Managing Cattle & Grass In A Drought It is that time of year that many producers are moving cattle to summer grazing.  But drought is plaguing many and it continues to worsen.  According to drought.gov, as of May 5th, 60.92% of the country is experiencing moderate to exceptional drought, largely concentrated in the Southeast, High Plains, and West. There are strategies for managing drought, or I should say how we manage grass and forage uptake in the cowherd to get through drought.  Trevor Burian from Killdeer North Dakota joins us today.  Trevor has been a student of grazing, plant management, regenerative ag, and cattle efficiency and profitability his entire life. Cattle Industry News China & U.S. Beef Trade According to Derrell Peel, Oklahoma State University Extension Livestock Marketing Specialist, the role of China in global beef markets has changed rapidly in the last two decades.  China, including Hong Kong, was not a player at all in global beef markets as little as 15 years ago but has risen rapidly to become the largest beef importer in the last decade. For many years, China was a large beef producing and consuming country but had almost no presence in global beef markets. Starting about 2013, rising beef consumption in China began to exceed domestic beef production, leading for the first time to significant beef imports. Although per capita beef consumption in China remains relatively low — roughly 13 pounds compared to 59 pounds in the U.S. — the large population means that small increases in beef consumption represent large amounts of beef in total. According to the U.S. Meat Export Federation President CEO Dan Halstrom, China's reentry into the market for U.S. beef exports will have a significant and rapid price feedback to the American industry from other markets.  He called it a “hidden benefit” from China's renewal of registrations for U.S. beef facilities as well as hoped-for resolution of suspensions of a significant number of plants. Paxton said the investigation would be conducted alongside a separate antitrust probe announced by the U.S. Department of Justice under President Donald Trump's administration. The investigation is focused on the highly concentrated beef packing sector, where four companies — JBS S.A., Tyson Fresh Meats, Cargill and National Beef Packing Co. — collectively control more than 85% of U.S. beef processing capacity, according to Paxton's office. The attorney general cited reports alleging the companies may have used their market power to suppress cattle prices paid to ranchers while increasing beef prices for consumers. USDA says sterile fly dispersal efforts are currently concentrated along the Gulf coast of northern Mexico, with additional drops occurring within roughly 50 miles of the Texas border. Officials say the agency is relying heavily on predictive modeling and real-time surveillance data to determine where those flies are deployed. USDA says those decisions are being made in coordination with the agency's Agricultural Research Service, using predictive analytics designed to anticipate where the pest could spread next, not simply where cases are currently confirmed. REFERENCE: https://www.rfdtv.com/usda-expands-new-world-screwworm-surveillance-as-cases-rise-in-mexico-and-sterile-fly-supply-stays-limited U.S. Beef Imports Projected To Top 6 Billion Pounds U.S. Beef Imports are projected to top 6 billion pounds for the first time in history — Up 166% Since 2010.  Last week's USDA WASDE report projected 2026 U.S. beef imports at 6.1 billion pounds, the highest level in history and the first time beef imports have ever exceeded 6 billion pounds.  The projection would mark an increase of 638 million pounds, or 11.7%, from 2025 levels and continue a trend that has seen beef imports increase every year since 2017. Since 2010, U.S. beef imports have climbed from 2.3 billion pounds to more than 6.1 billion pounds, an increase of roughly 3.8 billion pounds, or nearly 166%. The sharp rise in imports has coincided with declining U.S. cattle inventories and historically tight domestic beef supplies. Retail Beef Prices Rocket Higher Retail beef prices continued their sharp climb in April as all 12 major beef categories increased from March levels, with 9 of the 12 cuts establishing new all-time record highs. The Retail Beef Price Composite increased from $8.93/lb in March to a record $9.28/lb in April, rising $0.35/lb in just one month. Ground beef prices continued pushing higher across every category. Ground Chuck increased from $6.68 to a record $6.92/lb, while Ground Beef climbed from $6.70 to $6.90/lb. Lean & Extra Lean Ground Beef jumped $0.31 to a record $8.51/lb, and All Uncooked Ground Beef increased to a record $7.06/lb. Roast values posted some of the largest monthly increases. Chuck Roast, USDA Choice Boneless surged $0.66 to a record $9.50/lb, while Round Roast, Choice Boneless climbed $0.51 to a record $8.98/lb.  