This sequel to what is now regarded as one of the most beloved Christian films of all time (THE BUTTERCREAM GANG) misses the mark by messing with the original formula. Released only one year after the original, THE BUTTERCREAM GANG: SECRET OF TREASURE MOUNTAIN feels like a completely different series by focusing on a GOONIES-style adventure subplot instead of the friendship between the ButterCreamers. The original idea of the ButterCream Gang is that they were a group of neighborhood boys who do good deeds; the new generation now admits girls (woke much?) and seems to have forgotten entirely about helping the community, save for a lemonade stand fundraiser here and there. Several original cast members returned for round two, yet SECRET OF TREASURE MOUNTAIN picks a new boy named Eldon and introduces conflict based on his insecurity over not being seen as a "hero" among the band of do-gooders. Fortunately for Eldon, an opportunity to gain some much-needed recognition arrives when he stumbles upon an old document, written in Spanish, that appears to be a treasure map on what is now the property of beloved neighborhood figure Mr. Graff. Conveniently, a Spanish archeologist named Dr. Almodovar has recently come to town and can help the children follow the map to a mysterious treasure they hope will raise the funds to save Mr. Graff's property. Little do Eldon and the ButterCreamers know that Dr. Almodovar is actually a descendant of a Spanish conquistador, seen in a flashback at the beginning of the film, attempting to find hidden gold cursed by monks. This is the first Christian movie we've ever watched attributing to monks the ability to put curses on things, but sure enough, Eldon follows the trail to a mysterious local monastery. Can Eldon's pure heart outsmart the conniving Dr. Almodovar and put the gold to good use, preventing Eldon from falling to the curse that has harmed everyone else who tried to snatch it? SECRET OF TREASURE MOUNTAIN has the bones to be an entertaining family film, but its haphazardly paced writing strips away the real story of friendship that made the original BUTTERCREAM GANG become firmly entrenched in millennial Christian nostalgia. On this episode of Taste Buds with Deb, host Debra Eckerling speaks with Babette Pepaj, founder of BakeSpace.com and BakeBot.ai. The free AI-powered cooking assistant generates recipes, digitizes family favorites and suggests ingredient swaps. “It helps you do everything from thinking about what foods you're going to buy to seeing what's in the fridge [and figuring] out what you can make with what you already have on hand,” Pepaj says. “AI … isn't just about making a new recipe, this is about actually helping someone at the most important moment of cooking.” As the High Holidays approach, people start pulling out old recipe books - passed down through generations - or binders with cutouts of recipes. However, many of these recipes have faded or are missing ingredients or instructions. If you are the person who has been making that recipe for years, it's not a problem. But what about everyone else? The magic of AI is it can look at a recipe, see if something's missing and then be able to modify it. It's also great for adapting it for a different number of servings and substitutions. “For example, you might have a recipe that's [been] in your family and all of a sudden your sister-in-law is gluten free [or] maybe you became vegan; you want to keep it within the same style, you want to make sure it has the same flavors,” she explains. “When [you] are preparing … especially anything that's holiday related - anything that's truly memorable, anything that has history and tradition - you don't want to mess up.” Babette Pepaj talks about BakeBot, ways to use AI for not just recipes, but confidence in the kitchen, and the evolution of recipe discovery. “Social media is like the cooking tool no one knew that they needed,” she says. Cupcake win! Had a great result using Bob's Red Mill buttermilk for my cakes. Nice buttercream color as well from the Ann Clark food coloring I picked up and the 1M piping tip! Nice to finally report on a triumph hahah! Couple of news stories - Network ITV has given new GBBO host Alison Hammond a very nice contract to lock her into the network. In another article (both of these from the Irish Mirror) Prue talks about how nice it is to have another woman on the show and that she didn't get a lot of the jokes when it was 3 men. A quick "Who are they" segment about Juniors host Harry Hill (not his birth name) where we learn a bit about him including his original profession - I was very surprised! Heat A of Juniors follows the "formula" two very young and absolutely adorable little ones - Lola and Quique - are my out of the box favorites. Lola's attitude on baking is what EVERYONE's should be! "Hey Ho, let's give it a go!" Mia age 11, Macy, 10 and Eliza are the "middle of the packers", Will, 11, is the one I feel is going to bring nice artistic flare. Joey, 11, is probably the "ringer" who is a liiiiitle arrogant but knows his stuff it appears, and then the "veteran" is Kezia at age 13. Paul was substituting for Liam who was