Jon Shari of Little Cottage, (https://www.littlecottagebrewery.com) just east of Atlanta, was an avoid homebrewer who built a reputation for his big dessert-focused imperial stouts, and built on that momentum to launch the small, taproom-focused brewery in 2021. But brewing for the taproom is still a small affair, with a very manual 3.5 bbl brewhouse that makes some difficult-to-brew beers even harder. In this episode, he discusses the process behind his stouts, from recipe to adjunct ingredient additions, including: dealing with difficult high gravity fermentations selecting flavorful base malts and specialty malts dialing in finishing gravity to accentuate ingredient flavors taking an ingredient-specific approach to additions And more. Scams are kind of like zombies. The formerly popular TV show The Walking Dead is set in a sort of zombie apocalypse and was filmed here in Atlanta. But like zombies, the scams never stop and there seems to be a never-ending litany of folks who are trying to get their hands on our money. It truly is a serious problem- the FTC received 5.7 million reports with a total of $5.9 billion lost to scams in 2021! And on top of that scammers have gotten really sophisticated and are specifically targeting younger folks by using platforms like social media or dating apps and targeting Venmo balances and crypto holdings. Listen as we discuss a number of different sneaky scams that are targeting a younger generation, how they work, and then what you can do to protect your money. Rainy Day Brewery wants you to brew your own beer and explore some classic styles Amid the craze of massively-hopped IPAs and boozy, barrel-aged stouts there's a bit of a resurgence in the love of classic beer styles. Here in Georgia, and I'm sure some other places as well, we're seeing breweries focus on these drinkin' beers. Pale Ale, Pilsner, Blonde Ale, and even a simple Porter or Stout can be a great beer to relax and enjoy. No hype, no lines, no madness, just great beer. Michael Syrop and Ron Mitchell of Rainy Day Brewery share how these simple beer styles can really test a brewer's skill. There's nowhere to hide with these beers. No huge fruit additions or bourbon-barrel to mask flaws. What you brew is what you get. Rainy Day Brewery won the top Homebrewers spot in our Best of Georgia Beer 2019 survey so we invited them to join us on a show and share their tips for homebrewing. The best part of creating your own homebrew recipes is the research Ron and Michael share with us what got them started in homebrewing and why you would want to start homebrewing with the huge variety of beers available today. They share their process for creating your own homebrew recipes. My personal favorite step is all the research that goes into it. I'm all about the hard work. We also talk about new developments in brewing processes and science, experimental hops and other interesting ingredients, and a special #5thSegment on brewing for competitions. Homebrewing can be simple and relatively inexpensive to get started. It's a great way to spend a day with your friends, or a quiet day doing a solo brew. Go on and find yourself a homebrew club and dive in. BGR+RDB! Rainy Day Brewery's Ron Mitchell and Michael Syrop shared their brewing tips and their beer with Tim and Brian this week. Brülosophy’s Marshall Schott talks exBEERimentation We all know the saying, "if it ain't broke, don't fix it." However, Marshall Schott of Brülosophy reminds us that just because something isn't broken doesn't mean it can't be improved. Schott and a team of other hardcore homebrewers at Brülosophy examine some of the long-held traditions of brewing to see if there's a better way to do things. Sometimes they do find a better way, and occasionally that upsets a few people. It can be tough to let go of traditions. Through their "exBEERiments" the Brülosophy team has tested the idea that a lager needs months of lagering to be great, the importance/necessity of long mash times and boils for your beers, fermentation temperatures, and a host of other brewing methods. They've helped a lot of homebrewers in making better beer, and even a few professional brewers. One of the best things about these exBEERiments is it gets people talking about the way we brew. Brülosophy shares Short & Shoddy recipes to give you a tasty beer and a quick brew day. (Photo: Brülosophy)[/caption] Learn more about hops and yeast from Brülosophy Brülosophy has a host of other resources on their site as well. The Hop Chronicles examine the performance of hop varieties in single hop beers and Short & Shoddy offers up quick recipes for various brews. They also share several methods for brewing including mashing, kegging, fermenting, and how to harvest your own yeast. It's a one-stop information shop over there. If you're more of a listener than a reader (and we definitely hope that's the case) you can check out the Brülosophy Podcast for more on their exBEERiments, Q&A sessions with the team and industry experts, and plenty of other