Learn how Old Irving became so successful, it needed to open a new production facility — and what went into the expansion. 02:18 Beer Myth: When brewing sour beers, is kettle souring lazy? Katherine has some HOT TAKES about this, and Trevor from Old Irving Brewing Co. explains the science behind what actually creates sour beers. Discover the facts behind this common misconception and learn how kettle souring is a legitimate and skillful method that produces some of the best-tasting sours. Bonus: learn how a “West Coast Pilsner” is different from a regular Pilsner and what it has to do with a thing known as a Cold IPA. 10:08 NAME OF BREWERY: Old Irving Brewing Co. Head Brewer and Co-Founder Trevor Rose-Hamblin shares the back story of his move from restauranteur to brewer, including an appearance on BrewDog that led to him brewing in Scotland for 3 months. Trevor also explains how after just 2 years of development, his Citra & Mosaic hopped Hazy IPA Beezer won a gold medal at the Great American Beer Festival in 2019 and another gold at the World Beer Cup in Las Vegas in 2024 (both in the Hazy IPA category).  After the beer break, Trevor and Brian crack open a Della, which won a silver medal at the Great American Beer Festival in 2021 in the German-Style Kölsch category. Della is a Kölsch-Style Ale brewed with high-quality Pilsner, a touch of Vienna malt, and lightly hopped with Zuper Saazer, Hallertau Mittelfrüh, & Tettnang. Trevor also talks about Old Irving's new brewing facility, what compelled them to move into a new facility, and the craft beer community in Chicago that helped spur their growth. Brian also coaxes Trevor into doing his hilarious impersonation of one of his Chicago craft beer community colleagues (but you'll have to listen to find out which one!). 58:35 Beer Behavior: How does scarcity work when it comes to beer? Does it drive sales even when it's obviously manufactured? Brian talks about how Wisconsin breweries were featured during a recent convention and Katherine presents her “barbecue festival philosophy” of scarcity. Leah Scurto and Herlinda Heras. Leah Scurto from Pizzaleah joins Herlinda Heras and Harry Duke who is sitting in for Steve Jaxon on Brew Ha Ha today. Herlinda Heras is back from another trip to Liverpool, this time to see Pete Best and his band. Leah Scurto is Herlinda's neighbor and friend. This is her first time on Brew Ha Ha but she was a guest on our other podcast, California Wine Country, on this CWC episode of April 27, 2022. In that show we hear about how Leah was getting ready to serve pizzas at the 2022 Healdsburg Wine and Food Experience. Herlinda brought Leah into beer judging. Leah will be cooking at the Great American Beer Festival in Denver, CO, in October later this year. “They get the best of the best of the chefs, paired up with breweries.” It's Leah's fourth year doing it. Leah's partner this year is a brewery from Iowa called Big Grove, which is the official craft brewer of the Iowa Hawkeyes, check out their website^. Big Grove making a double IPA and an Oktoberfest for the Great American Beer Fest. Leah is cooking for Thursday and Friday nights. To pair with the double IPA she will make pickles with that brew, then make a pickle dip. She will make a mushroom pizza to go with the Oktoberfest. Pizzaleah in Windsor, near Oliver's Pizzaleah is located in Windsor near Oliver's, at 9240 Old Redwood Hwy, #116. Their beer list includes a tap where she rotates local brewers in and out. Right now there is a beer from Ghost Town in Oakland. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. Visit their website for up-to-date hours, menus, beers and more. Leah has brought some pizzas including the Old Graybeard which is the people's favorite. It's a sweet, spicy and salty with a little orange zest. They make their own sausage for the pizzas. Everything is in-house including the peperoni which is a recipe that Leah worked on for years. They pair that pizza with the Old Caz Free Craig's. Leah participates in international pizza competitions This summer she was at the Caputo Cup in Naples. Caputo is a brand of flour from Naples and they put on the pizza festival and the competition. Leah placed third! See our sponsor Victory House at Poppy Bank Epicenter online, for their latest viewing and menu options. When Leah needed a job in Santa Cruz in college, she got hired at a pizza shop where she eventually stayed for more then 2 decades. She opened 20 restaurants for them so she sure knows the business. She opened her restaurant about four years ago and survived the pandemic as the first order of business. It happened to be just as the pandemic was closing everyone down. She weathered the storm by being available for delivery at a time when that was the only way to get food to the people. The beer selection at Pizzaleah is important to Leah. She wants to support local brewers by featuring their products and also whenever possible she tries to support small local suppliers and organic production. The Lola pizza, with pesto, potato and caramelized onion, is paired with the Crispy Crusher from Cooperage.