out sick so the kids had a nice surprise when he showed up! First technical challenge was "mini piggy rolls" essentially swiss rolled sponge with berry and mascarpone filling coated in pink chocolate and decorated to look like a pig. The big test here was "the sponge". Very easy to overbake this or not cool it right and you get a cracked mess... which many did. One comment - they only had an HOUR for this... that's a tough call. Mia had the most problems... and only delivered 3 of the 6 ... which landed her last in the technical. Lola - who approached the whole thing with a smile created what Paul called "abstract art" and landed 7th. There were a few that were dry and not so nice looking... Quique went a little chocolate crazy, Joey came out decently and Kezia was the definite "most attractive pigs" which landed her the technical win. In the showstopper, the bakers had to create a cake depicted their proudest moment. There were some sweet stories, and a lot of "lemon cake" choices. Fondant or Buttercream were the typical toppers with a few interesting flavors. three interesting cakes: Macy with carrot cake (it collapsed a bit - as carrot cake can do - under the weight of the fondant); Quique with an almond cake that used olive oil, and Joey with a Japanese Chiffon cake. This paid off for Joey even though he overbaked them and they burned a bit... but they still tasted amazing. He pulled out the Star baker with this. Picked up a tip - when using artificial flavors - like will and his bubblegum buttercream - a little salt can balance out the artificial flavoring. Hi Bakers, Who loves coconut?? I do and I love the chewy bits and rich, sweet, milky coconut taste any way I can get it! This easy cake recipe has tons of coconut flavor without the use of extract so it's naturally delicious. I put coconut milk in every bit of it… the cake, simple syrup, and the frosting. This dense, moist, coconutty cake is covered in the most addictive frosting that is a buttercream/cream cheese hybrid with the best qualities of both. This is a great cake. In fact, had a piece for breakfast with my coffee and then wanted more for lunch so you know it's good. Coconut lovers this one is for you! Enjoy -Carolyn Gluten-Free Coconut Cake Adapted from the Coconut Cake recipe by Sally's Baking Addiction makes a two layer 9” square cake Dry ingredients 2 1/4 cups Cup4Cup multi-purpose gluten-free flour 1/4 cup blanched almond flour 1 teaspoon sweet rice flour* 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 3/4 teaspoon salt Wet Ingredients 3/4 cup butter, softened 1 2/3 cups granulated sugar 4 large eggs 1/2 cup buttermilk 3/4 cup full-fat coconut milk, shaken 2 tablespoons applesauce, unsweetened 1 teaspoon vanilla extract 1 cup sweetened shredded coconut desired Coconut Simple Syrup 1/2 cup coconut milk liquid or low-fat coconut milk 1/2 cup granulated sugar Cream Cheese Buttercream Frosting 6 tablespoons butter, softened 1-8 ounce package of cream cheese 2 tablespoons coconut milk solids 1 teaspoon vanilla 3 cups powdered sugar ( you can use more if you want the frosting thicker) Garnish coconut chips Toasted coconut chips ( Bake in a 350F oven on a baking tray for about 5- 10 minutes or until golden brown. Stir these and watch carefully, they can burn quite quickly! I browned mine while the cake was cooling and the oven was still hot.) Preheat the oven to 350F and grease two 9” square pans. In a medium-sized bowl, whisk together dry ingredients and set aside. In a large bowl, mix together butter and sugar for a few minutes or until light and fluffy. Scrape down the bowl and add the eggs. Beat for 2 minutes or until combined thoroughly. Add buttermilk, coconut milk, applesauce, and vanilla, and mix well. Add dry ingredients to the wet and stir until almost mixed. Add coconut and mix until just combined. Scrape down the bowl and mix briefly. Divide the dough evenly into the two baking pans and place on the center rack of the oven. Bake for 15 minutes and then rotate the pans. Bake for about 15 more minutes or until a tester inserted into the middle of the cake comes out clean. Cool cakes completely on a rack. Run a knife around the edge of the cakes before removing them from the baking pans. If not using immediately, wrap cakes well with plastic wrap and refrigerate for up to 3 days until ready to frost. Coconut Simple Syrup Step In a small saucepan combine coconut milk and sugar. Cook while stirring over medium-high heat until sugar dissolves and the mixture is the consistency of syrup. Cool until warm. Brush the top of each cake with the syrup and let it soak in. If the cakes are cold, poke holes all over the surface of the cake to speed up the absorption of the syrup. Frosting Beat butter with an electric mixer in a medium-sized bowl until no lumps remain. Add cream cheese and coconut cream solids and beat until just combined. Add powdered sugar and vanilla and beat until smooth. Frosting can be made ahead and stored in the fridge or used immediately. When the syrup has soaked in, frost the top of one of the cakes. Put the frosted side and the soaked top of the other cake together. Frost the top and sides of the