Fabio Viviani is a native of Florence, Italy, where he started working in restaurant kitchens at the age of 11. He learned the ropes of the hospitality industry by cooking in and managing Italian trattorias and restaurants, eventually moving to the U.S. when he was 27, where he opened and operated several restaurants in L.A. Over the next 15 or so years, Chef Viviani built a hospitality empire, developing more restaurants and related culinary businesses around the country in hotels, casinos, airports and freestanding locations. Richard St. Jean is a veteran leader in the gaming industry, working for Caesars, Station Casinos, Penn National Gaming and now as the chief operating officer of the Morongo Casino Resort & Spa. He joined Morongo two years ago just prior to the pandemic and as the casino resort was being renovated. He spoke with GGB Publisher Roger Gros via Zoom from his offices in Morongo, joined by Simon Farmer, the property's executive director of marketing. (See video below). GGB: Why don't we go back to the time when you joined the property—you arrived about halfway through the renovation process, is that right? Richard St. Jean: Yes, I got here in Q4 of 2019. So, I'd say it was about 50 percent to 60 percent completed. The renovation of the existing casino space was materially under way, but we still had a long way to go. Did you have any influence in the design and the operations of the process at that time? In the main casino, I think the program was pretty much baked in. But as we get into the expanded area—65,000 square feet—we had lots of opportunities to really improve the connectivity, sightline, circulation. But as far as the box itself, that remained pretty much the same. So, you got there right before Covid hit. That must have been a little disappointing for you. I came out of retirement going on two years to take this job. And I told my wife, “I do not want to open a property. I've done enough of those.” I knew I was coming into the renovation and expansion, and I enjoy those projects. But then Covid hit and shut us down. We probably worked harder when we were down trying to formulate the plan for reopening. We opened with about five days' notice, and we were also first to market at the significant casinos in the L.A. area. So it was like New Year's every single day, post-opening. We opened with 1,700 team members; we could have had 2,400 or 2,500. But it was all hands on deck; we made it happen. But it certainly wasn't without a lot of pain. But even with the shutdown, we were thrilled with our overall performance for 2020. We were relatively flat, even after being closed for two and a half months, compared to 2019. The team really pulled it off. As I tell them: They moved mountains and pulled off miracles. So, it was a pretty strong way to end the year. Explain how the resort has changed, with the renovations, and new food and beverage outlets, and the larger casino. We renovated the hotel rooms, the suites, the casinos, the cabanas. So, really the entire property has a new feel and then, in conjunction with that, we started to deploy technology—beautiful TVs, electronic keys and all the other items you take for granted in a modern hotel. Tell us what happened with the buffet. I think this is probably one of our favorite stories about the renovations. Our buffet was very dated, and then obviously with the onset of Covid, a lot of these questions about buffets came back. And we had already been in concept discussions with a number of people, on what this could look like going forward. And we looked at numerous iterations, and what it could be, what it should be. We started taking inspirations from places like Faneuil Hall in Boston, Eataly in Chicago, the Ferry Building in San Francisco, and the list goes on. So we partnered with Fabio Viviani to create the Marketplace. It transports you from Cabazon, California to literally any state or city around the country. But then our customers told us, quite succinctly, that they wanted a quality product at a reasonable price, that was fairly quick. And I think the Marketplace hits all those points. In April, Morongo opened a new poker room and a bingo room, at the tribe's original casino, now called Casino Morongo. Tell us what those are going to bring to your property. When that property was opened, as we began construction on the renovation, originally it was with a pure intent of supply and demand for construction disruption. And the place did better than we expected, and we kept it open, particularly with the demand that we had post-opening from Covid. There had been consideration years ago about putting bingo and poker back there—it frees up space in the main casino where we had a temporary poker room set up. So, we jumped in with both feet, and we came up with a design of the right size program, and it's really created a full-service property. The original casino looks like a brand-new facility. So, we are really, really excited about the potential that has. And I think, too, that our tribal members and elders, they love to play there. They grew up there, to a degree. Morongo has always had some great leadership, and with the recent retirement of the former chairman, Robert Martin, and his successor, Charles Martin. And the tribe was involved in the birth of Indian gaming as a participant in the Cabazon decision that legalized tribal gaming across the country. What does that mean for the tribe? It's so humbling, because they're doing it for all the right reasons. This has been passed on to this current generation, and they really want to perpetuate it, diversify it, so we're ready for what comes next. The people you see getting involved on tribal council, the members, they definitely have this common core value of how we perpetuate this. For the tribal members, the elders, and even some people on our council to this day that were very instrumental, they take tremendous pride in pulling that off.

