Today, I take your questions in an old-school LFTN Variety Show: Pickling beets, more about our new farmstand, how to prioritize what you grow in your smaller garden space, how to prioritize your time on the homestead and more. We will also cover our usual Monday segments. Featured Event: River and Imanee's Solstice Meetup at Haven Villiage, June 21 - I will be making cheese in case you want to come see that.  Sponsor 1: DiscountMylarBags.com Sponsor 2: The Wealthsteading Podcast, InvestableWealth.com Tales from the Prepper Pantry 20 quarts of extra tomato sauce from last year Initiating canning season with round one of pickling Drying herbs from the garden on rotation - adding it to the homestead store Preparing meatloafs in advance while also cooking them for now Weekly Shopping Report Dollar Tree was first.  The drink selection always changes, but there was plenty of stock.  That's all we needed in there this time, after adding a variety of storage containers and the like, and minor health items over the past several weeks. The online price of a 2x4x8 stud at Home Depot is still $3.85. Aldi was last.  We found everything we wanted.  There have been a number of price changes since the last report, but nothing dramatic.  Egg and milk prices have definitely come down.  Staple prices were: bread (20 oz. white): $1.39; eggs: $3.46 (-); whole milk: $2.66 (-); heavy cream: $5.29; OJ: $4.25 (+); butter: $3.75 (+); bacon: $3.99; potatoes: $4.39; sugar: $3.29 (+); flour: $2.35; and 80% ground beef: $4.69 (+). I may make an additional trip tomorrow to Walgreens as I recently opened my last melatonin, and I want another wrist brace.  I will likely also stop at the adjacent Food City for another bag of Meow Mix (that our cats ask for by name). Untainted regular gasoline at Weigels is still $3.59/gallon. Frugality Tip from Margo Down here in Florida we are getting ready for the Disaster Preparedness Sales Tax Holiday.  For two weeks we get to purchase things such as batteries, coolers, tarps, radios, fuel tanks, and generators and not have to pay sales tax.  We are currently in the market for a new generator and we are going to save about $100 buying that during this break.  So look up your states tax holidays and see what you can purchase during them and save some money. Happy Savings y'all Main topic of the Show: A variety show Tina in Arkansas asks: “I've got more beets than we can eat—how do you preserve them? Nicole Sauce's Pickled Beet Recipe 1/4 bushel beets makes about seven quarts Brine: 1/2 cup pickling or kosher salt 5.5 cups 5% vinegar 6 cups water Per quart jar spice mix (add to jar) 2 heads dill weed 2-4 cloves garlic 1-2 hot peppers (cayenne or jalapeno) 6 peppercorns Process method: Cold pack Process time: 20 minutes for pints, 25 minutes for quarts (wait 6 weeks before eating so everything tastes well blended) Aunt Helen's Beet Pickles with an extra step (Courtesy of Mama Sauce) 1/4 bushel beets makes about 10 pints. Brine (make enough batched to cover beets) 1 qt vinegar (5% acidity) 6 c sugar 2 TBSP salt (plain, kosher, or pickling: may not be iodized) 2 tsp pickling spice Lots of beets Boil beets in water. Skin and slice more thinly than for a regular pickled beet: say 1/8” or thinner. Pack in glass container or containers. Keep track of how many beets you've pickled (for backpack portion control.) Bring brine to boil. Completely cover beets. If you plan to eat these without further processing, pack and seal in wide-mouth Mason jars in the usual fashion. If you plan to dehydrate, why not pickle in a single glass bowl? Cover and let pickle for 2 weeks. Then you can eat or dehydrate them. To dehydrate: Drain beets. You can save and reuse the pickling solution a time or two before you should dump it and make fresh, so you can run successive batches. Scholarships for child care are drying up. Now families are paying the price

For parents who need to work but can't afford the steep cost of child care, federally funded scholarships can be a lifeline. Delivered through state child care assistance programs, the scholarships can mean the difference between a parent working full time—or not at all. But qualified families are increasingly being turned away, thanks to the rising costs of child care and the end of pandemic-era funds, and some families that had scholarships have seen them end. In three states—Arizona, Colorado and Texas—parents who apply face long waitlists. Other states have increased copayments for parents or have said they will serve fewer children. In March, the Trump administration laid off some employees who helped states implement child care assistance. It's left advocates worried about the future of federal child care