Laura Kelley is a mom of five through birth, adoption, and fostering. She's also is no stranger to sorrow. Last year, Laura and her husband Josh accepted God's call to adopt a 3-year-old boy from China named Everett. Tragically, Everett was born with a congenital heart defect leaving his new parents with some very difficult decisions to make about his medical care. He passed away just days before his fourth birthday. Laura is now courageously navigating through her grief one day at a time and sharing her journey publically on social media. Tulane History Professor and author of the new book The Irish in New Orleans, Laura Kelley gives us a history of Irish immigrants in the Crescent City and how they influenced Louisiana culture in some unexpected ways. Irish immigrants and owners of Finn McCool's, Pauline and Stephen Patterson discuss the process of building a traditional Irish Pub from the ground up, and why the pub is such an essential part of Irish culture. Nell Boyle, owner of Henry's Uptown Bar, talks about owning and operating a bar that has been in her family for four generations, and why marrying an Irish gypsy isn't such a bad idea. Garum is one of those ancient foods that everyone seems to have heard of. It is usually described as “fermented fish guts,” or something equally unappealing, and people often call it the Roman ketchup, because they used it so liberally on so many things. Fermented fish guts is indeed accurate, though calculated to distance ourselves from it. And garum is just one form of fermented fish; there’s also liquamen, muria. allec and haimation. All this I learned from Laura Kelley, author of The Silk Road Gourmet. Unlike most of the people who opine on garum, and who offer recipes for quick garum, she painstakingly created the real deal. She is also convinced that it isn’t really Roman in origin. We only think of it that way because history is written by the victors not the vanquished. And then there's the whole question of the Asian fish sauces, Vietnamese nước mắm and the rest of them. Independent discovery, or copied from the Romans? Notes Laura gives a full blow-by-blow on her website. Copying her is probably the only way to produce something that approximates genuine garum. She also mentioned colatura, a fish sauce still made in Italy. I haven’t tried it, although it is available, at least in the US, by mail order. Laura is so stinking sweet and one of those people that I love to see her family. She blogs about her family, her craftiness, and all in between. I have used her for many gift ideas. They call it KINDNESS ADVENT and they spend the entire month blessing others. Laura said someone encouraged her after he mom died through a grief devotional that said, "Sometimes you have no idea what to do for yourself, but you can always do for others." That statement led her and her husband, Josh, to begin their kindness advent time each December. Laura's mom passed away a few years ago and she shares what that has meant for her kids as she parented them through this trial.