Only three categories failed to establish new all-time highs during April. Round Steak, USDA Choice increased from $9.61 to $9.83/lb but remained below its February 2026 record high of $10.09/lb. Beef for Stew, Boneless rose from $8.41 to $8.65/lb but stayed below its November 2025 record of $9.172/lb. We are well into spring now and some things are shaking in the beef market.  First good news, though the strike is not settled, the JBS workers are returning to work while negotiations continue. Good news, beef harvest increased to 533K still running about 10% behind last year, supplies remain very tight.  Good news, market prices seem to be pushing back a bit, maybe this is moving higher too quickly? I still think this bull market will continue to move higher into spring, but I do think we've got a little breather for a week or so. Rounds and chucks are both down a bit this week, more good news. Middle meats are steady to slightly higher this week, but thin meats, those flanks, skirt, sirloin flat meat, all still expensive and moving higher.  Typically, thin meats will peak around Cinco de Mayo, which is not that far way.  POULTRY: Chicken production continues to outpace last year, up 2% so far this year.  Hatch rate is improving 79.3% - chicken is in full production.  Demand is right there with it, chicken, still a great value in protein, but pricing is moving higher.  Boneless skinless randoms breasts, tenders, party wings, all moving higher.  I think we'll see this market move higher the next few weeks.  On Avian flu, a relatively good week with 3 new cases affecting 111K birds.  As spring migration tapers off let's hope the virus does too.  GRAINS : Corn barely moved from $4.54 to $4.53 this week.  Wheat about the same, soy is holding onto all their recent gains.  With the cost of fuel moving higher, demand for biofuels will increase, soy and canola continue to inch up on daily markets.  PORK: Last week bellies closed at $149, same this week, steady at $149.  I'm thinking we will continue in this $150 market for a few more weeks, next move should be higher, but I'm going to push that out a few weeks.  The rest of the pork complex is well supplied and priced well.  Butts inch up a penny, loins and ribs steady.   DAIRY Dairy markets holding pretty steady for  the week, Thru Thursday's CME close block is down 2, barrel is steady, no change, and butter down 4.  Spring production is good and availability is very good.  Savalfoods.com | Find us on Social Media: Instagram, Facebook, YouTube, Twitter, LinkedIn

Beef production continues to keep inventories tight and prices pushing higher.  Beef harvest last week was 520K head, up a bit from the 503K the week prior but still not enough to fill the demand.  Middle meats, those strips loins, tenderloins and ribeyes continue to push higher every week.  Thin meats, think flank, skirt, sirloin flap, all are in tight supply and pushing higher every week.  Grinds held steady for the next week but I do think we will see grinds pushing higher with all the other cuts.  This is a buy now, waiting will cost you money market.  And I'm adding keep well ahead of your needs, this is going to be an interesting summer for beef.  POULTRY  Chicken continues to roll on, production continues about 2% over last year and demand is taking all that production.  Boneless skinless breasts and tenders moving up again next week and this seems to be a pattern we could see for a few weeks.  Wings holding steady after last week's move higher.  Even with the recent increases chicken remains the choice for protein value.  On Avian flu, a relatively good week with 9 new cases affecting 98K birds.  GRAINS – Even war cant move the cost of corn.  Corn closed at $4.59 just up from $4.58 last week.  Preliminary estimates for this years crop down 5 million acres from last year, while soy is planning more acreage.  The soy rally is pushing up again after a couple weeks stall.  Wheat is moving higher mostly on international unrest.  PORK Pork bellies are hanging right around that $150 mark, today's close $149. Beef production continues restrained to keep prices up and packer losses as small as possible. 