It's tough to find positive news when looking at beer and brewery stats right now.  New permit applications are down, beer festivals are on the decline, and we've all seen the closures of some of our favorite breweries this year. However, there's a small ray of hope for Anchor Brewing after announcing their closure last week.  A few investors have stepped forward to express their interest in buying the brewery.  Two have said they'll keep things small and focused to start, and one wants to make the relaunch a reality TV show.  Oof.Beer Festival BustSpeaking of beer fests... Some of the biggest festivals in the country are on hiatus, or cancelled.  Folks just don't seem to be as in to them as they used to be.  With that country's largest festival, Great American Beer Fest, coming up soon all eyes are on the turnout there.  We think it may not be beer fests as much of the type of fests, with a preference for smaller, specialized events.  What do you think? On the science front, Omega Yeast Labs has found the gene responsible for bringing the haze to your hazies.  They're calling it HZY1.  After comparing yeast strains that produce hazier beers and isolating this gene, they've got the magic formula.  We'll have to wait to see what this may mean in the future.Beer Cocktails on the riseSurvey says more people are trying beer cocktails these days, or they're expressing an interest in trying them.  For now, the research is on gateway cocktails like beeritas, shandies, and radlers.  But once they're through the gate who knows what may happen. For our Midwest listeners, have you had Red Beer?  Is it still a thing?  My dad drank "Tomato Beers" back in the day but I just thought it was a crazy thing he did.  Google says this beer cocktail is still pretty popular in the region.  Pops was a trendsetter.Beers of the WeekAnchor Steam BeerSierra Nevada Flipside (Red IPA, Fan Favorites Pack Re-release)Deschutes Black Butte XXXV (Imp. Ted Vivatson from Eel River Brewing Company is our guest on Brew Ha Ha with Harry Duke and Herlinda Heras. He is the owner and co-founder of the brewery, which is located in Humboldt, California. They opened in 1995. About two years after that, they were pioneers in organic practices. Ted grew up in Danville, California and was deployed in Germany in the US Army and there he got to know high quality beer. After he left the service, he noticed that there was no good local beer, so he and some friends set about to make some. Today Eel River is one of the oldest craft breweries in America. He took a temporary job in the US Forest Service while studying engineering and home brewing. It wasn't always easy to find ingredients and equipment back then before home brewing became popular. He took classes at UC Davis and the Siebel Institute. Now, he and the other craft brewing pioneers are seeing their children move into the same business. They are tasting a beer called Climax which is named after a locomotive train. He made it to order for a friend who asked for a “naked” beer, meaning something plain and simple with no altered ingredients. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. Click the logo to visit their website for up-to-date hours, menus, beers and more info. It was really hard to find organic hops and grain back then. They found organic hops in New Zealand and they had to send someone down there to secure the first supply. This is a very simple beer with a low ABV and only 100 calories per serving. The next beer tasted is a California Blonde Ale which has won 5 medals at the Great American Beer Fest. They also have opened their Amber Ale. Their first organic beers were limited by what ingredients were available. Visit our sponsor Victory House at Poppy Bank Epicenter online, for their latest viewing and menu options. Ted Vivatson was also a pioneer in hard selzer, and Herlinda and Harry agree that his hard selzer the best tasting one around. They worked on it for about two years, to develop the right recipe. Finally they got it right. It's the only one naturally fermented.

