Chef Alex Seidel is a force in the world of farm to food. From winning the James Beard Best Chef SW in 2018, critically acclaimed restaurants Fruition and Mercantile, to starting his own farm and creamery, Alex walks the talk. His most recent endeavor is Chook Chicken, a Colorado-based fast-casual, emerging growth chain restaurant with three units to date. Chook serves up rotisserie chicken seasoned and cooked to perfection along with delicious veggies and sides. Their mantra is “Delicious Food, Sources Right, Fit for All. Lovely.” Born in 1973 in Wisconsin, Seidel began his culinary career at 14, serving as sous chef at Racine's Main Street Bistro by age 20. He attended culinary school at Western Culinary Institute in Portland, Oregon, finishing at the top of his class.Alex Seidel is chef-owner of Fruition Restaurant, Mercantile dining & provision, Füdmill and Chook. Novembre 2022. L'interprétation du monologue « Pour un temps sois peu » par une personne cisgenre provoque un tollé auprès des collectifs de personnes transgenres. En cause, l'appropriation des rôles et des récits de personnes trans par les personnes cis au théâtre et au cinéma. Dans la mise en scène de Fanny Sintès, c'est Laurène Marx, l'autrice trans non-binaire qui interprète le rôle. Un récit de soi à l'humour mordant porté au Théâtre de Belleville. Les débats n'ont fait que renforcer la pertinence de cette réappropriation salvatrice. Eric Bordelet is both the maker and the brand at Chateau de Hauteville in the southern edge of Normandy in the village of Châtaigne. The fact that he exports 80% of his ciders to markets around the world at a premium price worthy of a fine wine is just one of the reasons that the brand Eric Bordelet is so highly sought after by both wine and cider enthusiasts. This episode is Part 1 of a two-part chat. Part 2 will follow as episode 058. During this chat The Nose and I are having lunch with Eric at the Hôtel Gayot in the lovely and lively village Bagnoles de l'Orne. You will find Eric’s cider on tap at this hotels restaurant - though it might not say anything other than “cider” it is indeed Bordelet! There is also a shop where you can buy many of Eric’s cider’s and poires (perry) and calvados. Listen to the background sounds of lunch time at as we discuss his path towards cider, beginning when he worked as a waiter, then a sommelier. Part of Eric's fame is that in Paris at the time his wine list was second to none...and for France not to mention Paris that is quite a feat. With his parents retirement and the realization that one could not age into the role of a sommelier he decided to head back to the family farm and make cider. Eric discusses how his interest in food and working with chefs, helped to hone his cider skills. And certainly the impact of his late friend and mentor Didier Daganeau. In Part 2 we tour the rebuilding of the Chateau de Hauteville and the chay (the common phrase in this region for cidery). Barbara Shinn and David Page – native Midwesterners – met in 1988 when they were both living in the San Francisco Bay Area.Their first few years together were spent immersed in the culture of Northern California art and cuisine. In the early 90’s Barbara and David made a bold choice when they decided to move to NYC to further their careers by opening Home – one of the first farm to table restaurants on the East Coast. After building a successful neighborhood nano-empire with the addition of Drover’s Tap Room and Home Away from Home, Barbara and David set out to reconnect with nature when in 1998 they planted 20 acres of grapevines and built an estate winery and Farmhouse bed and breakfast which has been named a top American wine destination by Gayot, Fodors, U.S. News Travel, Food and Wine and Bon Appetit.
