hungry and stop when full.Big food corporations employ tactics to break human physiology and override natural hunger/satiety signals, leading to overeating and obesity. Humans are the only mammals that routinely overeat.Eating a proper human diet of whole, unprocessed foods allows the body's natural regulatory systems to function normally again after a transition period. Hunger and satiety signals will normalize.Ken recommends a low-carb whole foods diet with under 100g of carbs per day as a good starting point. The optimal level of carb restriction varies by individual.Self-experimentation is encouraged to find the optimal diet. Eating more whole foods and fewer processed carbs will lead to improved health for most.After adapting to a clean diet, occasional junk food indulgences will lead to noticeable negative effects, discouraging frequent "cheats."The deliciousness of unhealthy foods is not worth the long-term health consequences, similar to how the euphoria of drugs like crack is not worth the outcome of addiction.
Les Lyons, who will turn 73 in September 2024, has served 28 years in the Army, specializing in Airborne, Infantry, Pathfinder, and Chemical Officer roles. He retired as a Lieutenant Colonel in 2002 after primarily serving in the National Guard and Army Reserves. In addition to his military career, he has enjoyed a successful sales and management career in the business world for nearly 50 years, including 20 years at Xerox and various other large companies. He also ventured into startup companies, although they were not successful. Climbing the corporate ladder, he eventually held the position of Corporate VP of Sales at several large companies towards the end of his career, but his eating and sleeping habits suffered as a result. Bob talks about being a diabetic and how shortly after starting a carnivore diet his swollen feeling in his feet (a sign of diabetic neuropathy) disappeared. He discusses his 35 year-long gout problem and how 23 months of carnivore has stopped the gout attacks in their tracks! Not forgetting his Type 2 diabetes diagnosis and how he was initially told to give up meat, which he did! But it did nothing except see his uric acid levels going extremely high, this was despite being vegetarian. He also describes his other health improvements including curing fatty liver and chronic kidney disease.Bob became carnivore because he had health problems for over 35 years. As mentioned, gout was the biggest issue, Type 2 diabetes was not controlled, and pain was so bad it stopped him being able to stand for just a few minutes. He was following a high-carb, low-fat diet, and was on over 20 medications. After researching the carnivore diet online and watching videos by Dr. Ken Berry, he decided to give carnivore a try. Earlier this month, the Albina Music Trust launched a digital archive containing thousands of photographs, audio recordings and film and video clips documenting the culture and history of the Albina neighborhood. Black Portlanders built a thriving community in the Albina until redevelopment projects such as the construction of the I-5 freeway more than 60 years ago destroyed the neighborhood, shuttering businesses, demolishing homes and displacing residents. The Albina Community Archive is more than just a repository of sights and sounds from a bygone era. It also helps keep that history alive by allowing users to add their own memories or information about a photograph or recording.
