Hi Bakers! This podcast marks the first of my podcast/videos that I will be releasing. I'm super excited but a bit new at all of this so please be patient if things are a bit different for the next few episodes. Also, the video will be out soon but is not quite ready today. On to our bake… If you made a cloud into a cake this would be it. Uniquely snow white, light textured, sweet, and fat-free with a caramel-tasting browned edge. This gluten-free Angel Food Cake uses egg whites and the air beaten into them to create a delicate texture. It is not a difficult cake to make but it requires some special attention to detail. You need to know how to separate eggs and fold in the flour. I walk you through all of this and more on my podcast and a video coming soon! I sure hope you try baking this stellar cake which is a family favorite and usually is devoured in a day. Enjoy -Carolyn PS If you have listened to me before you might be surprised that I'm sifting my flour and sugar! This is the one bake you really need to sift :) Equipment needed: 10” tube pan, hand mixer, rubber spatula. Special ingredients: Cream of Tartar Gluten-free Angel Food Cake Adapted from The Joy of Cooking's recipe for Angel Cake makes one 10” tube pan 1 1/4 cups of egg whites (~ from 8 large eggs is what I needed), room temp 1 teaspoon cream of tartar 1/2 teaspoon salt, fine grain 1 cup Cup4Cup multi-purpose gluten-free flour 1 1/4 cups granulated sugar, small grain works best 1/2 teaspoon vanilla extract Preheat oven to 350F and make sure your oven rack is in the middle position but low enough to fit the tube pan on the rack. Sift flour and sift sugar before measuring. Sift flour a second time and sift in 1/4 cup of the sugar. Set aside. Do not use a plastic bowl for making this cake! Any residual oil on it will prevent the egg whites from beating. As an extra measure of precaution, I always wash the beaters and bowls in hot soapy water (even if I think they are clean) to make sure they are entirely free of oil. Add egg whites, cream of tartar, and salt into the large mixing bowl. Beat with a hand mixer on medium until the whites are foamy. Increase the speed to medium-high and beat until soft peaks form. If you lift the beater out of the whites and a peak forms on the surface but it falls over a bit, this is the soft peaks stage. Time to add the sugar. Add the granulated sugar by sprinkling it into the batter a 1/4 cup at a time. Beat to just combine after each addition. Continue doing this until all the sugar is used. The egg whites and sugar will get thick and marshmallow-textured. Beat until stiff peaks form. A stiff peak is when the whites form a peak that doesn't fall over when you lift the beaters out of the whites. Grab a spatula ( i know this is rubber/plastic but it's ok to use at this stage of mixing) and start adding the flour. Sprinkle 1/4 of the flour/sugar mix over the beaten egg whites and fold it in. Continue doing this until all the flour is used. Be careful to fold until the flour is just mixed in. Spoon the batter into an ungreased tube pan. Smooth it out to the edges, into the curves, and flat on top. Next, using a skewer or a knife, run it through the batter to get rid of any air pockets. Do this gently so as not to deflate the batter. You can make a pretty design on top with your knife, I usually do swirls. Bake in the oven for about 35-40 minutes** or until the cake springs back in the middle when touched with your finger. To cool the cake without deflating, center a large plate over the tube pan and turn it upside down. Let cool for at least two hours. This helps the cake stay tall. Loosen the cake from the pan by running a serrated knife around the edges and base. Turn the cake over onto a plate. Slice using a serrated knife and small sawing motions. Welcome to October 10, 2022 on the National Day Calendar. Today we celebrate a mysterious cake and a tempting fruit. The origins of angel food cake carries an air of mystery. The recipe came from India, but was given to an American family in 1883 by a friend. The family owned a boarding house along the Hudson River and the owner was a skilled baker who took her friend's recipe to a whole new height. It is said that she baked one cake at a time behind closed doors to protect the secret recipe. The lighter than air results were a great success, and angel food cake became a favorite of First