This week on Menu Talk, hosts Pat Cobe, senior menu editor of Restaurant Business, and Bret Thorn, senior food & beverage editor at Nation's Restaurant News and Restaurant Hospitality, start off with a beer tasting. Bret discovered a low-alcohol brew called kvass in his new Brooklyn neighborhood, which is populated by Russian, Ukrainian and Eastern European residents. As Pat visited Sysco headquarters in Houston to get an inside look at how innovative products get into the distributor's supply chain. Steak seems to be an ongoing topic of discussion here on Menu Talk. This week, we chat about Michael Mina's newest branch of Bourbon Steak, which opened in New York City recently. Along with Entrecote and Skirt Steak, two restaurants that offer a prix fixe steak dinner. Skirt Steak is one of Laurent Tourondel's restaurants, and reservations are hard to come by. One reason: for $45 per person, diners get grilled steak, fries, salad and bread. That's a pretty good deal at a chef-driven restaurant in Manhattan. Tourondel started as a chef in France, but has since operated restaurants in several U.S. locales, including New York, Philadelphia, Las Vegas and South Florida. Listen as the accomplished chef-restaurateur shares his journey and talks about what's next. A bakery is in the works. But another French restaurant? Not so fast.
Welcome to Friday, and we've got a heck of a show for you of local Detroit topics. 03:13 - Devon talks about why he needed to share some "hometown love" in a recent newspaper op-ed. 09:15 - An update on the new restaurant by Chef Fabio Viviani in the old Calexico space. Plus, do local restaurants need to up their game? Do you prefer when someone skips over a bad place, or tells you how bad it might be? Are some reviews too harsh? New Jersey author Alyson Mosquera Dutemple began her professional career working in film production. The pressures of working on-set soon had her turning her attention to writing screenplays - some of which she succeeded in having optioned. But it was her love of writing fiction - stories in particular - that eventually won out. As a storyteller, Hak Lonh looks to food as a way to share the rich history of Cambodia and its complex cuisine. Hak is Cambodian-Chinese-American. He was born in a refugee camp on the border of Thailand and Cambodia. His family immigrated to the US when he was a toddler. They fled, fought and eventually escaped the horrors of “The Killing Fields”, landing in Pennsylvania. His father, Kim, was able to secure a job due in part to his ability to speak French fluently. This skill and his natural talent eventually lead him to become a classically trained chef. Hak's mom, Bun, a phenomenal home chef in her own right, was also working and preparing meals to feed the family. Because of the historical challenges to Cambodia, Cambodians have had to rely on recipes and culinary traditions as one of the few ways to preserve their heritage. Hak's mother, in particular, faithfully goes to great lengths to prepare home cooked meals as a way to keep that heritage alive. In this way, food has always been an integral part of Hak's life.Gamboge is a Cambodian inspired deli, café, and marketplace. Offering Cambodian comfort classics, coffee, beer and natural wines. Founded by chef and filmmaker, Hak Lonh and his wife Jane Oh. Gamboge's mission is to bring together the stories and memories that make up modern day Cambodian cuisine, while honoring it's past.LINKS:Episode transcriptGambogeSalaw Machu KroengPrahokKhemlaNyum BaiWe have a website!Follow the show on InstagramEmail usFollow Jordan on Instagram or TwitterShout out to Shawn Meyers for the music and Jason Cryer for the art!

We launched a new digital magazine! Prix Fixe for Youth was born as a charity dinner, a prix-fixe tasting menu to benefit Apex for Youth. Now, with the inability to host these spontaneous, communal events for the time being, we’ve adapted PFFY into a magazine featuring 26 restaurants we love and the tenacious people behind them. Every $2 per copy benefits Apex. Get your copy now at withwarmwelcome.com/magazine! In this particular episode, we speak with our friend and supporter Sean Wang, an Associate Board member of Apex for Youth. Sean shares the ways in which the organization empowers the youth through its mentoring, tutoring, and athletics programs and how you can get involved at apexforyouth.org/volunteer.

Just wanted to clarify and correct our mistake there!Looks like Twinings tea is pronounced with a long I at the beginning, so Andrea was right. We started today's show with a quick wrap-up of Matt's trip to adult Disneyland, Las Vegas... surreal.Frank and Elizabeth from Home Make It joined us to tak about the upcoming Darebin Home Made Food and Wine Festival, which as the name suggests is all about the cultural traditions of doing things yourself at home. Home Make It specialise in classes for making your own passata, salami, and (clearly the most important) wine. Never thought of trying this at home yourself? Maybe check out the festival and learn how!Next up we spoke to John at the Vic Market. To finish today's show we spoke to Philippa Sibley, who has just finished up running the kitchen at Prix Fixe. We chatted about mushroom season and how best to use them, as well as Philippa's spooky flavor combination of passionfruit and mandarins.
On a packed show we spoke with Melbourne dining legend Matteo Pignatelli, owner of two-hatted Matteo's, about the odd spectacle of restaurant reservations being "scalped" to high bidders due to such a high demand for Heston Blumenthal's Fat Duck restaurant opening in Melbourne next year. How much would you pay for concert tickets, or an expensive seat at a sporting event? That style of dining is similar, and it's no huge surprise that people are clamoring to get a table. The brilliant Philippa Sibley joined us in the studio to talk about her recent travels to New Zealand. We also spoke about the Prix Fixe menu themes for both this month and next month, including a dessert that was "accidentally vegan!"Next up we had a market report from John.To finish this week we spoke to the head chef at Melbourne dining hot spot Mamasita, Andrew Logan. We talked about how a traditionally trained skippy Aussie ends up cooking soulful Mexican food, his travels to Mexico, and the long history of Mexican cuisine. Andrew has also contributed some recipes to an amazing tome simply titled Mexico - The Cookbook. It clocks in at 700 pages and is THE word on Mexican food.