brewing-related topics. Won't you take me to, Monkey Town We took a quick road trip to Tennessee recently and found ourselves at Monkey Town Brewing in Dayton, home of the Scopes Monkey Trial. None of my friends were familiar with the case, but it's a pretty interesting case. The short of it is that a high school teacher (John T. Scopes) was accused of teaching evolution in school at a time when that was illegal. He didn't recall ever teaching evolution but took the fall as he thought it would be good publicity for the town. As promised in the show, here's the link to the Wiki on the Scopes Trial. The folks at Monkey Town were extremely friendly and offered up some great beers, especially their NEIPAs and pastry stouts. If you find yourself in Dayton we recommend you stop by. Shout out to the crew at Brew Chatt for the recommendation! We asked some of Georgia's best homebrewers for a few tips Jay Brantley and Jon Shari (Little Cottage Brewery) took top honors in our 2018 Best of Georgia Beer Awards. We do these awards annually and the homebrewer category was a new addition last year. Our readers/listeners voted for their favorites, and Jay and Jon beat out a strong pool of nominees. When it came time for another homebrewing show we figure these guys were the ones to come join us, so here we are. Little Cottage Brewery has been a friend of the show from the beginning, Jon joined us on Show #1 way back in 2016. He's well-known throughout the Georgia beer community for brewing up amazing stouts and sour beers. Little Cottage made an appearance at the 2018 WeldWerks Invitational beer fest and even got a shout out from Cool Material as one of "8 Breweries About to Blow Up." It's easy to mistake Jon's homebrew for a "real" brewery, he puts a lot of work into custom labels for his bottles and the quality of the beer inside rivals the best commercial breweries. He's even managed to land the #12 spot on Untappd's best US breweries. Impressive. Beernice gets some homebrew tips from (L) Jay Brantley and (R) Jon Shari/Little Cottage Brewery.[/caption] Jay Brantley takes more of a walk softly and carry a big stick approach. He's not much for social media, hasn't given an official name to his homebrewery yet, and his beers aren't listed on Untappd. However, Jay keeps his head down and brews away - 52 batches in 2018. With a full-time job, wife, and three kids, that's even more impressive. He's a fan of nuance and balance in his beers and meticulously plans and tracks his brews. In addition to their tips for nailing IPAs and Stouts, we talk with the guys about what got them started in homebrewing, homebrew clubs (shout out to Jay's club, PC Mashers), homebrew competitions, and Jon even shares tips on how to build and keep your own house wild culture.
WeldWerks talks Juicy Bits, big stouts, and beer fests Greeley isn't the first city people think of when you mention craft beer in Colorado, or the second... or the third. But WeldWerks Brewing isn't letting something like geography stand in their way. At just over three years old they've been named the best new brewery in America, won Gold and Silver medals at the Great American Beer Fest, and they recently purchased the land their taproom is on for a big expansion. Not bad, WeldWerks. Not bad. This week we're joined by Co-Owner and Head Brewer Neil Fisher and Director of Sales & Marketing Jake Goodman to talk about their booming brewery. They brewed 137 new beers in 2018. with over 100 going into packages. They share the success of the first WeldWerks Invitational beer fest and the charitable causes it will support, plus planning for 2019. We talk about their flagship Juicy Bits IPA (which Neil shared the recipe for online) and their 14.2% stout, Medianoche, which is boiled continuously for up to 36 hours. Neil talks about the upcoming Brewers Retreat he's taking part in, and amazing opportunity for a serious beer geek to brew with some of the best brewers in the country. Commuting to work sucks! It’s likely one of your least favorite things to do everyday assuming you’re an individual commuter, driving along in your own metal box that costs you thousands to own and operate. It’s stressful dealing with traffic and not to mention our cars encourage us to be lazy and perpetuate the lifestyle of excess and consumption. I mean does it really require a $15,000+ luxury vehicle that weighs over 4,000 lbs to transport a single individual to work and back?! In this episode we discuss the alternatives to traditional commuting, and specifically how these alternatives benefit employees, employers, cities as a whole, and obviously the environment. Listen to the entire episode to learn what steps you can take today, regardless of your situation. At the beginning of this episode we each cracked open a couple beers from John, a local home brewer here in Atlanta- sorry, you won't be finding this one on your local grocery store shelf. It is called A Splinter in the Mind by Little Cottage, a flanders red which we've dubbed our favorite beer of 2018!