programs. “What it means is that ultimately child care will become less safe, it's going to become more expensive, and it's going to become harder to find,” said Ruth Friedman, who was the director of the Office of Child Care under former President Joe Biden. In Colorado, a dozen counties stopped accepting new applications for the state's child care assistance program because they ran out of money, The Colorado Sun reported. For states trying to maintain child care assistance scholarships, the costs of running the programs have risen. Because many child care providers operate on the margins, the Biden administration increased the amount they receive when they take scholarship students. It's all evidence that the problems that vex the child care industry have not necessarily abated with the pandemic, said Karen Schulman, senior director of child care policy at the National Women's Law Center. “The crisis was going on long before COVID,” Schulman said, citing the unaffordability of care for many families, along with the low pay of the child care workforce. Even as providers struggle to make a profit, child care is prohibitively expensive for many families. In a study of 2022 child care prices, the Labor Department found the median cost of care for an infant in a center was more than $15,600 in large counties—higher than the median rent in many places. Relearning What We Forgot In a world where almost every meal depends on electricity, the idea of living without a fridge sounds crazy to most people. But for thousands of years, humans kept food safe, nutritious, and edible without a compressor humming in the kitchen. And if you're serious about preparedness—or just want to cut dependence on the grid—it's time to relearn the forgotten art of preservation. In Episode 401, we're diving into old-school food storage skills that still matter today: curing, canning, fermenting, root cellars, and low-tech hacks that help you stay fed when the power's out for good. Curing: Salt, Smoke, and Time Curing is one of the oldest preservation methods out there. Salt draws moisture out of meat, making it harder for bacteria to grow. Smoking adds flavor and antimicrobial compounds. You don't need a fancy setup—just a cool, dry spot and some practice. Salt curing works great for pork, fish, and even homemade jerky. Cold smoking adds flavor and shelf life, especially for hams, sausages, and fish. Learn the basics of salting ratios, air drying, and proper storage. If you've got meat and no freezer, curing might save your protein. Canning: Shelf-Stable and Strong Canning is the MVP of long-term food preservation. Done right, you can store soups, meats, stews, vegetables, and even full meals—no refrigeration needed. Water bath canning is perfect for high-acid foods like tomatoes, fruit, and pickles. Pressure canning is a must for meats, beans, and low-acid vegetables. Build your supply slowly, label everything, and always check seals. A full pantry of home-canned goods beats empty shelves any day. Fermenting: Let Bacteria Do the Work Fermentation doesn't just preserve food—it improves it. It boosts nutrition, adds probiotics, and tastes amazing. Sauerkraut, kimchi, yogurt, sourdough, and even pickles can all be made with just salt, time, and a clean jar. Fermentation is: Simple Low-tech Self-sustaining It's one of the easiest ways to keep food fresh and flavorful without needing a fridge—or a ton of gear. Root Cellars: Nature's Refrigerator A well-built root cellar can keep produce fresh for months with no electricity. It works by using the earth's stable temperature and humidity. Ideal for storing: Potatoes Carrots Beets Cabbage Apples Onions If you've got land, dig one. If not, even a basement corner or buried trash can with ventilation can mimic the same effect on a smaller scale. Off-Grid Hacks and Tips No fridge? No problem. These low-tech tricks extend food life without modern appliances: Zeer pots (clay pot refrigeration using evaporation) Cooler in a stream (nature's cold water cooler) Pickling and brining Using animal fat to seal cooked meat in jars (confit-style) Drying and dehydrating herbs, fruits, and jerky These techniques buy you time, add options, and reduce dependency on fragile systems. Final Thoughts Modern fridges are great—until they're not. In a blackout, a storm, or a collapse, knowing how to preserve food the old-fashioned way gives you independence, flexibility, and power. The fridge may die. But your skills don't have to. So fire up the water bath, pack that salt, and build a shelf for your jars. Because when the power goes out, the pantry stays on. And the people who know how to keep food safe without a plug? Those are the ones who eat.