For breweries in Colorado, September is typically a month of fests. There's Oktoberfest, of course. And then there's the Great American Beer Fest to prepare for in early October. But with the Delta variant on the rise and increasing fears of breakthrough cases, the party is canceled — mostly. A community hub for Latino beer fans on Denver's Westside, Raices Brewing Co. is bringing back Suave Fest this Saturday, and this year it comes with a gentle, thoughtful nudge in the direction of a COVID-19 vaccine. City Cast Denver host Bree Davies sits down with Raices co-founder Tamil Maldonado to talk about her personal experience with COVID-19, the Latino community's lagging vaccination rate, and how Raices is working to get more shots in her customers' arms.  We've got plenty more Denver news and cool events you should know about in our newsletter. In a first, we get to talk to one of Matt's #UnsungHospitalityHeroes, Andrew Mason, who was a middle school student of his, then an assistant brewer, now a trusted confidant. Website: alesongbrewing.com Facebook: /alesongbrewing Instagram: @alesongmatt @alesongbrewing Twitter: @alesongmatt @alesongbrewing Where were you born / raised? Wilton, Iowa First job in the industry? When, where, how old? 2001, Glen Ellyn Brewing Company. I was 28. I had been volunteering there for two years, off and on Proudest moment of your career? It has to be the 2006 World Beer Cup awards when I earned silver behind Rodenbach Crand Cru and ahead of Dogfish Head's Festina Lente. I mumbled something unintelligible to both Rudi and Sam. I'm still star struck after 20 years in the industry. Two things most people don't know about you? 1) I have two degrees in teaching and spent 6 years in education. 2) I spent much of my childhood watching Julia Child, Jaques Pepin, and Martin Yan on PBS and I think it affected my eating habits and my brewing philosophy. Food and/or drinks staples in your house? Beer, wine and Bourbon are always available, naturally. Eggs are eaten in mass quantities in my household. Words to live by? "Love what you do and you'll never work a day in your life." and "be kind to others" Tell us about one of your #UnsungHospitalityHeroes Andrew Mason, most recently of Solemn Oath Brewing, previously at Three Floyds Brewing and prior to that, my assistant brewer at Flossmoor Station from 2005-2009. Andrew was a student in my Middle School science class and later in a HS Astronomy class. We became close with he and his family when a science fair project went awry in 1997 and it led to me homebrewing with his dad. He contacted me after college looking for a job in the industry and I had an open position. He learned professional brewing with me and that led to him later being the production manager at both Three Floyds and Solemn Oath. Not only is he a great brewer but he's one heck of a grillmaster. His family in the early days, and Andrew now, are known to host 'meat parties'. To me, the Mason's were foodies before it was cool to be a foodie. Matt Founded Alesong Brewing and Blending along with Brian and Doug Coombs in 2016. Alesong is a producer of artisan barrel aged beer and is located in wine country of the Southern Willamette valley of Oregon. Prior to founding Alesong, Matt did stints at Oregon's Oakshire Brewing and several breweries in the Chicagoland area, including Flossmoor Station Brewery where he earned Small Brewpub Brewer of the year at the 2006 at the Great American Beer Fest. When not dabbling with barrels he chases after his wife Jenni and two kids, Nick and Ella in the Mountains and Coastal region of Oregon.

No one really knows. Our version of the Australian pale ale is a more traditional pale ale using Australian hops. In fact, we highlighted one of our favorite Australian hops - Summer. Summer hops are derived from the famed lager hop called Saaz. Summer hops produce strong pear and melon flavors, with a hint of tropical fruit lingering in the background. Orpheus Brewing and The Woodlands talk sour and wild beers Wild and sour beers continue to grow in popularity.  From "simple" sour beers like Berliner Weisse and Gose to complex, spontaneously fermented ales with funky, earthy, cheesy character.  There's a huge variety out there. When you think of SweetWater Brewery, you may not think of sour beers - but you should.  Nick Burgoyne, Lead Brewer and Blender at SweetWater's The Woodlands focuses on brewing wild, sour, funky and barrel-aged beers.  He recently won a Silver Medal for Cambium (an American Wild Ale) at the US Open Beer Championship. Orpheus Brewing opened in Atlanta in 2014.  Brewmaster and President Jason Pellett had a goal to introduce an approachable, sour beer that anyone could afford and his Atlanta (Tart Plum Saison) did just that.  In the past 4 years, Orpheus has brewed many more sour beers, and recently won Bronze for Lambic-style Ales at the Great American Beer Fest. Burgoyne and Pellett join us this week to talk about the adventure of expanding the acceptance of sour beers.  We talk simple kettle sours like Berliner Weisse and Gose, and more complex sours like Lambic and Gueze.   We also discuss the challenges facing American brewers as they mimic these styles and try to name them without offending traditional Belgian brewers, and how that brought about the move towards the Méthode Traditionnelle under the guidance of HORAL (High Council for Artisinal Lambic Beers).  As we sip through several beers, the conversation moves to the process of traditional spontaneous brewing and blending sour beers. The show was taped at SweetWater Brewery during ZCON Atlanta's brewery night.  We talk with Z Car Club Association President Chris Karl about Z Cars, the club and ZCON - their annual national convention. Reformation Brewery prepares to 'Set Beer Free' at their second location Woodstock, GA is a fairly small community about 30 miles north of Atlanta.  