A 30-minute Skype call is not meant to reveal the true colors or inner soul. Key Points from the Episode with Justin Schenck: Justin started a podcast four years ago with his show “The Growth Now Movement,” not knowing quite what it would be, and it has become a movement. He ended up building a podcasting production and consulting business as a result, too. He also ended up creating a live event out of what was coming from the podcast, called Growth Now LIVE. Justin has had the desire to be an entrepreneur for a long time, which is what his podcast has allowed him to be. He adopted the famous saying, “Live happens for me, not to me.” That didn’t come easily when you look at what Justin’s life was like. His mother was addicted to opiates, his father was in jail, and he had a 1.7 GPA. If you look at the statistics, each of his parent’s situation meant he had a 50% chance of being an addict or going to jail himself. He chose not to live that way. He read the book, Who Moved My Cheese, and realized life is 10% what happens to you and 90% how you react to it. At 19, he was working in a direct sales business, had done well in his role, and started to manage people. This is where the entrepreneurial spark was lit. An employee came to him and said that, while he would have made more money working in fast food, what he learned by working for Justin was worth far more than that. In that moment, Justin realized that he wanted to inspire and guide people full time, and he should pursue making that his life’s work. He put together an event company to do personal development events, and had some success. One over-leveraged event that failed to sell enough tickets to pay for itself ended up killing the business. What he learned in that experience about what he needed to learn still was invaluable to his future success. He also learned that the right response is not to just quit. Justin’s entire life was never just handed to him, so he chose to keep fighting and learn from this failure. The learning was not instant. Right afterward, he called his mother and told her he was quitting. She pointed out that he didn’t fail, but was instead heading in the right direction and needed to keep heading there but with new knowledge. Just because you didn’t get what you wanted out of the current situation does not mean you aren’t headed in the right direction. We talked about his mother’s addiction, and interesting, despite what she was going through, she was still Justin’s rock and there for him through it all, even to her ultimate death at the hands of her addiction. She taught him that our rock bottom moments are the start of so much greatness. It can also be the end for people because you feel like better is impossible. But what actually matters is the choices we make in those moments to make things better for us and the people around us. There is choice and direction all around us. The key is that we have to listen (don’t just hear it, but actually listen and take it in). On the back of his mother’s death, he went on a three month, black-out-drunk bender. He kept going out drinking all night to keep from sitting in the pain, and feeling it. He had a mentor and coach who asked him where he was going one night, and when he said he was going drinking, she told him, “No you’re not. You’re going to sit and you’re going to feel this tonight.” While it was incredibly painful, when he woke up the next day, the weight of the pain was gone. He realized that, when we hit rock bottom, we can go through pain, and we can feel like there’s no way out. But it can end, and it’s up to us to decide when that moment is. He chose growth. He uses the Rule of 1% – he chooses to get 1% better every day, in his relationships, finances, health, etc. He reflects at the end of each day to see where he made progress, and if he didn’t, what he learned from not making it, and what he can do differently. And if he feels that he did nothing in a day, he has compassion for himself and realizes he can still get up the next day and be better. If you focus on 1% each day, you end up with exponential growth in a year. We look at other people, and think, “I want that. I want what they have.” Justin says we need to stop looking at other people because it only makes us feel bad. It’s a waste of time and our potential. What are you cultivating for yourself? Focus on that rather than what the other person is doing. Justin’s events were born of his podcast, and spawned a series of seminars in the early days. As he and his partner were working to launch the podcast, he got the call about his mother, who he dropped everything, drove 7.5 hours, and went to see her before she passed. He promised her he will make her proud and this will not go unnoticed. As the show started, his partner was talking about business, and he was talking about the