Morgan Stanley's Head of European Consumer Staples, Sarah Simon, discusses why aging populations, wellness trends and Gen Z's moderation are putting pressure on the long-term outlook for alcoholic beverages.Read more insights from Morgan Stanley. ----- Transcript -----Welcome to Thoughts on the Market. I'm Sarah Simon, Head of the European Consumer Staples team. Today's topic: Is America sobering up? Recent trends point to a national decline in alcohol use. It's Wednesday, April 23rd, at 2pm in London.Picture this: It's Friday night, and you're at a bar with friends. The drinks menu offers many options. A cold beer or glass of wine, sure. But how about a Phony Negroni. And your friends nod approvingly. This isn't just a passing trend – we believe it's a structural shift that's set to reshape the beverage industry. Overall alcohol consumption in volume terms has been relatively flat over the last decade in the U.S. - with spirits growing mid single digits in value terms and beer growing low single digits. But both categories are currently declining. The big debate is whether it's cyclical or structural. We acknowledge that the consumer is under pressure right now, but we equally see long term structural pressures that are starting to play out. There are three key factors behind this trend: increased moderation by younger drinkers, an ageing population, and then broader health and wellness trends. So let's talk first about Gen Z – those born between 1997 and 2012. They're drinking notably less than previous generations of the same age. In fact, today's 18-34 year-olds drink 30 per cent less than the same age group 20 years ago. And we think it's pretty unlikely they will catch up as they get older. This isn't a temporary blip caused by the after-effects of COVID-19 lockdowns or economic pressures. It's a long-term trend that predates both of these factors. And importantly this isn't the case of abstinence – as in the case of tobacco – but moderation. Younger generations are simply drinking less alcohol and allocating more of their beverage spending towards soft drinks. Secondly, developed market populations are ageing. If we look at population data, we see it's today's 45-55 year old age group that drinks the most alcohol; and has exhibited the highest growth in consumption and spending over the last 20 years. However, over the next 20 years, this cohort is likely to cut back on drinking due to physiological reasons as they age. The body simply becomes less able to metabolize alcohol, and there's much higher usage of prescription medication in the over 65 age group. And in just the same way that this cohort was growing faster than the population overall over the last 20 years – because of the higher birth rate in the late 60s and 70s – in future, the aging of these GenX-ers will drive outsized growth in the number of people aged over 75, who consume much less alcohol. And so, the result is a disproportionate impact on overall alcohol consumption. And on top of this, there's increased adoption of GLP-1 weight loss drugs that we've talked about previously. And increasingly negative perceptions of the health implications of alcohol – as the broader health and wellness trend takes hold. On the flip side, there's also a growing acceptance of non-alcoholic beverages, driven by better products and broader distribution. We expect low- and zero-alcohol alternatives to gain a larger share of the market as a result. And we think beer looks particularly well-positioned; it already accounts for about 85 per cent of the non-alcoholic market overall. And this year in the U.S., non-alcoholic beer has nearly doubled its share of U.S. beer retail sales, compared to where it was in 2021. Now it's still small, but the growth rate in the well over 20 per cent range, suggests that share gain will continue. Meanwhile, we're seeing more mocktails on menus and zero-alcohol beer on draft in pubs. All of this is further contributing to less stigma associated with not drinking alcohol. And all these trends add up to one conclusion, we think: earnings pressures on alcohol makers are not simply cyclical but structural. They have been underway even prior to COVID. And looking to the future, we think they're here to stay. So now, many more people can say cheers to that. Thanks for listening. The Life and Survival of Medieval Peasants | Episode 350 Medieval peasants lived a life dictated by the seasons, working the land to provide for their families and fulfill obligations to their lords. Their homes were small, built from wood, wattle, and daub, with thatched roofs. Days were spent plowing, harvesting, tending