516K head produced last week, same as the previous week. Heading into spring this is keeping the beef supply tight and prices supported. We have the smallest beef herd since 1951 when there were half as many people in the country. That is not turning around anytime soon. Regarding current market prices, everything is going up. Ribeyes and strip loins will be leading prices higher for the next few weeks. Grind demand is strong and prices moving up as well. Chuck had a nice few weeks of declines, that is over, rounds never lost support and continue to move higher. I do think middle meats and thin meats, flanks, skirts, sirloin flap, will all be tight and expensive, already looking at Cinco de Mayo.  We are at the start of a steady move higher, I'd advise buy sooner, rather than later, waiting will cost you money. Keep well ahead of your needs, this market is going to be expensive and tight.Poultry production continues to run about 2% ahead of last year. Demand is good, production is strong, pricing is holding up, though wings declined a second week in a row. Boneless skinless breasts and tenders… holding steady. It's a good time to menu chicken. On the Avian flu front, its ugly. 23 new cases reported in the last week affecting 4.8Millioin birds, 4 million of those birds were egg layers. I'm not feeling good about spring migration.Soy markets continue to climb. Its been so long since we've seen a bull market in soy. Soy oil and canola oil, both moving higher with good export demand and higher biofuel usage. We may see this plateau in the next couple weeks, but right now, soy is on a tear. Corn and wheat… not so much . Still trading sideways and I don't see that changing.Pork bellies continue to march higher, today's close $153 up from last week $148. I don't think we are done by any stretch. Bacon will be going up. Contrary to rest of the pork complex, plenty of inventory, prices are good. Yes, menu pork.Butter took a huge run up this week. Thru Thursday's close on the CME butter is up 24! That's a big move. Barrel and block both up 3 but butter is the big mover. In this episode, Shawn and David wrap up the series on Ragnar Lobrok (cue dozens of solo episodes where Shawn and David have not in fact wrapped up their series on Ragnar Lodbrok), discussing chapters 18 - 20. In tandem with "The Tale of Ragnars Sons", you find out about the fates of the sons of Ragnar, including their deaths. There are then a couple of chapters of some nameless characters (well one is named), who in later years begin discussing the the heroic brothers either in their cups while getting drunk, or looking at monuments set to be reminders of them.The pair explore the descendents of these heroes, leading to the historical origins of 3 Scandinavian countries, Sweden, Denmark, and Norway, tying together the legendary sagas with historical figures like Gorm the Old, Harald Fairhair, and Eirik the Victorious. Crumble keto bread and corn bread and drizzle with olive oil, baking for 10 minutes at 350 degrees. 2. Sauté veggies in olive oil and seasonings 3. Mix egg with melted butter and chicken broth, adding sauteed veggies and mixing well. 4. Combine all ingredients and bake for 10 minutes, covered in foil Turducken Roll Ingredients: * 6 cups water * 1/3 cup kosher salt * Boneless, skinless turkey breast * 2 boneless, skinless duck breasts * 2 TBSP chopped sage * 2 TBSP chopped thyme * Salt and pepper * 2 chicken-apple sausages * 12 slices hardwood smoked bacon * 2 TBSP olive oil Steps: 1. Bring water and salt to a boil, then let cool and brine turkey for an hour. Preheat oven to 325 degrees. 2. Tenderize turkey and duck then season with herbs, salt and pepper. 3. Lay down turkey, then duck, keto cornbread stuffing, and place two sausages the length of the breasts. Roll meats up. Layer bacon slightly overlapping each other and roll onto turducken, securing with butcher's twine to form a roulade. 4. Sear roulade in olive oil on all sides then bake for 95 minutes. Gravy Ingredients: * 1 chicken bouillon cube * 1 beef stock bouillon cube * 2 ¼ cups boiling water * 4 tbsp butter * 4 tbsp flour * ½ tsp onion powder * ¼ tsp ground pepper * Salt Steps: 1. Dissolve bouillon in boiling water 2. Melt butter in saucepan. Then add flour, onion powder and pepper. 3. While stirring, pour in half of the liquid to creating a roux. Stir until thick. Add salt and pepper to taste. Creamed Spinach Ingredients: * 1 pound frozen chopped spinach * 2 tbsp butter * ½ medium onion * 2 cloves garlic * ¾ cups heavy whipping cream * 4 ounces cream cheese * 1 cup parmesan * Pinch of nutmeg * Salt and pepper Steps: 1. Thaw spinach and drain water 2. Sauté butter and onion. Once lightly browned, stir in garlic, cream, cheeses, and nutmeg. 3. Stir in spinach and add salt and pepper to taste.
