Brussels is widely acknowledged as one of the world's greatest beer cities. But according to today's guest, author, podcaster, and beer writer Eoghan Walsh, it's a curious distinction for a town that until recently only had a single brewery. On this third episode of the Beer Travelers podcast, we dive deep into the history and current state of beer and brewing in Brussels, Belgium. Eoghan has a point. Beer lovers, especially those here in the US, tend to canonize Belgium and Brussels. We speak adoringly of its cafe culture, the care with which each beer is served. Much of that stems from the unique place that a brewery such as Cantillon holds in the hearts of all beer fans. But in reality, the history of beer in Brussels has been up and down for the better part of a century. Even in more recent decades, the city's beer and brewing scenes have been in great peril. Assisted in part by that adoration of beer geeks from around the globe, and of course their tourist dollars, Brussels is making a comeback. And today Eoghan Walsh walks us through the city's vibrant and curious brewing history and updates on the status of things today and what is to come in its future. For Yvan de Baets of Brasserie de la Senne, (https://www.brasseriedelasenne.be) what’s old is new again. All brewing styles shift and develop over time, as tastes change and things come into and fall out of fashion. But for this student of Belgian brewing history, the lack of hops in contemporary Belgian beers was a stylistic travesty that he needed to remedy. Enter Brasserie de la Senne, which—when it officially opened in Brussels in 2010—doubled the number of operating commercial breweries in the city (the only other one at the time was Cantillon). Over the past decade and a half, the Senne brewery has made a mark not just on drinkers but on fellow brewers the world over, with thoughtful, nuanced, unapologetic takes on Belgian beer styles. From classic extra-pale Taras Boulba to hoppy triple Jambe de Bois, they’ve followed a different path than Belgian compatriots, developing a thumbprint of assertive Noble hopping and multiple forays into mixed fermentation—all driven, de Baets says, by the selfishness of brewing only what they want to drink. In this episode, de Baets discusses how they think about and employ hops in their beers, from selection to timing. He dives deep into the impact of tank geometry on ester production, and credits their squat, wide fermenters with creating a lower-stress environment for their yeast—thus favoring subtlety and reducing higher alcohols. His approach to mixed fermentation, acidity, a new pilsner (influenced by the inimitable Eric Toft of Brauerei Schönram), and science-driven takes on traditional brewing techniques all enter the conversation. De Baets, however, is not a “purist” in any sense of the word, happy to give credit where due and celebrate those who brew with a sense of purpose to keep traditions alive. “American brewers and consumers have saved many traditional Belgian styles that were simply dying in Belgium, because the Belgians didn’t care about them any more, which is a shame and extremely sad,” he says. “Some of the Belgian-style saisons made in the US are better than most of the saisons we have in Belgium. Some Flemish reds are the same. Yvan is extremely passionate about the beers he and fellow brewer, Bernard Leboucq produce. Together they brew beers they love while remaining uninfluenced by trends and profit. As a result they brew beers that are wonderfully bitter, low in alcohol and superior when it comes to quality. It's that time of the year when everyone thrusts their favourite games down your throat. We're no different except it's accompanied by several beers to ease it down. Lucy, Ben and Aadil start off with a few honourable mentions then launch into their top ten games. We've no rules here as you know, so these are games we've enjoyed this year even if they didn't release in 2018. For those all important beverages Ben and Lucy are drinking The Trilogy MMXVIII from Northern Monk and friends. These beers are brewed to showcase Malts, Yeast and Hops and are Malt - A Brut IPA with Whiplash, Yeast - A Sour IPA with Verdant and Hops - A Triple IPA with Garage. Aadil has three beers that he's tried to match alongside Ben and Lucy. He has to start 'Side Control' IPL from Marble. Follows with a sour pilsner from Cloudwater and Stillwater Artisanal called 'Tangible Object' and finishes on 'Zenne-Like' a Belgian IPA from Magic Rock and Brasserie De La Senne. After today's epic we're having next week off but will be back in the first week of the new year. Have an awesome few weeks.

Lucy continues this week with Gypsy Hill and tries their 'Beatnik' Pale Ale whilst Ben begins with the 'I Rate Saison' from Brasserie De La Senne and Melissa Cole. Lucy then travels to Cardiff for a Crafty Devil 'I Am The Resurrection' and Ben's in the North East for an 'Us & Them' DIPA by Wylam.

GBH founder—and one of the co-hosts of this podcast—Michael Kiser has previously described some episodes of this podcast as being "bucket-list" interviews. Folks like Brooklyn Brewery’s Garrett Oliver and Allagash’s Rob Todd, for example: folks who’ve played huge roles in shaping the industry as we know it and still continue to do so. Now, it’s my turn. Today, I sit down for a conversation with Yvan de Baets, head brewer and co-founder of Brasserie de la Senne in Brussels, Belgium. You’re more than likely already familiar with the beers that de la Senne produces. Despite only being in existence since 2003, its beers, such as the dry and bitter Taras Boulba and the balanced, rounded Zinnebir, could easily be described as timeless and iconic. These aren’t words to be thrown around lightly, but try asking a brewer what his or her favorite beer is and more often than not, it’ll be one of them. It’s no surprise, either, as we’ll learn from de Baets later in this episode that Taras Boulba is a beer made for brewers. De Baets was in town for a string of events centered around a new specialty Belgian beer festival here in London called Ales Tales. The night before we met for this interview we had hosted an event with him at The Prince in Wood Green, North London and our conversation picks up from the points we discussed that evening. This includes the origins of de la Senne and how their first beer was brewed in a Brussels squat, to just how intrinsic the Belgian capital is to everything this brewery does. Yvan pulls no punches when discussing what he calls "fake brewers," or what most of us know as contract, or so-called "gypsy brewers." He even goes as far as to call some of them a disease within the industry. He even weighs in on the use of Belgian beer terminology, such as Lambic and Gueuze, around the world—including the recent fracas between Jester King and HORAL .

Uma cervejaria belga cheia de personalidade e fora dos padrões tradicionais! Acompanhe neste vídeo a visita à Brasserie de la Senne. Estive recentemente em Bruxelas, na Bélgica, para ser jurado do Brussels Beer Challenge 2016. Foi a minha segunda participação neste concurso, que é um das mais importantes competições cervejeiras do mundo. E como parte do roteiro do evento fizemos uma visita à Brasserie de la Senne. A Brasserie de la Senne vem se destacando não apenas na Bélgica, mas em todo o mundo, pela sua personalidade forte e que foge do padrão tradicional da escola belga, porém mantendo um excelente padrão de qualidade. Como descreve o próprio Yvan de Baets, um dos proprietários e cervejeiros da Brasserie de la Senne, suas cervejas se caracterizam por dois aspectos fundamentais: equilíbrio e drinkability. Para atingir este resultado, diversas técnicas tradicionais e inovadoras são aplicadas, além do uso de equipamentos customizados como os tanques de fermentação de desenho próprio. Duas curiosidades interessantes sobre a Brasserie de la Senne são sua política sobre lúpulos e levedura: eles não utilizam lúpulos do “novo mundo” (EUA, Japão, Austrália, Nova Zelândia etc), e utilizam apenas uma variedade de levedura Saccharomyces para todas as suas cervejas.