animals, and performing household chores. While hard and unforgiving, their lifestyle was deeply connected to the land and community. Food Preservation for Winter Surviving winter meant meticulous planning and preparation during the warmer months. Without modern refrigeration, peasants relied on traditional preservation methods: Salting – Meat and fish were packed in salt to prevent spoilage. Drying – Fruits, vegetables, and meat were dried for long-term storage. Fermenting – Sauerkraut and other fermented foods provided essential nutrients. Root Cellars – Underground storage kept root vegetables fresh through winter. Slaughtering Livestock in Winter As winter approached, livestock that couldn't be sustained through the cold months were slaughtered. Cold weather helped preserve the meat, which was then smoked, dried, or salted. Every part of the animal was used, from rendering fat for candles to using bones for broth. Foraging & Gathering Wild foods supplemented the diet, including nuts, berries, mushrooms, and herbs like garlic and rosemary. Honey, collected from beehives, served as a sweetener and was used to make mead. The Peasant Diet: Bread, Porridge, and Ale Bread – The staple of the medieval diet, made from coarse-ground rye or barley. Pottage – A thick stew made with grains, vegetables, and occasionally meat. Ale and Small Beer – A fermented, low-alcohol beverage safer than water. Feast vs. Famine: The Harsh Reality A poor harvest could lead to famine. Heavy taxation and food tributes left many peasants struggling. Religious fasting also influenced diet restrictions throughout the year. Lessons for Modern Preppers Medieval peasants mastered survival through food preservation, resourcefulness, and seasonal adaptation. Today, preppers can apply these lessons by: Learning fermentation, drying, and salting techniques. Growing staple crops and foraging for wild edibles. Utilizing every resource to minimize waste. Timing food production and storage with seasonal changes. Understanding how medieval peasants survived provides valuable insights into self-sufficiency and preparedness in uncertain times.

In this episode of the HVAC School Podcast, Bryan interviews Zach about duct coatings and their applications in HVAC systems, particularly focusing on the Hardcast RE500 product. The discussion delves into the importance of proper duct coating applications and their benefits for both contractors and customers. Zach, who has extensive experience in duct cleaning and restoration, shares his expertise on the proper application and benefits of duct coating systems. The conversation explores how modern ductboard comes with a clear coat that offers some protection, but additional coating can provide significant benefits, especially in high-velocity areas near equipment. They discuss how coating creates a smoother, more cleanable surface that's almost comparable to sheet metal in terms of friction resistance. Zach emphasizes that coating should only be applied after proper cleaning, as it's not meant to cover up dirty ducts but rather to protect and improve cleaned surfaces. A significant portion of the discussion centers around the practical applications for HVAC contractors, particularly during equipment changeouts. Bryan proposes the idea of coating the first 5-10 feet of ductwork near equipment during changeouts, as these areas experience the highest velocity and are most susceptible to fiber shedding and moisture issues. The conversation also addresses the cost-effectiveness of coating versus replacement, with the coating being approximately one-fourth to one-fifth the cost of replacement. Key Topics Covered: Hardcast RE500 duct coating product and its applications Benefits of duct coating, including reduced friction, fiber containment, and improved cleanability The importance of proper surface preparation before coating application Comparison between coated ductboard and sheet metal surfaces Drying and curing times for duct coatings The relationship between duct cleaning and coating services Cost comparison between coating and replacement Special considerations for coastal environments NADCA certification and training requirements The importance of proper application techniques and professional certification Health and safety considerations regarding fiberglass ductwork The role of duct coating in preventative maintenance Application methods, including airless sprayer and brush/bucket techniques Quality control and industry standards for duct coating   Learn more about NADCA at https://nadca.com/.  Have a question that you want us to answer on the podcast?