self-improvement journey and values. The show changed into what it is now, with Justin hosting solo, and went further into this purpose that came from the moment when his mother died. We talked about the pursuit of money or impact, and Justin firmly believes that money is just a reaction to our impact. He said it really well, “I’ll impact a million lives before I have a million dollars.” With that intention, it’s not surprising to see that he’s clearly somewhere around that level of impact given that he’s close to his 300th episode, and gets thousands of listeners to each show he does, meaning there have already been over a million times his show has been taken into someone’s life. We got into the details about the upcoming Growth Now Movement Live, which is happening on September 25-27th. He named a number of seriously impactful people, some of which are doing keynotes, and some are part of panels. This includes people like Nick Santonastasso, Anthony Trucks, Justin Wren, Natalie Jill, Adam Schaeuble and others. None of them is paid to do it, which means they’re all there because of the purpose of it, which is part of why it makes sense to call it a Movement. The big difference with GNM Live is that the speakers are all intertwined in the event and the people, and you see it in the posts people share after the event. They name all the great people they connected with, and that includes the speakers, who they are doing more than just tagging in a post. These people have genuine connections on a personal level. As Justin says, it’s what happens in between the margins, where we get to make the direct relationships we thrive on in life. Chef Fabio Viviani has harbored a passion for food since his childhood growing up in Florence, Italy. Fabio owned and operated several restaurant concepts by the time he was 27 including two nightclubs and five restaurants in Florence. Best known for his television debut on Bravo’s hit series Top Chef—earning the “Fan Favorite” title—his on-screen appearances have propelled him to become one of the top culinary names in the country. He is a recurring guest on national television shows such as Good Morning America, The Rachael Ray Show, The Chew, and countless Food Network Shows such as Cutthroat Kitchen: All-Star Tournament, which he won. In February 2017, he also released “Fabio’s Kitchen,” a 52-episode cooking show hosted on YouTube. Teaming up with one of Chicago’s restaurant consulting group, Dine|Amic, Fabio opened Siena Tavern in Chicago in 2013 and the following year he opened Mercato by Fabio Viviani, a quick-service Italian concept with branches in Chicago and San Diego. Chef Fabio Viviani has harbored a passion for food since his childhood growing up in Florence, Italy. Between training in Italian and Mediterranean cuisine at the top hospitality schools and working with culinary luminaries such as Alessandro Panzani and Saverio Carmagini, Viviani also owned and operated several concepts by the time he was 27 including two nightclubs and five restaurants in Florence. Although a well-respected businessman in Italy, he was ready for a change and in 2005, Viviani moved to California where he opened his first USA based restaurant Café Firenze in Moorpark, CA. Teaming up with one of Chicago's restaurant consulting group, Dine|Amic, Viviani opened Siena Tavern in Chicago in 2013 and the following year he opened Mercato by Fabio Viviani, a quick-service Italian concept with branches in Chicago and San Diego. In 2015, Viviani continued to make a name for himself in Chicago by opening Bar Siena and Prime & Provisions. In 2016, he expanded to the LAX Delta terminal with the opening of Osteria by Fabio Viviani while opening additional Mercato by Fabio locations in Tempe, Phoenix, Cleveland, and Benton Harbor. When he was 25, he started a company putting together personal growth seminars and did well for a few years. Then, he and his business partner decided to go “all in” on an event together. It failed literally losing them the business. He then went into corporate life in medical sales but felt like something was missing – helping others in a meaningful way. Every single person that he interviews lives a life of intention. Intention is direction. What are your strengths and what things to do love to do and can do for hours on end. Surround yourself with people that have mastered to game in which you want to play. 9 times out of 10, you are not doing something new – you are trying to innovate on what already exists. Italian chef, restaurateur, and Top Chef Fan Favorite Fabio Viviani sits down for a bite to eat and a chat with Richard about spending his teenage years working his way through kitchens, immigrating into the United States, competing alongside Richard on Top Chef, and his method of balancing success with freedom in the culinary world.