stacked cake. I like to do this messy and make a lot of swirls and points for texture. Press coconut flakes onto the side of the cake and cover the top with toasted coconut. Enjoy! *Sweet rice flour is made from glutinous rice and is different from regular rice flour. Earthquake Carrot Cake Box mix of carrot cake with modifications: Substituted half water and half pineapple juice for the water measurement Cup of pecan chips Buttercream frosting from a can with: Can of drained pineapple chunks Pecan chips Splashes of pineapple juice And, glaze each cake layer with pineapple juice before layering and frosting. Warning: the cake may fall apart. Finally, garnish with Jell-O flavored jelly beans. DO NOT OVERBAKE YOUR LAYERS! Sarah's Experimental Carrot Cookies 2 cups finely ground almond flour 1/4 cup maple syrup 1/4 cup olive oil 2 Tbs. vanilla extract pinch of salt shredded carrots (about 2/3 cup? maybe?) ginger to taste (aka a lot) Mix. Scoop onto cookie sheet in tablespoon balls and flatten with a fork (or your fingers, lets be honest). Bake at 350 for approx 18-22 minutes. On this Three Kitchens Podcast episode we're trying a traditional American cake recipe, German's Chocolate Cake. Turns out, it's not German at all. If that sounds confusing, don't worry, Heather explains the history of the name and how to make it. We loved this fluffy, moist chocolate cake. It's not overly sweet or chocolately, but a surprisingly light chocolate cake. There are a few extra steps in the method but in our opinion, it is totally worth it. The boiled coconut pecan icing is the other distinctive element of a German's Chocolate Cake. Our reviews were a little divided on this icing, but the good news is, this cake would be delicious with whatever sort of icing you love. Buttercream? Cream cheese? Yes and yes. We recommend giving this one a go the next time you are looking to bake a cake. In this episode, Jessica sits down with Miri Nadler to unpack her inspiring story of overcoming adversity and building her hugely successful cake business that now has over 100K combined followers on TikTok and Instagram… and growing! Miri is originally from Los Angeles where she began her food blog in 2009 called “Miri in the Village.” She set out to teach herself how to bake, and in the process, perfect her recipes, technique, and flavor pairings. While in LA, Miri worked in the administration of a luxury bakery, where she received a front-row education on how to run a kitchen. Though she explored many culinary avenues on her blog, Miri’s biggest strength and deepest passion has always been pastries. In 2016, Miri and her family moved to North Carolina, and are currently settled in Charlotte. Having seen women in Asia use palette knives to decorate cakes on Instagram, Miri made her 2019 New Year’s resolution to figure out how to do the same. It wasn’t long until Miri mastered the craft and developed her own unique style. An Instagram account and several requests for orders later, Ten Bloom Cakes was born. I eat it anyway. Because my blood burns, I decide not to have children. My father's father was full of copper. His son, a liver textured with scarring. I ate it anyway. I asked for guidance, not a leash and a collar. I turn my belly inside out - it's dappled with eggs the color of buttercream. My hens don't know which are fertilized and which aren't. My mother lost her wedding ring in vegetable garden dirt. I dig out the rot. I say I decided not to have children but no man ever asked me and meant it. If each parent gives you a defective gene, you can bake a cake or crawl across the floor between buckets of your own blood. I dig but never find the ring. Some hens sit on eggs until they rot. Some men take hammers to their wives. My lover yawns. Of all the stories I could tell, I've learned of all the stories you could tell. Her blood burned. My mother made a red velvet cake with buttercream frosting. She ate the whole thing. She never told anyone who believed her. He might have been sick his whole broken bowl of a life. I might find a golden ring around my iris. I might not be a creature versed in dirt. Anger, like a memory, takes away as much as it provides. Some hens leave their eggs where they land. Either way, we follow. We gather. We eat them. Jennifer Thornton just returned from France where she hung out with a woman known as the "Queen of Olive Oil," who happens to be a friends of hers. She has been a friend of mine for a while, but even I had no idea about the depth of her olive oil knowledge until now! Jennifer is known locally as the creator and owner of Buttercream & Olive Oil, a culinary company that is dedicated to using local, seasonal, and organic ingredients, with a particular affinity for French foods and cooking style and all kinds of things she learned while living in Paris and the South of France over five years. She's known for classes on French macarons, pastries and croissants but it is her Olive Oil Discovery class that piqued my interest in talking with her. When in France she spent time harvesting olives and learned about how pure French olive oil was made. Then she traveled Europe as an olive oil judge!