Lady, Lucy Webb Hayes. Today, this cake can be found almost anywhere. On National Angel Food Cake Day, celebrate the lighter than air concoction that doesn't require a wing and a prayer. For fans of apples, this is the best time of the year. Once Autumn comes around, it's apple picking season. On average, each American will consume about 16 pounds of apples every year, so it's good that the trees produce as much of the delicious fruit as they do—about 840 pounds every season. That means plenty of Red Delicious, McIntosh, and Fujis for everyone. There are dozens of varieties. Actually, there are nearly 2,500 types of apples but only about 100 of them are sold commercially. Welcome to May 19, 2022 on the National Day Calendar. Today we celebrate colorful alternatives and sinful desserts. Buying eggs at the grocery store is a fairly bland affair when it comes to color—everything is either brown or white. Most of the eggs we buy come from a variety of chicken known as the Leghorn. But there are plenty of other chicken breeds that lay much more colorful eggs. There's a breed called the Cuckoo Blubber that produces blue-green colored eggs. If that's not your hue, a Maran chicken will lay you some red eggs. But perhaps you want even more color variety. Then check out the hybrid breed called the Easter Egger. This bird lays pink, green, and blue eggs and it's totally random. May is National Egg Month, when you can enjoy a variety of new colors and delicious recipes. No one is quite sure where the name Devil's Food Cake came from. But these light, moist chocolate cakes made quite a stir when they popped up in Indiana. One of the first recipes appeared in the 1898 edition of the Hagerstown Exponent. Right in the heart of the heartland, folks were swooning over the rich results made from boiling water and cocoa powder. Perhaps they took off because they appeared side by side with Angel Food Cake recipes and offered a tempting alternative. I believe that was because I still followed the baking instructions for the tube pan instead of instructions more meant for loaf pans. The first time I made angel food cake was from a recipe adapted from https://www.chocolatemoosey.com/angel-food-cake-in-a-loaf-pan/. For the recipe listed below I tried to adapt the instructions from this recipe for loaf pans, which will yield a much better result. |~ Featured Recipe for this Episode ~| This recipe is largely based on the recipe from Cake by Courtney found at https://cakebycourtney.com/angel-food-cake/. |~ 1 c all-purpose flour & 2 T cornstarch OR 1 c + 2 T cake flour 1-3/4 c sugar 1/4 t salt 1-1/2 t cream of tartar zest of 3 lemons OR 2 oranges 13 egg whites Preheat oven to 325°. Combine 1 c of your sugar, the flour & cornstarch, and salt in a bowl and whisk to combine. Sift them through a mesh strainer four times. Add your egg whites to a large bowl or the bowl of a stand mixer. Whisk or beat the egg whites on mid-high. When they start to foam, add your cream of tartar and zest. Slowly add the remaining 3/4 c of sugar while the egg whites continue to beat. Stop beating the egg whites when you reach soft peaks- they should form a peak as you pull the whisk/beaters out of the bowl, and then the peak will fall. Sift your dry ingredients into the egg whites in four batches, folding them in gently between batches (literally JUST until mixed). Pour the batter into two ungreased 9x5" loaf pans and place them onto a large baking tray together. Bake for 45 to 55 minutes at 325° or until brown and no longer sticky on top. Don't open the oven until you're sure it's done. Make sure your batter is set by shaking the pans slightly to see if they still have a liquidy jiggle in the middle. Remove from the oven and turn the loaf pans upside down and rest the handles on two things of equal height (I used cans of beans!) to allow air to cool the cake but so it doesn't collapse. Let it cool for an hour before removing from the pan to serve. Lemon Icing 1 c powdered sugar zest of 1 lemon 1 T lemon juice 1 T heavy cream yellow food coloring (for extra yellow hue) Combine all of the ingredients in a large bowl and whisk together vigorously until smooth. INGREDIENTS: 1.5 cups of egg whites 1.5 cups of sifted powdered sugar 1 cup of all purpose flour 1.5 teaspoons of cream of tartar 1 teaspoon of vanilla 1 cup of granulated sugar RECIPE: 1. Mix flour and powdered sugar in a separate bowl -- put egg whites in a separate bowl 2. Add cream and vanilla to eggs then mix until soft peaks appear 3. Add in granulated sugar until it all becomes stiff peaks then fold in the powdered sugar and flour mix. 4. Bake at 350 degrees. 5. Add fruit at the end if you want