Episode 026- As we're knee deep into grilling season, you've probably run through your tried and true favorite ways to serve grilled meat. Today, I will offer six suggestions of sauces and relishes that will bring moisture, taste, and accentuate the flavors that come with grilled meats. Normally, I studiously avoid discussing grilling (and barbecuing for that matter) because it seems that when most people talk about "guys and food", they go straight to grilling and barbecuing. I try to cover the other aspects of guys and food but here we are in the middle of July and, if we're talking about cooking during this time of year, it simply can't be avoided. For the purposes of clarification, this show we are not going to talk about barbecuing, low and slow cooking indirectly usually over coals or wood. That is a totally different discipline and the topic of another program. When I talk about grilling, I mean cooking over a high heat, directly from the bottom of the grill with the cover off. If you're thinking of trying something different, here are a few things that you can make and have at the ready to help make your grilled meat or fish something to remember. Mumbo Sauce- This is a sauce that is popular around the Baltimore and Washington D.C. area. I had never heard of it, but saw reference to it on Facebook. When I asked what it was and an old Marine Corps pal set me straight. He said it was just ketchup and hot sauce mixed together. I've mixed up ketchup and hot sauce plenty of times and I even bought a bottle of Heinz ketchup with Tabasco. Upon further inspection, it is something a little bit more than that. I have not cooked this recipe, but here is a version from Epicurious and it seems straight forward. Pesto- With pesto you get a sauce that uses up the fresh basil in your garden. You can store it in the fridge or freeze it to use during the wintertime. Since pignoli nuts (also known as pine nuts) can be super expensive, consider using chopped walnuts as a substitute. If you omit the nuts altogether and you can call it pistou which is the french version of the sauce. This garlicky sauce is great on beef or fish but equally good in pasta or potato salad. The recipe I use is from Fabio Viviani's cookbook, "Fabio's Italian Kitchen." Chimichurri- This Argentinian sauce, so you know it goes well with beef! It's like pistou but made with fresh parsley and oregano instead of basil. There are many different ways to make this. I've seen recipes that include cilantro and cumin and many other herbs and spices. The recipe that I have is from "Fire in My Belly: Real Cooking" by Kevin Gillespie and David Joachim. This is straight forward with the exception of esplette pepper which is described in the book as "hotter than paprika and milder than cayenne, and more aromatic than both. " So use either depending on your heat tolerance. Red Onion Marmalade (also known as a onion confit)- What is great about this is that it adds the onion flavor but also sweet and sour taste that counter balances the char that comes with grilled meat. You'll recall in Episode 022, the burger episode, it was recommended as an an accompaniment to a burger but works well with any meat. It is also good on grilled cheese sandwiches. The recipe that I use come from "The Joy of Cooking" and stays for about a month in your fridge. Fresh Mint Chutney- If you have mint in your garden, you know how quickly it can take over. Here is a recipe that will help you use up that mint, and take your fish or lamb to a higher level. This recipe is also from "The Joy of Cooking". Caponata- This is the chunky sweet and sour eggplant relish of my youth! Along with the eggplant, it's got celery, raisins, pignoli, tomatoes, capers and olives. This recipe has anchovies in it too. Do not omit them. Be a man, not a mouse! It adds a depth to the flavor and you won't even be able to sense that it is anchovies. The recipe that I use most often is from "The Frugal Gourmet Cooks Italian" which Epicurious has on its website. Two non alcoholic drinks to enjoy during the summertime: Switchel- Also known as "Old Haymaker's Punch", this is a drink that was the thirst quencher in colonial times before soda or Gatorade. This recipe is from "The Old Farmer's Almanac" and includes water, molasses, fresh ginger, and apple cider vinegar. Hurricane Punch- There is certainly an alcoholic version of this drink that you know about if you spent three minutes in New Orleans. However, I came across this non-alcoholic version recently when I was reading "International Night" by Mark and Talia Kurlansky. It is a delightful combination of citrus juices, ginger ale, and water. Last Fall, Chicago’s popular Siena Tavern opened its doors on Miami Beach in the iconic China Grill building. At the helm of the restaurant is the ever-charming Top Chef alum Fabio Viviani, who sat down with Chat Chow TV to talk all about Siena Tavern Miami location and its menu. Viviani has been working in kitchens since he was 11 years old in his native Italy. By the time he was 28 he was the owner of five different restaurants when he decided to sell them all and come to America. Since then he has opened several successful restaurants throughout the country and has become a well-recognized and well-liked chef. When Viviani and his partners decided bring the Siena Tavern concept to Miami, the restaurant team partnered up with local vendors like Bar Lab and Wynwood Brewing to help create the bar program. As for the menu, Viviani tells Chat Chow that he enlists his friends, family and co-workers to help narrow down the menu from 300 dishes to 35 “cravers.” As for what deems a dish as a “craver” he notes, “we like to have the ‘wow’ kind of dishes, because if I can’t get the reaction where you want to come back for more there is some more work to do on it.” Some of the most popular “cravers” on the menu are the house-made pastas, octopus, pizza and a meatball that’s so beloved it has it’s own Twitter account.