It's been my home for 14 years and Reformation Brewery's home for nearly five.  When I moved here the "big" news/controversy in town was the opening of a new Super Wal-Mart.  Many of the city's elder residents didn't think we needed that kind of growth, the old Wal-Mart was just fine (it wasn't).  Now, the Downtown Woodstock area is lined with shops and restaurants, we have an amphitheater, a really nice trail system, and a brewery. As Reformation approaches that 5th anniversary, they're preparing to open their second location.  The 6,00-square-foot space is in the heart of Downtown Woodstock, close to all those fancy amenities I mentioned earlier.  A 5-barrel brewhouse will serve up a variety of small-batch beers to visitors.  The split plan will have various areas to relax and enjoy your brew, with one section set up to have a coffeehouse feel.  The brewery has partnered with Queenie's Southern Restaurant & Bar for food service and space will be available for private events. We sat down with Reformation Co-founder and Brewmaster Nick Downs this week to talk about the new digs, new beers, his faith and how that influences his business, and what he envisions for Reformation in the future.  We also share a story about Martin Luther and how he helped promote the use of hops in beer. Fresh back from Las Vegas, Brian drops some cigar info our way with his recap of new offerings discovered at the annual IPCPR cigar convention.  If you want more cigar info be sure to check out StogieReview.com where Brian waxes poetic about his love for burning dead leaves. In the news this week Three Weavers joins CANarchy, the Great American Beer Fest will be bigger than ever, and a punk album about craft beer.  We also welcome KCPX 1490 AM in Moab, UT as our newest radio affiliate.  Catch Beer Guys Radio on KCPX Canyon Crossing every Sunday at 3:00 PM Mountain time. Next week make sure to tune in for our interview with Alabama's Common Bond Brewers. We're running a monthly series called "Food for Thought," in-depth conversations with groundbreakers who run farms, restaurants, wineries, breweries and bars around California and are shaking up the way we eat and drink. Our fourth talk is with the Brewmasters, two people who've won lots of awards for creating some of some of the best craft beer to come out of Northern California. One is a seasoned vet who helped a small Chico-based brewery grow into a billion-dollar company. The other is a young whippersnapper who, 13 months after moving his beers from the garage into a professional setup, won two gold medals at the California State Fair. To celebrate Octoberfest, we raised some pints and celebrated California craft beer with a great discussion by these two guys who've helped to make it famous. PANELISTS * Steve Dresler - the just-retired Brewmaster of Sierra Nevada Brewing Co., who has overseen the development and production of almost all of its new beers for more than 30 years, and has won the the brewery eight World Beer Cup awards and 31 Great American Beer Fest medals during that time. * Michael Mraz - the owner and founder of Mraz Brewing Company in El Dorado Hills, who went from homebrewer to superstar homebrewer (he was crowned Homebrewer of the Year at the California State Fair just two years after starting the hobby), then went from professional brewer to superstar professional brewer in 13 months (he won two gold medals for his Belgian Tripel and red ale at the CA State Fair). PODCAST TIMEFRAME * O to 2:40 min - Intro to California Groundbreakers * 2:40 min - The Brewmasters introduce themselves * 9:40 min - The first memorable beer that led to a career in beer greatness * 13:40 min - How they got into homebrewing * 16:15 min - The decision to be a professional brewmaster * 20: 15 min - Picking the best in the four ingredients needed to make excellent beer * 26 min - The art of barrel-aging beers * 28:10 min - Sharing beer recipes or keeping it secret * 33:25 min - How California's changing environmental conditions changes its beer * 40 min - How Sierra Nevada Brewing has changed since its start -- and the brewmasters' favorite keg beers * 44:30 min - Dealing with beer snobs who think even Sierra Nevada isn't "real" craft beer * 48:15 min - How you expand beer production while keeping it quality beer * 50:45 min - Why Mraz decided to expand his brewery -- and then decided to call it off * 54:15 min - How Dresler's brewmaking techniques changed as Sierra Nevada Brewing got bigger * 56:15 min - Dresler's most notable beer collaborations with other brewing partners * 59:55 min - Sour beers -- and new trends, flavors and ingredients influencing beer today * 1 hr, 6 min - How important is the "art direction" of beer? * 1 hr, 10:10 min- Pros and cons of running a brewery * 1 hr, 14:40 min - What they want people to experience when drinking beer * 1 hr, 16:45 min - How to pair beer with food * 1 hr, 20:20 min - When you know it's time to retire -- and the importance of Dresler's most recent award AND LISTEN TO THE ICEBREAKER PODCASTS "Icebreakers" are mini-podcasts we uploaded in advance of this Brewmasters discussion. Go back to our main page on SoundCloud to listen to a few other people who also do groundbreaking stuff in the beer industry, including: * J-E Paino of Ruhstaller Beer explains why his is the only brewery in California, besides the mega-big Sierra Nevada Brewing, to grow its own hops. * Charlie Bamforth, Professor of Malting and Brewing Sciences at UC Davis, also known as the "Pope of Foam," discusses how his department and its research has shaped the production of California's craft beer. * Kate Whelan, director of Sacramento Beer Week, talks about how women are shaking up the beer industry. * Glynn Phillips, owner of Rubicon Brewing Company, talks about the rise and fall of Sacramento's oldest craft brewery, and why he closed Rubicon 1.5 months before it marked its 30th anniversary.
