Texas is booming as a whiskey region, with distilleries all over the Lone Star State. That history only goes back about 15 years, when pioneers like Balcones Distilling and Garrison Brothers started out. During the recent 15th anniversary celebrations at Balcones, Texas Whiskey Festival co-founder Jake Clements moderated a panel (and tasting) on the first 15 years of Texas whiskey. Our latest guest on The Craft Spirits Podcast is Donnis Todd, the master distiller for Garrison Brothers Distillery in Hye, Texas. With Todd leading bourbon production and hand-selecting each barrel, Garrison Brothers has earned over 400 awards from around the world for its bourbon. That includes the distillery's vaunted Cowboy Bourbon, an annual release that comes from Todd's and founder Dan Garrison's favorite barrels. Garrison Brothers will release this year's 140.9 proof expression this Saturday at a special event at the distillery. Dan Garrison is the founder and proprietor of TX's first legal bourbon distillery, Garrison Brothers in Hye, TX. I wanted to interview Dan because I knew that there were lessons we could learn from how spirits goes to market. I was positive that there were overlaps in the cash flow model for aging bourbon vs fermenting beer. I knew that he had overcome massive obstacles on the path to building his nationwide brand. And I was certain that understanding his business would make us better in ours. What I didn't know was that he was still chasing profitability after 17 years. That some of those struggles he overcame almost killed his small but high-end bourbon distillery. And I was surprised to hear him predict a saturation point similar to what the beer industry is experiencing now. Dan and I recorded this episode in the sunshine on the grounds of Garrison Brothers. I wasn't the only one enjoying the TX bourbon that day so you'll hear people talking, dogs barking and even a small plane circling overhead. I hope that helps you imagine you're sitting at the table with us, enjoying the company and the bourbon. Dan was a gracious host. This week on the podcast, Dan Garrison of Garrison Brothers Whiskey stopped by the studio on a recent trip to Southern California to tell me about how his Texas Bourbon brand was an idea born out the of pain and frustration of watching his years of dedication to another industry vanish overnight. But after buying one of Elmer T Lee’s old stills on a whim and shipping it to Blanco County Texas where the summer thermometer rarely drops below 94 degrees, the differences between the Bluegrass State and the Lone Star State would have deterred most people. I interview Dan Garrison, a bankruptcy attorney who co-founded Fresh Start Funding with Matt Hartley to help other attorneys offer zero-down Chapter 7s. I learned two things talking to Dan. First, after talking to Dan, I am much more confident that bankruptcy attorneys should go ahead and offer zero-down Chapter 7s today, as long as they do it properly as described in this interview. (I was more wary before.) Second, I was impressed by Fresh Start's "mid-single digit" default rate, as well as its revenue share being up to 75% of post-petition fees. One last thing... In this interview, Dan talks about practices growing by 25-30% after implementing zero-down Chapter 7s. I think Dan is being fairly conservative. From what I'm seeing, once you figure out how to sell zero-down bankruptcies (and you figure out your marketing), you can double or triple your filings. In fact, Dan’s bourbons have such a cult-like fan base that his wait list for volunteers to help him inspect, seal and box his spirits has grown to 9,000 names and counting. Dan’s secret: those volunteers who agree to spend two days helping out are rewarded with a shot of “courage” every half hour during the workday. As you’ll hear, Dan Garrison is overflowing with big-as-Texas swagger and valuable entrepreneurial insights that you’ll want to drink in slowly.