How Do You Like Your Eggs Cooked? Welcome to May 19th, 2021 on the National Day Calendar. Today we celebrate scrambling your menu and wicked good cake. Cooking breakfast for a crowd? You might want to buy an ostrich egg. The average size is over 3 pounds and just one of them is the equivalent of 24 chicken eggs. And the largest ostrich egg on record was a whopping 5 pounds! Ouch! At the other end of the spectrum, a species of hummingbird in Jamaica lays eggs that weigh about 1/10 of an ounce. So unless you shrink down your guests, literally, they won't do you much good as food. May is National Egg Month, a good time to mix things up. And if you're partial to good old chicken eggs there's nothing wrong with trying a new recipe. No one is quite sure where the name Devil's Food Cake came from. But these light, moist chocolate cakes made quite a stir when they popped up in Indiana. One of the first recipes appeared in the 1898 edition of the Hagerstown Exponent. Right in the heart of the heartland, folks were swooning over the rich results made from boiling water and cocoa powder. Perhaps they took off because they appeared side by side with Angel Food Cake recipes and offered a tempting alternative. A little girl’s inventiveness saves Christmas when she remembers: "Be not forgetful to entertain strangers: for thereby some have entertained angels unawares." On a warm December day, 11-year-old Celeste Peterson’s father leans against his rainbow-painted Ice Cream Truck, concerned that the freezer has frizzled and left him with nothing but a river of cream and sugar. Celeste shrugs, licking two melting popsicles at once. Mr. Peterson worries he’ll have no ice cream to sell and since it’s cold outside, it’s already harder to sell ice cream in the winter. If he pays to fix the freezer in the ice cream truck, he will have no money left for Christmas gifts. Celeste tells her father the next best thing to ice cream is angel food cake. She says that angels eat angel food cake, and she’s going to make angel food cakes for her dad to sell, so he can pay to fix the freezer. She’s sure he’ll have money left for gifts and she might even meet some angels if she fills the truck with angel food cakes. Celeste mixes up the delicious batter, scrapes it into baking tins and places them in the warm oven. When the angel food cake is done, she gives her father the first slice and explains how they’ll sell enough angel food cake to buy a new freezer. Her dad wants to know who—if anyone—is going to buy angel food cake from an ice cream truck in December. Celeste says her mom, who has been with the angels since last Christmas, would say the angels are going to buy the cakes. In fact, Celeste thinks her mom is going to send the angels to the truck. Mr. Peterson tells Celeste he is going to try to fix the freezer himself and asks her not to overdo it baking the cakes. Celeste says she never overdoes anything, but might have to take the week off from school. Mr. Peterson is doubtful but scratches out a quick note to her 6th grade teacher: “Mrs. Rogers, Celeste has a stomach ache and can’t come to school this week. She ate too much sugar. I’m sure you understand. Yours, Mr. Peterson." Despite unannounced visits from Mrs. Rogers, who tries to put an end to Celeste’s cake baking, Celeste makes enough angel food cakes to fill the entire ice cream truck. Saturday is a beautiful December day with an inch of snow. So many strangers, including Christmas carolers, visit the truck that Celeste knows they must be angels. Her father makes so much money he buys a new truck instead of fixing the broken freezer and names it the “Angel Food Cake Ice Cream Truck.” On Christmas morning, there are enough presents beneath Celeste’s tree for everyone in the neighborhood. From then on, Celeste and Mr. Peterson sell angel food cake with ice cream and never lack a thing. Celeste tells everyone it was because her mother sent angels from heaven—who had their cake, and ate it, too. She even hangs a sign on the new truck that says: “Be not forgetful to entertain strangers: for thereby some have entertained angels unawares.”
